1 can (15 ounces) crushed tomatoes in puree
3 tablespoons tomato paste
2 tablespoons apricot jam
6 garlic cloves, thinly sliced
3 strips orange zest
3/4 teaspoon crushed dried rosemary
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
Coarse salt and ground pepper
3 1/2 pounds lamb shanks, trimmed of excess fat and cut into 1 1/2-inch-thick slices
1 1/4 pounds small new potatoes, scrubbed well, halved (or quartered, if large)

Steps:

  • In a 5- to 6-quart slow cooker, stir together tomatoes and puree, tomato paste, jam, garlic, orange zest, rosemary, ginger, and cinnamon. Season with salt and pepper. Add lamb and potatoes, stirring to combine.
  • Cover, and cook on low for 8 hours (or on high for 5 hours), until lamb and potatoes are tender. Season again with salt and pepper, if desired. Serve.
  • Preheat oven to 350 degrees. Follow step 1 (above), using a 5-quart Dutch oven or heavy pot with a tight fitting lid instead of the slow cooker. Add 2 cups water, and cover. Transfer to oven; cook until lamb and potatoes are tender, 2 to 2 1/2 hours.

Easy Braised Lamb Shanks Recipe image

Super tender, perfectly spiced braised lamb shanks and vegetables in a rich red wine sauce. Cooking lamb shanks is easier than you might think. Simply season, sear, and braise! It's the perfect lamb shank recipe for a small gathering! A dry red wine is your best bet for the red wine sauce. (Merlot is my favorite here, but a Cabernet Sauvignon would work well, too.) Serve rosemary lamb shanks with couscous, Lebanese rice, or pita to soak up all the delicious sauce. Start this rich, meaty dinner with a big bright salad like arugula salad or white bean salad.

2 1/4 teaspoon garlic powder
1 teaspoon sweet Spanish paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper
3/4 teaspoon ground nutmeg
6 American lamb shanks
2 tablespoon extra virgin olive oil
1 medium yellow onion, (roughly chopped)
2 celery ribs, (chopped)
3 large carrots, (peeled and cut into large pieces)
1 pound baby potatoes, (scrubbed)
2 cups red wine like Merlot
3 cups low-sodium beef broth
28- ounce can peeled tomatoes
2 cinnamon sticks
4 sprigs fresh thyme
2 sprigs fresh rosemary

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, add all the spice mix ingredients and mix to combine.
  • Pat the lamb shanks dry and season with the spice mix on all sides.
  • In a large Dutch oven pot like this one, heat 2 tbsp olive oil over medium-high heat. Working in batches, brown the lamb shanks on all sides (about 8 mins or so). Transfer the lamb shanks to a large tray or bowl for now. Carefully dispose of extra fat in a separate heat-safe bowl, and return the pot to heat.
  • Now add the onions, celery, carrots and potatoes. Saute for 5-7 minutes on medium-high, or until the vegetables gain some color. Add red wine, scrape the pot of brown bits. Cook briefly so that the wine reduces a bit.
  • Add the broth, tomatoes, cinnamon sticks, thyme, and rosemary. Sprinkle a little salt and pepper. Return lamb shanks back to the pot; press down to submerge. Boil for 10 minutes. Turn heat off.
  • Cover the pot and transfer to the 350 degrees F-heated oven. Cook in the oven for 2 1/2 hours (It's a good idea to check periodically through cooking just in case you need to add a little more liquid. When the shanks finish cooking, the liquid will have reduced to about 1/3 of what it was when you started.)
  • While the lamb shanks are cooking, prepare rice according to this recipe, or prepare 2-3 cups of orzo pasta according to package instructions.
  • Serve the lamb shanks hot with a little of the veggies and braising sauce on top of rice or orzo pasta. You might also like to prepare a side salad like this 3-ingredient Mediterranean salad or Fattoush. Enjoy!

