garlic paste

vegetable oil
large onions
green chilli
green cardamom pods
cinnamon stick
ground coriander
ground cumin
turmeric
water
double cream
ground almonds
salt
garam masala
toasted flaked almonds
basmati rice or Indian breads

Steps:

  • In a large bowl add the cubed lamb, garlic paste and ginger paste. Use your hands to rub the paste into the lamb, cover and set aside in a cool place to marinate for at least 2 hours.
  • In a large frying pan heat the oil over a medium heat, add the onions and chilli. Now gently fry, stirring frequently for 5-8 minutes until softened and golden.
  • Now add the cardamom pods, cinnamon stick, coriander, cumin and turmeric. Stir continuously for 1-2 minutes or until the spices are aromatic.
  • Add the lamb, cook for 5-7 minutes until browned. Stir in the water, bring to the boil and then reduce to a simmer. Cover the pan tightly and allow to simmer for 40-45 minutes until tender.
  • Meanwhile in a small bowl add the double cream and ground almonds and mix together. When the lamb is tender add 4 tablespoons of the cooking liquid to the cream and stir through. Now add this to the lamb, with the salt and garam masala.
  • Allow to simmer for a further 5 minutes uncovered. Serve on warmed plates with a sprinkling of toasted flaked almonds and rice or Indian breads (or both), enjoy!

700 g lamb neck or shoulder, cut into 2-3cm chunks
1 x 4cm piece ginger, peeled and finely grated
4 garlic cloves, crushed
1 green chilli, finely chopped (deseeded if you prefer)
2 tsp. turmeric
2 tbsp. garam masala
1 tsp. smoked paprika
2 tsp. ground cumin
2 tsp. ground coriander
1/2 tsp. chilli powder
150 g natural yoghurt
2 tbsp. vegetable oil
2 large onions, finely sliced
10 cardamom pods, lightly bashed
2 cinnamon sticks
1 medium tomato, chopped
200 g coconut cream
75 g ground almonds
1 x 200g pack of baby spinach
Small pack of coriander, roughly chopped
Cooked basmati rice or naan, to serve
50 g flaked almonds, toasted

Steps:

  • First, add the lamb pieces to a medium sized mixing bowl, along with the ginger, garlic, chilli, turmeric, garam masala, paprika, cumin, ground coriander, chilli powder and yoghurt. Mix well until the lamb is completely coated. Cover and leave to marinade in the fridge for at least 1 hour or overnight.
  • Heat the oil in a large frying pan or casserole pot over medium high heat. Add the onions with a pinch of salt and cook, stirring occasionally, until softened and golden brown, 8-10 minutes. Add the lamb with all the marinade, cardamom pods and cinnamon sticks and cook until lightly browned, 8-10 minutes.
  • Add the tomato, coconut cream, 400ml water, ground almonds and season with salt and pepper. Stir everything together, bring to a simmer then cover with a lid and gently simmer, stirring occasionally, for 2 1⁄2 - 3 hours, until the lamb is completely tender and falling apart, adding more water to loosen if needed.
  • Remove the cardamom pods and cinnamon sticks then stir the spinach through until wilted. Taste and season with more salt and pepper if you like. Stir through the coriander and serve with rice or naan and top with the toasted flaked almonds.

6 lb lamb shanks, 1 pound (455 g) each
kosher salt, to taste
freshly ground black pepper, to taste
2 tablespoons canola oil
2 medium carrots, minced, plus 1 pound (455 grams) oblique-cut
1 medium white onion, minced
2 stalks celery, minced
20 cloves garlic, minced, plus 15 whole, divided
2 tablespoons tomato paste
1 cup red wine
4 cups chicken stock
1 orange, juiced
1 lemon, juiced
5 sprigs fresh rosemary
10 sprigs fresh thyme
3 bay leaves
1 lb brussels sprouts, halved
1 lb red pearl onion, peeled
olive oil, for drizzling
3 lb yukon gold potato, peeled, chopped, and boiled
white pepper, to taste
½ cup unsalted butter, 1 stick, cubed and chilled
1 cup sour cream
½ cup heavy cream
¼ cup fresh parsley, chopped
1 lemon, zested
½ tablespoon flaky sea salt
2 cloves garlic, minced
2 tablespoons fresh chives, chopped
1 teaspoon horseradish
orange, zested

