8 ounces double-bone rack of lamb
Salt
Black pepper
1/4 cup olive oil
1 cup panko
1 teaspoon sea salt
Artichoke Puree (recipe follows)
Crispy Baby Artichokes (recipe follows)
Black Cerignola Olive, pitted and sliced
Savory herb leaves, for serving
1 cup chopped large artichoke hearts
1/2 cup water
1/2 cup olive oil
1/2 green Thai chili
2 teaspoons salt
2 teaspoons lemon juice
5 baby artichokes
Soya Oil
Salt
Pepper

Steps:

  • Season the lamb with salt and pepper and place it fat side down on a grill for about 12 minutes, turning while it cooks for an even sear all around.
  • Combine the olive oil, panko and sea salt in a large saute pan and stir until golden. Remove from the heat and let cool.
  • Place the Artichoke Puree on a plate and arrange the Crispy Baby Artichokes to one side of the puree. Sprinkle the sliced olive and leaves over the artichokes. Slice the lamb in half and arrange it on top.
  • Serve with the panko mixture on the side.
  • Place the artichoke hearts in a medium saucepan with the water and olive oil. Add the chili and salt, cover and cook until tender, but with no color. Pour the mixture in a blender and blend until completely smooth. Add the lemon juice and cool the puree in a pan set over ice.
  • Remove the leaves from the artichokes and quarter the hearts. Deep fry the artichoke hearts in soya oil until tender and golden. Drain, and season with salt and pepper.

Lamb and artichokes:
1/4 cup olive oil
1 5-7-pound bone-in lamb shoulder
Kosher salt, freshly ground pepper
2 cups dry white wine
1 14-ounces can whole peeled tomatoes
1 head garlic, halved crosswise
1/4 teaspoon crushed red pepper flakes
2 lemons, halved crosswise
6 baby artichokes
Anchovy-Herb oil and assembly:
1/2 cup olive oil
4 anchovy fillets, packed in oil, drained
1 garlic clove, finely chopped
1/4 cup fresh flat-leaf parsley leaves
2 tablespoons fresh mint leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt

Steps:

  • Lamb and artichokes:
  • Preheat oven to 325°. Heat oil in a large skillet over medium high heat. Generously season lamb on all sides with salt and pepper and cook, turning often, until well browned, 12-15 minutes. Transfer lamb and oil to a roasting pan.
  • Carefully add wine to skillet, scraping up browned bits. Bring to a simmer and cook until reduced by one-third, about 5 minutes. Add tomatoes, crushing with your hands, garlic, red pepper flakes, and 2 cups water and pour into roasting pan. Squeeze lemons over lamb; add to pan. Roast 3 hours.
  • Meanwhile, remove tough dark outer leaves from artichokes. Using a serrated knife, trim 1" from top. Trim stems and remove tough outer layer with a vegetable peeler. Halve artichokes lengthwise. Toss to coat with pan juices and tuck under and around lamb. Roast, turning artichokes occasionally, until artichokes are tender and meat is falling off the bone, 1 1/2-2 hours. (Remove artichokes if they become too soft before meat is done.)
  • Anchovy-herb oil and assembly:
  • Pulse oil, anchovies, garlic, parsley, mint, and red pepper flakes in a food processor until smooth; season with salt.
  • When done, place lamb in a large bowl and transfer artichokes, lemons, and garlic with a slotted spoon to bowl. Pour anchovy-herb oil over; tent with foil. Transfer pan juices to a glass measuring cup. Let sit a few minutes, then spoon off fat from surface. Serve lamb with artichoke mixture and pan juices.

