⅓ cup milk
1 egg
⅓ cup dry bread crumbs
⅓ cup snipped fresh mint
⅓ cup snipped fresh parsley
¼ cup finely chopped onion
2 tablespoons chopped fresh dill
1 clove garlic, minced
¾ teaspoon salt
1 pinch ground black pepper to taste
1 pound ground lamb
2 tablespoons vegetable oil, or as needed
2 tablespoons butter
2 tablespoons all-purpose flour
¼ teaspoon salt
1 dash ground black pepper
1 cup milk
2 tablespoons lemon juice
1 teaspoon lemon zest

Steps:

  • Beat milk and egg together in a large bowl. Stir in bread crumbs, mint, parsley, onion, dill, garlic, salt, and pepper. Add ground lamb; mix well. Shape into 1-inch meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs; cook until browned, 1 to 2 minutes per side. Reduce heat and cover; cook until meatballs are no longer pink in the center, 15 to 20 minutes.
  • Meanwhile, melt butter in a saucepan. Blend in flour, salt, and pepper. Add milk; cook and stir until thickened and bubbly, about 5 minutes. Simmer for 2 minutes more. Stir in lemon juice and zest.
  • Drain meatballs and transfer them to a serving dish. Spoon the lemon sauce on top.

2 carrots
2 celery ribs
2 potatoes
1 leeks or 1 onion, chopped
2 1/2 cups water
3/4 teaspoon salt
1 egg
1 cup breadcrumbs
1 onion, grated
4 garlic cloves, minced
1/3 cup fresh parsley, chopped
1/3 cup fresh dill, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
1 lb lean ground lamb
1/4 cup all-purpose flour, for rolling meatballs
1 tablespoon vegetable oil, for browning meatballs
2 eggs
3 tablespoons lemon juice
1/2 cup cooking liquid from vegetables or 1/2 cup chicken broth
parsley or dill sprigs, to garnish

Steps:

  • Cut carrots and celery into 1/2-inch thick slices. Peel and cut potatoes into 3/4-inch cubes.
  • Place in wide saucepan along with leek/onion, salt and water; bring to boil. Cover and reduce heat to medium; simmer for 10 minutes.
  • Meanwhile, in bowl, lightly beat egg; mix in bread crumbs, onion, garlic, parsley, dill, salt, pepper and cayenne. Add ground lamb and mix well. Form into 1-inch (2.5 cm) balls. Spread flour on plate; roll each ball in flour.
  • In nonstick skillet, heat oil over medium-high heat; brown meatballs.
  • Add meatballs to vegetables; simmer, covered, for 20 minutes. Remove with slotted spoon when cooked through.
  • Meanwhile - in bowl, whisk eggs with lemon juice; whisk in the cooking liquid. Pour back into saucepan; cook, stirring constantly and being careful not to boil, until thick enough to coat back of spoon, about 3 minutes.
  • To serve plate meatballs and vegetables, pour sauce over meatballs and serve with rice and perhaps a salad. Garnish with parsley or dill.

½ cup milk
1 ¼ pounds ground lamb
1 egg, beaten
3 cloves fresh garlic, minced
2 tablespoons olive oil
1 tablespoon tomato paste

1 tablespoon ground cumin
1 ½ teaspoons salt
1 teaspoon dried oregano
½ teaspoon freshly ground black pepper

3 cups tomato sauce

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Line a baking sheet with aluminum foil; oil lightly.
  • Combine bread crumbs and milk in a small bowl. Soak bread crumbs until milk is absorbed, about 30 minutes.
  • Combine bread crumb mixture, lamb, egg, garlic, olive oil, tomato paste, rosemary, cumin, salt, oregano, black pepper, cinnamon, and cayenne pepper in a large bowl.
  • Form lamb mixture into 2-inch meatballs and place on the prepared baking sheet.
  • Cook meatballs in the preheated oven until they are slightly browned, about 15 minutes. Remove from the oven and set aside.

