PARMESAN AND HERB CRUSTED LAMB CHOPS
Parmesan and Herb-Crusted Lamb Chops are easy to prepare and perfect for a spring special occasion for two.

Steps:
- Combine flour, 1 teaspoon salt and 1 teaspoon black pepper on a plate.
- Place eggs in a bowl and beat to blend.
- Combine cheese, panko, rosemary, parsley, thyme, garlic and salt and black pepper to taste in a bowl.
- Dust lamb chops with seasoned flour, shaking off excess. Dip in eggs, then thoroughly coat with cheese, breadcrumb and herb mixture.
- Heat olive oil over medium-high heat in a large skillet. Place 3 to 4 chops in the pan, reduce heat to medium and cook until nicely browned, about 2 minutes per side.
- Transfer to a rack set over a baking sheet and hold warm in the oven if necessary. Repeat with remaining chops.

Steps:
- Broil or grill the chops for 5-10 minutes on each side, depending on the thickness.
- Remove and keep warm.
- Melt the butter in a non-stick pan, add the onions and cook until soft.
- Add the beer and herbs and boil for 1 minute, stir in the cream and heat through.
- Remove from the heat, add the cheese and chives and stir until melted.
- Pour over the chops and serve immediately.

GRILLED LAMB CHOPS WITH ARUGULA, AGED GOAT CHEESE, CALIFORNIA PEACHES AND TOASTED ALMONDS
Steps:
- For the lamb chops:
- Lightly pound each chop and place them in a re-sealable bag. Add the rest of the ingredients and let marinate for a minimum of 3 hours
- For the vinaigrette:
- Puree the shallots, vinegar and mustard in a blender or food processor for 30 seconds, then pulse in olive oil. Whisk in 3 tablespoons of chopped chives. Don't worry about arugula burning from vinaigrette - it is hardy and meant to be wilted. Set the vinaigrette aside.
- Toss peach halves with the brandy and sugar. Allow to macerate for 1 hour. Grill quickly, just allowing for peaches to get charred.
- Toss arugula with the vinaigrette, then top with the goat cheese. Garnish with remaining chives and the toasted the almonds. Serve immediately.
- Remove lamb chops from marinade. Grill quickly over high heat until nicely charred and rare. Serve at room temperature.
CARROT AND PARSNIP PARMESAN AU GRATIN
You can make this ahead, cover and refrigerate fo several hours before baking. Choose small to medium-size parsnips, they are sweeter and nuttier! This makes a perfect side to a turkey or pork roast dinner!

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- Grate the peeled carrots and parsnips on a large-sided grater (or use a food processor).
- Measure out 3 cups each of grated carrots and parsnips, then place in a large bowl.
- Measure 2 tablespoons flour with 1/2 cup grated Parmesan cheese in a small bowl, then add to the grated veggies in the bowl; toss to combine, then set aside.
- In a saucepan melt butter over medium heat; add in 1/4 cup flour and cook stirring/whisking for 2 minutes.
- Gradually add in the full-fat milk, stirring/whisking continuously until the mixture starts to bubble; remove from heat.
- In a small bowl whisk together whipping cream, eggs, seasoned salt, black pepper, nutmeg and cayenne (if using) gradually stir this mixture into the hot milk mixture; whisk until combined.
- Pour the mixture over the grated veggies; mix well with a wooden spoon to combine, then transfer to the prepared baking dish.
- Sprinkle with about 1/2 cup (or more) Parmesan cheese.
- Bake uncovered for about 50 minutes or until golden and bubbly.
- Delicious!