LAMB WITH ARTICHOKES, LEMON AND OLIVES

2 pounds lamb shoulder, trimmed and cut
2 ounces extra virgin olive oil
3 large onions, finely chopped
1 cup finely chopped parsley
1 pinch saffron
1 teaspoon black pepper
3 bay leaves
1 tablespoon cumin
3 cloves garlic
1/3 teaspoon turmeric
Salt to taste
4 cups water
1 preserved lemon, cubed
1/2 cup green olives
1/2 preserved lemon cut into 1/3-inch thick rounds
Lemon sliced, for garnish
Chopped parsley, for garnish
3 large artichokes, quartered, and covered in cold water
1 large onion diced in 2-inch cubes
4 cloves garlic, finely diced
3 bay leaves
3 stems parsley
1/2 teaspoon cumin
1/4 teaspoon black pepper
Pinch of saffron
2 ounces olive oil
15 green olives or kalamata olives
1 juice of a lemon
Salt to taste
3 cups of water
Lemon slices, for garnish

Steps:

  • For the lamb: Trim the lamb shoulder to remove all the fat and cube into medium size pieces. In a Dutch oven or large sauce pot heat the olive oil until hot and saute the onions until soft, about 3 to 4 minutes. Next, add the lamb pieces and cook for approximately 2 to 4 minutes. Add the saffron, pepper, parsley, bay leaves, 1 tablespoon cumin, and 1/3 teaspoon turmeric. Mix well and cook for an additional 5 minutes. Add the water, cover the pot, reduce the heat and simmer for 45 minutes to 1 hour. When the lamb is tender, transfer it to a separate casserole with a small amount of sauce to keep it warm. To the sauce add 1/2 cup green olives and allow the sauce to cook for 3 more minutes. Pour the sauce and artichokes over the lamb on the casserole plate and garnish the plate with fresh lemon slices as well as preserved lemon slices, and freshly chopped parsley. Serve immediately.
  • For the Artichokes with Lemons and Olives: Heat the olive oil in a Dutch oven or stock pot, add onions, garlic, saffron, black pepper, cumin, salt and bay leaves, stir well and bring to a boil. Drain the artichokes from cold water and put in the casserole, cook for about 20 to 30 minutes. Then add olives, lemon juice and preserved lemon, reduce heat for another 10 minutes, and let simmer. Serve in a platter, pour lemon juice over artichokes and garnish with thin slices of lemon. Serve the artichokes as a vegetarian dish or as a garnish for lamb.

1 (6 ounce) jar marinated baby mushrooms and their liquids
1 shallot, coarsely chopped
4 sprigs fresh tarragon leaves, stripped, plus a few sprigs to garnish
3 tablespoons white wine vinegar
Salt and pepper
1/2 cup extra-virgin olive oil, plus some for drizzling
16 baby lamb chops, cut by butcher
1/2 pound baby cut carrots, available in produce department
1/2 pound sugar snap peas
4 radishes, cleaned and trimmed, greens left on, halved lengthwise

Steps:

  • Preheat the broiler or grill pan to high.
  • In a food processor, combine the artichokes, marinated mushrooms, shallot, tarragon, and vinegar. Season with salt and pepper and turn processor on and stream in about 1/2 cup of evoo until a spoonable, fairly smooth dip forms, about 1 minute. Scrape the dip into a serving bowl and place a demitasse (small) spoon in the dip so it can be easy applied to each individual cooked lamb chop.
  • Drizzle chops with a few teaspoons of evoo and season with salt and pepper. Grill or broil 2 minutes on each side and remove to rest.
  • To serve, place dip on large platter or cutting board and surround with cooked chops and piles of baby cut carrots, sugar snap peas and halved radishes for dipping and topping. Garnish platter with additional sprigs of tarragon.

Canned or frozen artichoke hearts and lemon juice add a tangy brightness to rich, pan-seared lamb chops.

2 bone-in lamb shoulder chops, about 1/2-pound each
salt ((for this, we use Diamond Crystal kosher salt-see Kitchen Notes))
freshly ground pepper
olive oil
1 14-ounce can artichoke hearts, drained ((or frozen-see Kitchen Notes))
1 tablespoon chopped fresh rosemary
2 large cloves garlic, minced
1-1/2 tablespoons fresh lemon juice
1 tablespoon unsalted butter

Steps:

  • Season lamb chops generously with salt and pepper, and let them rest on the counter for at least 20 minutes. Heat 2 tablespoons of olive oil in a large skillet over medium-high flame-let it get good and hot. Add chops to pan and brown on one side, about 6 minutes. Transfer briefly to a plate.
  • Reduce heat to medium. Add artichoke hearts, rosemary and garlic to the pan, drizzling in a little more oil, if needed. Gently stir to combine (being careful to not break up the artichoke heart sections) and return chops to the pan, browned side up, nestling in among the artichoke hearts. Cook for about 5 minutes, occasionally stirring the artichoke mixture to keep it from browning or burning.
  • Transfer chops to a platter and tent with foil. Stir lemon juice into the artichoke hearts mixture and add butter to pan, stirring to combine as it melts, a minute or two. Spoon artichokes around chops and serve.