6 tablespoons peanut or vegetable oil, divided
8 lamb shanks
2 onions
4 cloves garlic
Sprinkling salt
1 tablespoon turmeric
1 teaspoon ground ginger
1 dried red chile pepper, crumbled, or 1/4 teaspoon dried red pepper flakes
2 teaspoons ground cinnamon
1/4 teaspoon freshly grated nutmeg
Freshly ground black pepper
3 tablespoons honey
1 tablespoon soy sauce
3 tablespoons Marsala wine
6 tablespoons red lentils
3 tablespoons chopped pistachios, chopped blanched almonds or a mixture of both
Couscous, recipe follows
About 2 3/4 cups (18 ounces) couscous
2 teaspoons salt
4 cardamom pods
Approximately 2 tablespoons unsalted butter in 2 slices
2 tablespoons sliced almonds
Scant 1/4 cup pine nuts
2 tablespoons pistachios

Steps:

  • Put 3 tablespoons of the oil into a very large, wide, heavy-bottomed pan and warm over medium heat. Brown the lamb shanks, in batches, in the pan and then remove to a roasting pan or whatever else you've got at hand to sit them in.
  • Peel the onions and garlic and process in a food processor or chop them finely by hand. Add the remaining oil to the pan, and fry the onion-garlic mush until soft, sprinkling salt over to stop it sticking.
  • Stir in the turmeric, ground ginger, chile, cinnamon and nutmeg and season with some freshly ground pepper. Stir again, adding the honey, soy sauce and Marsala. Put the shanks back in the pan, add cold water almost to cover, bring to the boil then put a lid on the pan, lower the heat and simmer very gently for 1 to 1 1/2 hours or until the meat is tender.
  • Add the red lentils and cook for about 20 minutes longer with the lid, until the lentils have softened into the sauce and the juices have reduced and thickened slightly. Check for seasoning.
  • Toast the nuts by heating them for a few minutes in a dry frying pan, and sprinkle onto the lamb as you serve it.
  • Fill the bottom of a steamer, or base of a couscoussier should you possess one, with water and bring to a boil. When it looks like it's almost ready to boil, fill the kettle and put it on, then empty the couscous into a glass bowl, add the salt, crush in the cardamom and mix with your fingers, then pour over a quart of boiling water from the kettle and place a plate on top of the bowl. Leave to stand for 5 minutes, then drain and empty into the steamer or couscoussier top and sit this on top of the boiling water beneath. Add the slices of butter on top of the couscous then clamp on the lid and let steam for about 7 to 10 minutes, by which time the couscous should be tenderly cooked and the butter melting. (You can do this a simpler way if you prefer, by just steeping the couscous in the boiling water for 10 to 15 minutes, but the grains will be more dense and more likely to clump. It's not disastrous, however, and you must decide what you're prepared to do.)
  • Meanwhile, toast the almonds by frying them in a dry pan until fragrant and golden, remove them to a plate, then do the same to the pine nuts. Chop the pistachios. Once the couscous is cooked, tip the bowl, fork through (and always use a fork for mixing or fluffing up couscous; a spoon will crush it and turn it stodgy), sprinkling in the almonds and pine nuts as you do so (and taste for seasoning at the same time, too). Now fork in most of the pistachios, and sprinkle those that remain lightly on top.

6 12- to 16-ounce lamb shanks
3 tablespoons olive oil
4 medium carrots, peeled, cut into 1/4-inch-thick rounds
2 1/2 cups chopped onions
1 1/2 cups sliced celery
2 garlic cloves, minced
2 teaspoons dried rosemary
2 teaspoons dried oregano
1 28-ounce can diced tomatoes in juice
2 cups water
2 cups dry red wine
1 3x1-inch piece orange peel (orange part only)
12 baby red-skinned potatoes
6 medium carrots, peeled, cut into 2-inch pieces
6 medium parsnips, peeled, cut into 2-inch pieces
1/2 cup Kalamata olives, pitted

Steps:

  • Sprinkle lamb with salt and pepper. Heat 3 tablespoons oil in heavy large pot over medium-high heat. Working in batches, cook lamb until brown, about 8 minutes. Transfer to large bowl.
  • Reduce heat to medium. Add carrot rounds, onions and celery to pot. Sauté until vegetables are tender and golden, about 10 minutes. Add garlic, rosemary and oregano. Sauté 1 minute. Stir in tomatoes with juices, 2 cups water, wine and orange peel. Return lamb to pot, pressing to submerge. Bring to boil. Reduce heat to low. Cover; simmer until lamb is just tender, about 2 hours 15 minutes.
  • Add potatoes, 2-inch carrot pieces, parsnips and olives to pot. Simmer uncovered until vegetables are tender and lamb is very tender, about 30 minutes longer. Using slotted spoon, transfer lamb and vegetables to platter. Boil juices in pot until thickened enough to coat spoon, about 5 minutes. Discard orange peel. Season sauce with salt and pepper.
  • Spoon sauce over lamb and vegetables and serve.

This is a great recipe for lamb shanks, it's total comfort food at it's best, the juice from this is so good, if you like lots of juice then add in a little more water or broth, and adjust all ingredients to taste.

6 lamb shanks
seasoning salt
black pepper
4 -6 tablespoons olive oil
2 medium onions, chopped
2 large celery ribs, chopped
2 tablespoons minced fresh garlic
2 -3 teaspoons dried rosemary
3 teaspoons dried oregano (or to taste)
2 teaspoons crushed red pepper flakes (or to taste)
1 (28 ounce) can diced tomatoes, undrained
1 cup water
1 cup chicken broth
2 cups dry red wine
4 large potatoes, peeled and cut into about 2-inch cubes
5 medium carrots, peeled and cut into about 2-inch pieces
6 medium parsnips, peeled and cut into 2-inch cubes
salt and pepper
1 cup pitted kalamata olive (or to taste)

Steps:

  • Season the lamb with seasoning salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add in the shanks and brown on both sides (this should take about 10-12 minutes).
  • Transfer the browned shanks to a bowl.
  • Add in the onion, celery, rosemany, oregano and 10-12 minutes or until the veggies are golden.
  • Add in the garlic and saute for 1 minute.
  • Add in the tomatoes with juice, water, broth and wine and return the lamb back to the pot (pressing the lamb into the juices with a fork or spoon) bring to a boil, reduce heat to low, cover and simmer about 2 hours or until the lamb are Just tender.
  • Add in the potatoes, carrots, olives and parsnips and simmer for another 30 minutes, or until tender.
  • After the 30 minutes of cooking season with salt and pepper.
  • Using a slotted spoon remove the lamb and veggies to a large platter.
  • Boil the juices for about another 5 minutes or until thickened, season again with black pepper.
  • Spoon the sauce over the lamb and veggies.

100g dripping or butter
900g stewing lamb, cut into large chunks
3 lamb kidneys, sliced, fat removed
2 medium onions, chopped
4 carrots, peeled and sliced
25g plain flour
2 tsp Worcestershire sauce
500ml lamb or chicken stock
2 bay leaves
900g potato, peeled and sliced

Steps:

  • Heat oven to 160C/fan 140C/gas 3.
  • Heat a little of the 100g dripping or butter in a large shallow casserole dish and brown 900g stewing lamb chunks in batches, lift to a plate, then repeat with 3 trimmed and sliced lamb kidneys.
  • Fry 2 chopped onions and 4 peeled and sliced carrots in the pan with a little more dripping until golden.
  • Sprinkle over 25g plain flour, allow to cook for a couple of mins, shake over 2 tsp Worcestershire sauce, pour in 500ml lamb or chicken stock, then bring to the boil.
  • Stir in the stewing lamb and kidneys and 2 bay leaves, then turn off the heat.
  • Arrange 900g peeled and sliced potatoes on top of the meat, then drizzle with a little more dripping.
  • Cover, then place in the oven for about 1½ hrs until the potatoes are cooked.
  • Remove the lid, brush the potatoes with a little more dripping, then turn the oven up to brown the potatoes, or finish under the grill for 5-8 mins until brown.