1 tablespoon unsalted butter
5 shallots, minced
2 pounds ground lamb
1 cup fresh bread crumbs
¼ cup chopped fresh parsley
1 egg, lightly beaten
2 tablespoons lemon zest
½ teaspoon dried marjoram
salt and freshly ground black pepper to taste
½ cup unsalted butter
1 tablespoon olive oil
2 ½ tablespoons tomato sauce
¼ cup wine
1 small garlic clove, minced

Steps:

  • Melt the 1 tablespoon butter in a skillet over medium heat. Cook and stir the shallots in the skillet until tender. Transfer to a large bowl.
  • Mix lamb, bread crumbs, parsley, egg, and lemon zest into the bowl with the shallots. Season with marjoram, salt, and pepper. Let stand 1 hour in the refrigerator.
  • Melt 1/2 cup butter and heat olive oil in a skillet over medium-high heat. Form the lamb mixture into small meatballs, and cook in the skillet in batches until evenly brown. Do not drain skillet. Drain meatballs on paper towels, and place in a serving dish.
  • Mix tomato sauce, wine, garlic, and cinnamon into the skillet. Cook and stir until well blended and heated through. Drizzle over the meatballs in the dish. Serve with toothpicks.

Prep these comforting Greek lamb meatballs with chargrilled veg and potatoes in just five minutes. A guaranteed family favourite, perfect for busy weeknights

2 tbsp olive oil
500g lamb meatballs
300g baby new potatoes, thickly sliced
2 large garlic cloves, crushed
185g chargrilled vegetables, drained if in oil
2 x 400g cans chopped tomatoes with herbs
2 tsp light brown soft sugar
100g black olives
40g feta, crumbled
½ small bunch mint, finely shredded
1 lemon, zested

Steps:

  • Heat 1 tbsp of the oil in a large shallow flameproof casserole or frying pan over a medium heat. Add the meatballs and fry for 5 mins or until golden brown. Set aside on a plate.
  • Heat the remaining oil in the same pan and fry the potatoes over a medium heat for 5 mins, or until they're starting to turn golden brown.
  • Add the garlic to the pan and fry for 1 min. Stir through the chargrilled veg, tomatoes and sugar, as well as the olives. Season. Add the meatballs back to the pan, cover and cook over a medium-low heat for 30-35 mins, stirring occasionally. Remove the lid halfway through, the potatoes should be just cooked through with the liquid slightly reduced.
  • Remove the pan from the heat and serve at the table with the feta, mint and lemon zest scattered over.

2 slices whole wheat bread (crusts removed, soaked in milk & squeezed dry)
1 1/2 lbs ground lamb or 1 1/2 lbs ground beef
1/2 cup rice (uncooked)
2 tablespoons parsley, chopped or 2 teaspoons dried parsley
2 tablespoons celery, chopped
1 teaspoon crushed dried mint flakes
1 teaspoon dried oregano
2 teaspoons olive oil
3/4 teaspoon salt
1/2 teaspoon pepper
2 quarts water or 2 quarts chicken stock
3 eggs, separated
1 lemon, juice of
1 1/2 cups meatball broth
2 tablespoons butter

Steps:

  • Put bread and ground beef in a bowl, and mix and knead thoroughly.
  • Add rice, parsley, celery, mint, oregano, olive oil, salt, and pepper, and mix well.
  • In a soup kettle, bring about 2 qt water to a furious boil.
  • Keeping the water boiling, shape the meat into little round balls (about the size of walnuts) and gently drop them into the boiling water.
  • Continue boiling for about 1/2 hour, and then set aside.
  • Beat the whites of 3 eggs until frothy, but not stiff and shiny.
  • Constantly beating, add the yolks until well mixed.
  • Still beating add the lemon juice drop by drop.
  • Bring butter and broth to a boil.
  • Add this to the egg-lemon mixture, beating continuously.
  • Place over VERY low heat, stirring in a S or X pattern (stirring round& round will cause sauce to curdle) until froth is almost broken down and sauce thickens.
  • Serve hot.

