LAMB CHOPS WITH FENNEL, ARUGULA, RED ONION AND BLACK OLIVE SALAD

- For the lamb chops: Preheat the oven to 375 degrees F.
- Combine the rosemary, garlic, crushed red pepper and lemon zest in a small bowl. Add 1/4 cup olive oil to the mix. Reserve.
- Remove 2 rib bones from each rack of lamb and cut the remaining racks into 6 equal, thicker chops (instead of 8 thinner chops).
- Sprinkle the lamb chops with salt and reserve at room temperature. Brush both sides of the chops with the rosemary mixture.
- Coat a large saute pan with olive oil and bring to a medium-high heat. Working in batches, brown the lamb chops on all sides, including the fat edge. (Remember: Brown food tastes good! If your pan gets too hot, lower the heat. Ditch the oil in between the batches and start off with fresh oil. It is really important not to crowd the pan while browning the chops. If the pan is crowded, the chops will steam instead of browning and getting crispy.) When all the chops are browned, arrange them neatly on a sheet tray (with sides, you don't want any juices or fat to run off). Brush the browned chops with the rosemary mixture. Roast the chops for 8 to 10 minutes for medium-rare, 12 to 15 minutes for medium.
- For the salad: Meanwhile, toss together the fennel, arugula, radicchio, red onion and olives with the olive oil, lemon juice and a generous sprinkle of salt in a large bowl. Taste to make sure it is delicious. Arrange the salad on a large serving platter and top the salad with the hot lamb chops to wilt the salad a little bit. Brush the chops with any remaining rosemary oil and drizzle any juice from the baking sheet over the lamb.

LAMB CHOPS WITH BLACK OLIVES

- Spread chops between two layers of plastic wrap. Using rolling pin or kitchen mallet, pound them until they are all an even thickness. Place the chops in a single layer in a large glass dish.
- In small bowl, combine olive oil, garlic, chili flakes, oregano, zest, juice and olives. Pour mixture over chops. Season to taste with salt. Turn chops in the marinade to coat both sides. Cover with plastic wrap. Marinate for 1 to 2 hours at room temperature.
- Place large skillet over high heat, and add vegetable oil. Remove chops from marinade, scraping off excess, and place them in skillet; reserve marinade. Sear until browned, about 2 minutes a side. Reduce heat to medium, and add reserved marinade and 2 tablespoons water. Simmer until cooked to taste, about 5 minutes for rare chops.
- To serve, transfer chops to a platter. Top with pan juices and serve immediately.
LAMB CHOPS AND POTATOES WITH OLIVES, TOMATOES AND FETA CHEESE
A wonderful dish--simple, delicious comfort food. I seared the lamb chops in a hot skillet coated with a little olive oil before adding them to the potatoes in the oven (reducing roasting time accordingly) and scattered chopped flat-leaf parsley along with the olives, tomatoes and feta to add some color. - Preheat oven to 450°F.
- Toss together potatoes, oil and half of rosemary on a large rimmed baking sheet; sprinkle with salt and pepper.
- Roast until potatoes are almost tender, about 30 minutes.
- Meanwhile, press garlic and remaining rosemary onto both sides of the lamb chops; sprinkle with salt and pepper.
- Arrange lamb on baking sheet next to potatoes; roast until potatoes are tender and lamb is cooked to desired doneness, about 18 minutes for medium-rare.

CHILLI GINGER LAMB CHOPS

- Put the garlic in a bowl with the ginger, lemon juice, oil, spices and seasoning. Blitz with a hand blender until smooth, then use to coat the lamb chops on both sides. Leave to marinate in the fridge for a couple of hours or overnight.
- Heat a barbecue until hot. Barbecue the chops over the coals for 3 mins on each side until cooked but still pink and juicy in the centre.

