This is a luxurious, lavish, buttery, and decadent dessert. The top is crunchy and the inside is light and custard-y. Delicious served with a dollop of freshly whipped cream.

7 large croissants, cut into large cubes
cooking spray
1 cup blueberries
6 large eggs
2 cups whole milk
1 cup heavy cream
¾ cup white sugar
½ stick unsalted butter, melted
1 teaspoon almond extract
1 teaspoon ground cinnamon
¼ teaspoon salt

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C). Line a baking sheet with parchment paper and spread out croissant cubes on top.
  • Bake in the preheated oven until croissant cubes are very dry, 30 to 35 minutes. Turn off the oven and cool cubes slightly.
  • Lightly spray a 9x13-inch baking dish, add dried croissants, and evenly distribute the blueberries among the croissant cubes.
  • Whisk eggs together in a large bowl. Add milk, heavy cream, sugar, butter, almond extract, cinnamon, and salt; whisk until well blended. Pour the custard mixture over the croissants, and push croissant cubes down with the palm of your hand or a large spatula to fully submerge. Cover the dish and refrigerate for 2 hours to allow the bread to absorb all of the custard.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven, uncovered, until the top is puffed and golden and the custard is set in the center, 40 to 45 minutes.
  • Remove the bread pudding to a rack and let cool for 10 minutes.

2 extra large croissants
1/2 cup Smucker's® Orchard's Finest® Northwoods Blueberry Preserves
3 large eggs
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
3/4 cup water
2 tbsps. butter, melted
1 tsp. vanilla extract
1/4 tsp. cinnamon

Steps:

  • HEAT oven to 350 degrees F. Coat 9-inch square baking dish with no-stick cooking spray.
  • CUT croissants in half lengthwise. Spread each half with about 1 tablespoon preserves. Replace tops. Cut into small strips. Place in prepared baking dish. Using small spoonfuls, dab remaining preserves on top.
  • WHISK eggs. Whisk in sweetened condensed milk, water, butter, vanilla and cinnamon until blended. Pour over cut-up croissants. Press larger pieces down into the liquid. Let set 5 minutes.
  • BAKE 45 to 50 minutes or until knife inserted in center comes out clean. Cool 15 minutes. May be served sprinkled with powdered sugar or with a dollop of whipped cream, if desired.

3 extra-large whole eggs
8 extra-large egg yolks
5 cups half-and-half
1 1/2 cups sugar
1 1/2 teaspoons pure vanilla extract
6 croissants, preferably stale
1 cup raisins

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, sugar, and vanilla. Set the custard mixture aside. Slice the croissants in half horizontally. In a 10 by 15 by 2 1/2-inch oval baking dish, distribute the bottoms of the sliced croissants, then add the raisins, then the tops of the croissants (brown side up), being sure the raisins are between the layers of croissants or they will burn while baking. Pour the custard over the croissants and allow to soak for 10 minutes, pressing down gently.
  • Place the pan in a larger one filled with 1-inch of hot water. Cover the larger pan with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 40 to 45 more minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly. Serve warm or at room temperature.

6 large croissants (leftover stale croissants work well)
500g ready-made custard
250ml whole milk
150g lemon curd
250g fresh or frozen blueberries
icing sugar , to serve (optional)

Steps:

  • Cut each of the croissants in half, then arrange them roughly, overlapping them slightly, in a deep medium baking dish about 20 x 20cm.
  • Pour the custard into a small saucepan and whisk in the milk. Warm over a low heat for 3 mins or until just starting to steam. Whisk through half the lemon curd. Pour the custard over and around the croissants, then set aside for 30 mins-1 hr for the croissants to absorb some of the custard.
  • Heat oven to 180C/160C fan/ gas 4. Nestle the blueberries around the croissants and dollop over teaspoons of the remaining lemon curd. Bake for 35-40 mins or until the top is golden brown. Rest for 10 mins before dusting with icing sugar, if you like.

