Steps:
- In a large skillet, heat oil over medium-high heat; brown lamb in batches. Transfer lamb to a 3- or 4-qt. slow cooker, reserving drippings in skillet., In drippings, saute onion over medium heat until tender, 4-6 minutes. Add garlic and tomato paste; cook and stir 2 minutes. Stir in wine, 1 teaspoon salt, oregano and basil. Add to lamb. Cook, covered, on low until lamb is tender, 6-8 hours., To serve, dice enough cucumber to measure 1 cup; thinly slice remaining cucumber. Combine diced cucumber with yogurt and remaining salt. Fill pita halves with lamb mixture, tomatoes, sliced cucumbers and yogurt mixture. Freeze option: Freeze cooled lamb mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

LAMB PITAS WITH YOGURT SAUCE
Steps:
- 1. To prepare sauce, combine sauce ingredients in a small bowl. Cover and chill until ready to use.
- 2. To prepare pitas, heat a nonstick skillet over medium-high heat. Add lamb and cook 5 minutes, or until browned, stirring to crumble. Drain well, remove to plate and set aside.
- 3. Lightly coat same pan with nonstick cooking spray and add onion. Saute 3 minutes or until softened.
- 4. Stir in cooked lamb, oregano, cumin, salt, crushed red pepper and garlic. Reduce heat to low and cook 2 minutes, stirring occasionally. Remove from heat and stir in parsley.
- 5. Open pita halves and divide meat mixture evenly among the 4 halves. Add cucumber slices and tomato halves evenly. Top each with some of the sauce and serve.
GREEK LAMB WITH YOGURT MINT SAUCE

- Place the garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and pulse until the herbs are finely minced. Add the lemon juice, olive oil, and red wine and combine. Place the chops in a glass or ceramic dish just large enough to hold them in a single layer. Pour the marinade over the chops, turning to coat both sides. Cover with plastic wrap and refrigerate for at least 2 hours but preferably overnight.
- When ready to cook, prepare a grill with one layer of hot coals or turn a gas grill to medium-high heat. Remove the lamb from the marinade, sprinkle generously with salt and pepper, and grill for 4 to 5 minutes on each side. Remove to a platter, cover tightly with aluminum foil, and set aside to rest for 10 minutes. Serve hot with the cold Yogurt Mint Sauce.
- Place the scallions, mint, dill, red pepper flakes, olive oil, and lemon juice in the bowl of a food processor fitted with the steel blade and puree until it's a coarse paste. Add the yogurt, salt, and pepper and pulse until combined. Transfer to a bowl, cover, and refrigerate for a few hours to allow the flavors to develop.
SPICED LAMB PITAS WITH YOGURT SAUCE
Ground lamb was on sale at ALDI. I bougth some and wanted to make something yummy with it. I'm not a huge fan of ground lamb, but I love this dish with ground chicken! You can make it with whatever ground meat you prefer.

- 1. In a small bow, whisk the yogurt with the lemon juice. Add the 2 Tbsp. chopped parsley and chopped dill. Chill in fridge until ready to use.
- 2. In a large bowl, mix together Lamb, bread crumbs, garlic, coriander, cumin, paprika, salt and pepper. Continue to mix with hands until thoroughly combined.
- 3. Pat mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
- 4. Oil the grill grates and preheat the grill.
- 5. Grill the patties over medium high heat about seven minutes. Flip the patties and grill for 4 to 6 minutes longer, completely cooked.
- 6. While patties are grilling, wrap the pita in aluminum foil and place on an unused portion of the grill or throw in a warm oven until for 5 minutes or so or until warmed through.
- 7. Place two lamb patties in pita, drizzle with yogurt sauce and sprinkle with more fresh parsley and fresh veggies of your choice, fold or wrap, and enjoy!
- 8. Optional Directions for Rainiy day: Line the bottom of a broiler pan with aluminum foil (makes clean up easier) Then spray top with nonstick cooking spray. Place patties on broiler pan. Broil 6 inches from heat for about 6 minutes per side or until completely cooked.
LAMB WITH VEGETABLES AND YOGURT SAUCE IN A PITA

- Turn on toaster oven or oven. If using broiler, turn on and cover pan with aluminum foil.
- Trim the lamb of fat, and marinate in a small bowl with a mixture of vinegar and oil until ready to cook.
- Mince the garlic, and combine with the yogurt and lemon juice.
- Wash, dry and mince the mint, and add to the yogurt.
- Wash and trim the ends from the cucumbers, and slice very thinly. Wash, trim and slice the tomatoes; then, slice the onion thinly.
- Prepare stove-top grill, if using. Broil or grill lamb 5 to 7 minutes, turning once, until it is rare.
- Wrap pitas in foil and heat for about 3 minutes, until they are hot and soft.
- Slice lamb.
- Slice pitas open. If using large ones, cut in half; fill each half with sauce, lamb, cucumbers, tomatoes and onion, then serve. Keep remaining pitas hot. Repeat with remaining halves or whole small pitas.