LAMB CHOPS WITH OLIVES
This is a lovely, careful way to prepare thick lamb chops-quite different from the usual fast grilling approach-and it makes them extraordinarily flavorful and tender. The chops brown gradually in a heavy skillet over relatively low heat, steadily building the flavors of caramelization, and then cook covered with a small amount of liquid and seasoning elements. This short period of moist cooking doesn't draw the meat juices into the liquid (as it would in long stewing or braising) but instead brings the seasoning flavors more intensely into the meat itself. Here, lemon, olives, and oregano give the chops the tangy taste of Abruzzo. For a great winter meal, accompany them with something cozy, like polenta, mashed potatoes, or smothered cabbage or cauliflower. In summer, a tossed green salad is all you need. Either rib chops or loin chops are suited for this recipe, though my choice is the loin chop, which offers portions of both the loin and the tenderloin muscles (like a T-bone steak). You could use lamb shoulder chops, too, but they'd need nearly twice as much time to cook covered. They wouldn't be as amazingly tender as loin or rib chops, but they would be delicious (and cost a lot less). With any kind of chop, a heavy cast-iron pan is perfect here, because of its steady heat-retaining qualities, but it must be well seasoned, so the meaty caramelization is not lost on the pan bottom.

- Pour the olive oil into the cast-iron skillet, and set over medium-low flame to heat slowly. Salt the chops lightly all over, using 1/2 teaspoon salt in all. Spread the flour on a plate, dredge the chops on both sides, and shake off excess flour.
- When the pan and oil are hot, lay in the chops-they should all fit snugly in one layer. Let them cook gently for 3 minutes or longer, until lightly browned on the first side, then flip them over and brown the second side gradually. As they cook, drop the crushed garlic cloves in the spaces between them, to sizzle and caramelize in the pan bottom-turn the cloves as they darken (and don't let them burn). Turn the chops again a couple of times, giving both sides another 2 or 3 minutes of browning, until well browned all over-about 10 minutes in all.
- Pour the lemon juice and 1/2 cup water into the pan, around the chops, and sprinkle the remaining salt over them. When the liquid is bubbling, drop the olives in between the chops, and shake the pan to distribute them. Sprinkle the oregano and peperoncino over the olives, then cover the pan.
- Adjust the heat to keep the juices bubbling gently and slowly concentrating. Cook, covered, turning the chops a couple of times, until the pan juices have thickened and adhere to the meat like a moist glaze-about 10 minutes or longer, depending on thickness.
- Remove the pan from the heat, and let the chops rest for a couple of minutes, taking in the moisture. Serve right from the skillet, with the olives and pan juices spooned over the chops.
SAUTéED LAMB CHOPS WITH RAMPS, ANCHOVY, CAPERS AND OLIVES
Wild spring ramps are an earthy aromatic twist to this otherwise traditional approach to lamb chops. But you can just as easily use minced garlic or young green garlic shoots from the farmers' market. Any of these pungent alliums harmonize with the other bold ingredients. The anchovy mellows, melting into the chunky sauce, and the flavorful, meaty olives, briny capers and crushed red pepper keep everything lively, along with a squeeze of lemon.

- Season chops on both sides with salt and pepper, sprinkle with rosemary, and set aside for 15 to 20 minutes.
- Put a large sauté pan or skillet over medium-high heat. Add olive oil and swirl to coat bottom of pan. When oil is hot, add chops in one layer, without crowding. (If necessary, use two pans or work in batches.)
- Cook chops until nicely browned on first side, about 4 to 5 minutes. (Maintain brisk heat, but adjust if they seem to be browning too quickly.) Flip chops and cook to medium-rare, until red juices rise on surface, 2 to 3 minutes more. Remove chops to a serving platter and keep warm.
- Return pan to stovetop over medium-high heat. Add a little olive oil if pan looks dry, then add shallot and cook until lightly browned, about 2 to 3 minutes. Add anchovies, mashing them with the back of a spoon, to combine.
- Add chopped ramps (or garlic, if using), capers, olives and red pepper and stir to incorporate shallot mixture. Raise heat to high and add white wine. Cook rapidly until reduced by half. Add chicken broth and simmer until slightly thickened, about 5 minutes. Stir in lemon juice and zest and turn off heat.
- Meanwhile, roughly chop reserved green ramp tops, if using, and mix with chopped parsley. Stir parsley mixture into sauce. Spoon sauce generously over lamb chops and serve.