2 tablespoons olive oil
4 lamb chops, shoulder cut, 1 1/4 inches thick
Salt and freshly ground pepper
1 Spanish onion, coarsely chopped
2 carrots, coarsely chopped
2 stalk celery, coarsely chopped
1 cup red wine
1 cup port
4 cups chicken stock
1 bay leaf
4 fresh thyme sprigs, plus chopped leaves for garnish
2 tablespoons cold butter
Potato-Artichoke Gratin, recipe follows
Parsley, chopped for garnish
4 artichokes
1 large onion, chopped
1 lemon, quartered
1 cup dry white wine
3 large baking potatoes, like russets, thinly sliced on a mandoline
Salt and freshly ground pepper
1 1/4 cups heavy cream
3 sprigs fresh thyme
2 tablespoons finely chopped fresh thyme
1/4 cup freshly grated Parmigiano Reggiano
1/4 cup fresh bread crumbs

Steps:

  • Preheat oven to 350 degrees F.
  • Heat olive oil in a large Dutch oven and sear lamb chops until golden brown on both sides. Remove to a plate. Add onions, carrots, and celery to the pan and cook until the vegetables are golden brown. Add red wine and port and cook until almost reduced.
  • Add the chops back to the pot, add the stock, bay leaf, thyme, and bring the stock to a boil. Cover the pot, place the pot in the oven, and cook for about 2 hours or until fork tender.
  • Remove the lamb to a plate, strain into a clean small pot, and cook until reduced to a sauce consistency. Swirl in butter and season with salt and pepper, to taste.
  • Place a square of Potato-Artichoke Gratin on a large plate, top with a lamb chop and ladle some of the sauce over and around. Garnish with a sprig of fresh thyme and chopped parsley.
  • Place the artichokes, onion, lemon, wine and water to cover in a medium saucepan, cover with a clean dish cloth and simmer over medium-high heat until the artichokes are tender, about 20 to 30 minutes.
  • Drain the artichokes and when cool enough to handle, cut off the top half, trim leaves, remove choke, and remove heart. Slice heart into thin slices.
  • Preheat oven to 375 degrees F.
  • Butter a 8 x 8-inch baking dish and place a layer of potatoes on the bottom, place 1/4 of the artichoke hearts over the potatoes, season with salt and pepper, drizzle with 1/4 cup of the cream and some of the thyme. Repeat to make 5 layers ending with a layer of potatoes. Combine the cheese and bread crumbs and sprinkle over the top.
  • Place on a baking sheet and bake for 35 to 40 minutes or until the potatoes are cooked through and the top is golden brown and bubbly. Let rest 10 minutes before cutting.

4 lamb shanks
2 tablespoons lemon juice, divided
salt and black pepper, to taste
2 tablespoons olive oil
2 garlic cloves
1 teaspoon oregano
1 onion, quartered
1/2 cup beef broth
1/2 cup dry white wine
10 ounces artichoke hearts (I use frozen)
1 teaspoon cornstarch
1/4 cup water (or buttermilk)

Steps:

  • Preheat oven to 300°F.
  • Rub shanks with 1 tbsp lemon juice and season. In a skillet, saute shanks in olive oil and sear, turning to brown all sides.
  • Transfer shanks to a casserole dish and sprinkle with remaining lemon juice, garlic, and oregano. Add onion and bake covered, for 2 1/2 hours.
  • Add beef broth, wine, and artichoke hearts. raise heat to 350°F and bake covered for 30 minutes more.
  • Transfer lamb and chokes to a platter to keep warm. Mix cornstarch and water in a cup. On stovetop, Add cornstarch mixture to the casserole dish and cook with the lamb juice on med-high heat to thicken.