2 cups fresh or frozen blueberries
1 package (10 to 12 ounces) white baking chips
1 loaf (1 pound) French bread, cut into 1-inch cubes
SAUCE:
1 package (10 to 12 ounces) white baking chips
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, cream, sugar and vanilla. Stir in blueberries and baking chips. Stir in bread cubes; let stand until bread is softened, about 15 minutes., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until a knife inserted in the center comes out clean, 50-60 minutes. Let stand 5 minutes before serving., For sauce, place baking chips in a small bowl. 1 tube crescent dough
¾ cup blueberry, fresh or frozen
8 oz cream cheese
⅔ cup sugar
2 eggs
1 teaspoon vanilla
¼ cup milk

Steps:

  • In a mixing bowl beat cream cheese, sugar, and vanilla until creamy.
  • Add eggs, and while beating slowly incorporate the milk until creamy. Set aside.
  • Preheat oven to 350°F (175°C.)
  • Using cold crescent dough, roll up crescent rolls and curve into crescent shape.
  • Place rolls in an ungreased 9x9 (23x23) pan.
  • Pour blueberries over the crescent rolls.
  • Pour cream cheese mixture over rolls and blueberries.
  • Bake at 350°F (175°C) for 35 minutes or until rolls have become golden brown.
  • Top with powdered sugar.

Do we love blueberries! I am not much of a dessert chef, but I sure can whip up a good bread pudding...and this one is one of our favorites. Cooks Notes: You can use "fat-free" half-and-half and "reduced-fat" cream cheese and it still is wonderful.

6 cups firm bread, crusts removed, cubed
6 eggs
1 cup sugar
1 tablespoon vanilla
2 teaspoons orange zest
4 cups half-and-half
2 cups blueberries
1 (8 ounce) package cream cheese, softened
2 tablespoons sugar
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 425 degrees
  • Spray 2 qt shallow baking dish with non-stick spray.
  • Beat eggs and sugar in bowl until light colored; add vanilla and orange peel.
  • Add half-and-half; mix well.
  • Place bread in baking dish; top with half of blueberries. Combine cream cheese and 2 T sugar; mix well.
  • Drop cream cheese mixture by teaspoonfuls over blueberries and bread; sprinkle with remaining blueberries.
  • Pour egg mixture over blueberries and bread. Wait 5 minutes. Bake at 350 degrees for 50-55 minutes.
  • Sprinkle with powdered sugar; serve warm.

2 slices day-old Italian bread
1 large egg yolk
1/4 cup heavy whipping cream
3 tablespoons whole milk
2 tablespoons sugar
2 tablespoons butter, melted
3/4 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
Dash ground cinnamon
1/2 cup fresh or frozen blueberries
Confectioners' sugar

Steps:

  • Cut bread into 1/2-in. cubes; place into a greased 20-oz. baking dish. In a bowl, combine the egg yolk, cream, milk, sugar, butter, vanilla, nutmeg and cinnamon. Stir in blueberries. Pour over bread cubes. Cover and refrigerate for 30 minutes., Bake, uncovered, at 350° for 30 minutes or until top is golden brown and a knife inserted in the center comes out clean. Sprinkle with confectioners' sugar and serve warm.

1 1/2 cups sugar (you can use splenda in place of the sugar in this recipe with no additional changes)
1 1/2 teaspoons vanilla
6 stale plain croissants, sliced open
1 cup dried cranberries or 1 cup dried apricot

Steps:

  • Preheat oven to 350°F.
  • Whisk together egg, half and half, sugar, vanilla.
  • Set aside.
  • Place bottom half of croissants in single layer in baking dish, add dried fruit, then place tops on.
  • Pour custard mixture over and push down so the croissants absorb the custard.
  • Let sit 10 minutes, then press again.
  • Place in water bath, cover with foil but poke holes so steam can escape.
  • Bake 45 minutes covered, then uncover and bake an additional 45 minutes.