1 lb ground lamb
2 cloves garlic, minced
1/4 cup finely chopped onion
1/2 cup dried breadcrumbs

1/2 teaspoon salt, to taste

1 3/4 cups chicken stock or 1 3/4 cups chicken broth (low-sodium, if using canned)

Steps:

  • In a mixing bowl, beat the egg.
  • Add in the ground lamb, garlic, onion, bread crumbs, milk, dill, salt and pepper; mix well to combine.
  • Cover and refrigerate for 1 hour.
  • Shape lamb mixture into 1-inch balls; place balls on a large baking sheet with a rim.
  • Bake in a 400° oven for about 10 minutes or until browned.
  • Take out of oven and set aside.
  • Bring to chicken stock, lemon juice, and lemon zest to a boil in a saucepan over high heat.
  • Add in the orzo; stir to combine.
  • Boil for 1 minute.
  • Transfer orzo mixture into a 2 1/2 quart baking dish that has been sprayed lightly with non-stick cooking spray; spread mixture out evenly.
  • Place meatballs on top.
  • Decrease oven temp to 350° and bake, covered, for 40-50 minutes or until liquid is absorbed.
  • Let rest for 5 minutes before serving.

Brown meatballs in the shorteneing. Cover meatballs and cook over low heat for 15-20 minutes. Drain off fat. Transfer meatballs to serving dish.
  • While meatballs are cooking make the lemon sauce. by melting the butter in a small saucepan. Blend in the flour , salt, and pepper. Add the milk and cook, stirring, until thick and bubbly. Cook 1-2 minutes longer. Stir in the chooped eggs, lemon peel, and lemon juice.
  • Goes very well with a nice white rice.

This recipe given to me by my mom over 20 years ago is not the usual cream-lemon sauce, but is a beef based sauce with a slight tangy flavor that compliments the meatballs and goes well with steamed white rice.

1 egg, beaten
1 1/2 lbs ground beef
1 cup fresh breadcrumb
1 1/2 teaspoons salt
1/4 teaspoon pepper
3 cups boiling beef broth (made from boullion cubes is acceptable)
3 tablespoons flour, blended with
1/2 cup water
1 tablespoon lemon juice

Steps:

  • Combine beaten egg, ground beef, bread crumbs, salt and pepper in a large bowl and form into 24 large meatballs.
  • Bring beef broth to a boil, then add meatballs. Lower heat and poach gently for 15 minutes.
  • Whisk to smooth 3 TBLS. flour and 1/2 cup of water.
  • Remove meatballs to a heated dish and skim any fat from broth.
  • Slowly stir flour mixture in to simmering broth and stir with a whisk until sauce thickens.(sauce will be thin).
  • Add lemon juice to sauce and return meatballs to the sauce. Simmer 5 minutes before serving.

All the flavours of a tagine in meatball form, with the kick of homemade harissa and a cooling dollop of yogurt

2 tsp cumin seeds
2 tbsp coriander seed
50g breadcrumbs
1 garlic clove , crushed
500g lamb mince
juice 1 lemon
1 egg , lightly beaten
20g pack mint , most leaves chopped
2-3 tbsp sunflower oil
150ml natural yogurt , to serve
300g couscous
50g butter
2 tbsp harissa - shop-bought or see below, to serve

Steps:

  • Heat a heavy-based pan over a low heat. Add the spices to the pan then toast for 2-3 mins until fragrant. Crush using a pestle and mortar. Set aside.
  • Mix the breadcrumbs with 2 tbsp water and the garlic and stir well. Add the lamb, lemon juice, crushed spices, egg most of the mint. Season well. Mix well then shape into 16 balls. Chill for a good 30 mins.
  • Heat the oil in a frying pan. Fry the balls for 6-7 mins, turning now and then, until golden brown and cooked. Keep warm. Put the couscous in a large heatproof bowl, then rub in the butter and harissa. Pour over 400ml boiling water, cover and leave for 10 mins. Fluff up and season. Shred the remaining mint, then mix through. Serve with harissa and yogurt.