Steps:

  • Preheat the oven to 400°F (200°C).
  • Season the lamb shanks all over with salt and pepper.
  • Heat the canola oil in a large Dutch oven over medium-high heat.
  • Sear 2 lamb shanks at a time until a dark brown crust forms on one side, 3-5 minutes. Sear the other sides of the meat until evenly browned. Remove the shanks from the pan and set aside. Remove all but 2 tablespoons of fat from the pan.
  • Add the minced carrots, onion, celery, and minced garlic to the pot. Season with salt and pepper, and cook until the vegetables are deeply caramelized, 15-20 minutes.
  • Add the tomato paste and cook until it browns and is aromatic, 5 minutes.
  • Add the red wine and scrape the bottom of the pot to release the flavorful browned bits stuck to the bottom. Cook until the wine reduces by half and thickens slightly, 3 minutes.
  • Add the chicken stock, orange juice, lemon juice, rosemary, thyme, and bay leaves. Stir and bring to a boil.
  • Return the lamb shanks to the Dutch oven, cover, and place in the oven for 2 hours, turning the shanks halfway through, until the lamb is tender and the braising liquid has thickened.
  • About halfway through the lamb cooking time, add the oblique-cut carrots, Brussels sprouts, red pearl onions, and whole garlic cloves to a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to combine. Roast in the oven for 1 hour, or until the vegetables are tender.
  • Right after the potatoes finish boiling, drain and transfer to a large bowl. Season with plenty of salt and a bit of white pepper, and mash the potatoes until as smooth as possible.
  • Fold in the butter, sour cream, and heavy cream until smooth and light.
  • Make the citrus gremolata: In a small bowl, combine the parsley, lemon zest, flaky salt, garlic, chives, horseradish, and orange zest.
  • To serve, scoop mashed potatoes onto a plate. Add roasted vegetables and a lamb shank. Top with the braising liquid and citrus gremolata.

3 tablespoons canola oil (clarified butter) or 3 tablespoons ghee (clarified butter)
1 small onion, finely chopped
1 1/2 inches piece cinnamon sticks (dalchini)
2 -3 green cardamom pods
1 inch piece fresh ginger, very finely chopped
2 garlic cloves, very finely chopped
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon chili powder
5 tablespoons full cream yoghurt
1 teaspoon tomato puree
1 teaspoon salt
2 skinless chicken breasts or 4 skinless chicken thighs, cut into 1 inch pieces
2 tablespoons sliced almonds, prepared as in method
chopped fresh coriander, leaf (to garnish, cilantro)
2 cups water

Steps:

  • Heat the ghee in a large heavy pan then add the chopped onion and stir for a few minutes with the heat on high.
  • Add the cinnamon and cardamons, stir a little then turn the heat down to low and cook for 5 minutes.
  • Add the ginger and garlic, stir and cook for another 5 minutes on low heat stirring now and again to make sure nothing browns or burns.
  • Add the turmeric, coriander and chili powder and fry gently for a minute.
  • Add 1 tablespoon of yoghurt, stir round and turn the heat up so the yoghurt sizzles in the oil (don't worry, it won't split if you've used full cream yoghurt).
  • When the yoghurt has lost a lot of it's moisture add another tablespoon. Stir and fry as before.
  • Repeat until all the yoghurt is incorporated.
  • Add the tomato purée and stir.
  • Stir in hot water - enough to make the mixture very fluid.
  • Bring to the boil and simmer, stirring occasionally for 5-10 minutes.
  • Add salt to taste.
  • While the sauce is cooking, heat a frying pan at low to moderate then add the flaked almonds. Move the almonds around the pan so they don't burn and heat until they have just taken on a brown colour. Remove from pan and blend in a mixi with a little water to make paste.
  • Heat a little oil in a separate frying pan and stir-fry the chicken pieces over a moderate heat until they are sealed and have turned whitish.
  • Add almond paste to the sauce and stir. Then add the chicken & simmer gently for another 20-30 minutes or until the chicken is cooked and soft. Stir from time to time. If the sauce gets too dry add a little hot water.
  • At the end of the cooking you should have a fairly thick, creamy sauce with little patches of oil appearing at the top. Remove the cinnamon and cardamons (if you can find them!).
  • Serve, garnished with chopped fresh coriander (cilantro) leaves.