- Mix first 5 ingredients together in medium bowl. Season yogurt sauce to taste with salt and pepper.
- Mix lamb and next 5 ingredients in large bowl until well blended. Season generously with salt and pepper. Shape mixture into four 3/4-inch-thick patties.
- Preheat broiler. Place lamb patties on broiler rack and broil until cooked through, about 4 minutes per side.
- Open pita bread rounds; line bottoms with trimmed tops, if desired. Place lettuce, burger, then large spoonful of yogurt sauce in each round. Serve, passing sauce separately.
LAMB KOFTA WITH YOGURT SAUCE
This was in today's (May 30, 2007) food section of the Houston Chronicle. I love Middle Eastern food and this sounds totally yummy! Thought I'd post it so I don't lose the newspaper clipping!

- Yogurt Sauce.
- In a small bowl, mix together all yogurt sauce ingredients, cover and chill while preparing the kofta. Add salt and pepper to taste before serving.
- Kofta.
- Place an oven rack in the center position of the oven.
- Preheat oven to broil.
- Lightly coat a rimmed baking sheet with olive oil cooking spray.
- Place the bread in a food processor and pulse until it forms fine bread crumbs.
- Add the onion, parsley,mint,garlic,cumin,cinnamon,chili powder,salt, black pepper,ginger and red curry paste and process until the mixture is finely chopped.
- Transfer the mixture to a large bowl.
- Mix the egg into the onion and herb mixture.
- Add the lamb and turkey and use your hands to thoroughly mash everything together.
- Shape mixture into 12 egg-sized balls, then arrange on the prepared baking sheet.
- Lightly spray the kofta with olive oil.
- Broil for 8 minutes, then use tongs to rotate each and broil an additional 7 minutes.
- Rotate again, and broil for another 3 to 4 minutes.
- Remove from oven, and let stand 5 minutes.
- Wrap the pitas in foil, and place in oven for 1 to 2 minutes, just long enough to heat through.
- Arrange 3 koftas down the center of each of each pita, then top with diced tomato and yogurt sauce.
- Wrap the pita around the koftas and enjoy!

LAMB IN SPICED YOGURT SAUCE WITH RICE AND BREAD
Steps:
- Combine lamb and 4 cups water in a wide 5-quart heavy pot (add more water to just cover lamb if necessary). Bring to a boil over moderate heat, skimming froth from surface. Once liquid is clear and at a full boil, add pepper and 1 teaspoon salt, then cover and simmer 30 minutes.
- While meat is simmering, heat butter in a 12-inch heavy skillet over moderate heat. Add pine nuts and cook, stirring occasionally, until golden, about 5 minutes. Transfer nuts with a slotted spoon to paper towels to drain. Add onion to skillet and cook, stirring occasionally, until softened and golden, about 12 minutes. Stir in turmeric, allspice, cardamom pods, and cinnamon and cook, stirring, until fragrant, about 2 minutes.
- Add onion mixture to lamb and simmer, covered, 1 hour. Remove lid and briskly simmer until liquid is reduced by half, about 1 hour more. Add yogurt, gently shaking and swirling pot to incorporate.
- Simmer lamb over moderately low heat, uncovered, stirring occasionally in one direction only (or yogurt may curdle), until sauce is slightly thickened and meat is very tender, 30 to 40 minutes. Season sauce with salt and pepper if necessary and discard cinnamon stick.
- While sauce simmers, bring remaining 3 cups water with remaining teaspoon salt to a boil in a 3-quart saucepan with a tight-fitting lid. Add rice and stir once, then reduce heat to low and cook, covered, 20 minutes. Slide pan off heat (do not lift) and let stand, covered, 5 minutes. Fluff rice gently with a fork.
- Line a 3-quart shallow serving bowl with a single layer of pita halves (reserve remaining pita to serve alongside), then mound rice on top of bread. Spoon 1/2 cup sauce over rice to moisten and arrange meat over rice. Sprinkle with pine nuts and spoon 1/2 cup sauce over meat, then arrange reserved pita and red onions around edge of bowl. Pour remaining sauce through a sieve into a sauceboat or small bowl and serve on the side.

- For sauce, in a small bowl, combine the yogurt, parsley, garlic and salt. Cover and refrigerate until serving.
- In a large resealable plastic bag, combine the oregano, rosemary, salt and pepper; add beef. Seal bag and toss to coat.
- In a large nonstick skillet, saute onion in 2 tsp oil until golden brown. Remove and keep warm. Saute beef in remaining oil until no longer pink. Serve beef and onion on pitas with yogurt sauce.