2 large baking potatoes, peeled and cut into 1/2-inch cubes
7 tablespoons, plus 1 teaspoon, olive oil
1 cup drained, canned artichoke hearts, cut into 1/2-inch dice
1 cup very thinly sliced raw artichoke hearts
1 cup cooked fava beans
1 large tomato, cored, seeded and cut into small dice
1 1/2 teaspoons salt
Freshly ground pepper to taste
2 tablespoons, plus 1 teaspoon, red-wine vinegar
2 large cloves garlic, peeled and minced
4 sprigs fresh rosemary, stemmed and minced
1 tablespoon olive oil
1 tablespoon salt
1 teaspoon freshly ground pepper
1 rack of lamb, bones scraped of all fat

Steps:

  • For the salad, preheat the oven to 375 degrees. Place the potatoes in a roasting pan and toss with 1 tablespoon of the olive oil. Roast until tender, tossing from time to time, about 40 minutes.
  • Meanwhile, for the lamb, combine the garlic, rosemary, olive oil, salt and pepper. Rub the mixture all over the lamb and let stand for 30 minutes.
  • Heat 1 teaspoon of the salad's olive oil in a heavy skillet, preferably cast iron. Add the canned artichoke hearts and saute until browned on all sides, about 5 minutes. Place the roasted potatoes, sauteed and raw artichoke hearts, fava beans and tomato in a large bowl and toss to combine. Season with 1 teaspoon of the salad's salt and pepper to taste.
  • For the lamb, increase the oven temperature to 400 degrees. Place the lamb in a roasting pan and roast until medium-rare, about 30 minutes. Let stand for 10 minutes.
  • Meanwhile for the salad, whisk together the vinegar, the remaining 1/2 teaspoon salt and pepper to taste. Slowly whisk in the remaining 6 tablespoons of olive oil. Add to the salad and toss to coat.
  • Carve the lamb. Divide the salad among 4 plates and top each serving with 2 lamb chops. Serve immediately.

ARTICHOKE HEARTS IN LEMON-PARSLEY SAUCE

From the Williams-Sonoma "Vegetable" cookbook. DH and I enjoyed this as a side to a lemon chicken recipe. Choose either fresh or frozen artichokes (the default when listing this would not let me write "or"). We used frozen artichoke hearts from Trader Joe's and it turned out really nice.

8 artichokes, trimmed (small to medium in size)
15 -20 frozen artichoke hearts, thawed
1/2 lemon
1 tablespoon capers, preferable salt-packed (optional)
4 -5 tablespoons extra virgin olive oil
2 yellow onions, finely chopped
4 -5 garlic cloves, coarsely chopped
3 tablespoons fresh Italian parsley, chopped
salt & freshly ground black pepper, to taste
1 -2 cup stock (vegetable or chicken)
1/2 teaspoon grated lemon zest (optional)
1 lemon, juice of
3 fresh basil leaves, torn (can also use mint)

Steps:

  • If using fresh artichokes, trim away the tough outer leaves and remove the choke. Bring a large saucepan three-fourths full of water to a boil. Drain the artichokes, add them to the boiling water along with the lemon half, and parboil for 5 minutes. Drain and set aside. (There is no need to parboil frozen artichoke hearts).
  • If using salt-packed capers, soak in water to cover for 5 minutes, then drain and pat dry. If using brine-packed capers, rinse under cold running water, then drain and pat dry. Set the artichokes and the capers aside.
  • In a saute or deep frying pan, heat 2 Tb of olive oil over medium-low heat. Add the onions and saute lightly until softened and golden, 5-6 minutes. Add the garlic, parsley, and artichokes, and cook, tossing every so often and adding a little more oil if the artichokes begin to scorch, until they are fragrant and lightly golden, about 10 minutes. Season the artichokes to taste with salt and pepper.
  • Add 2 more Tb of olive oil, 1 cup of stock, the capers, lemon zest (if using), lemon juice, and the basil. Raise the heat to high and bring to a boil. Reduce heat to medium and cook, uncovered, until the artichokes are tender and the liquid has evaporated to a thickened and flavorful sauce, about 20 minutes. If the liquid is in danger of boiling away before the artichokes are tender, add more stock as needed.
  • Transfer to a serving bowl and serve hot or at room temperature.

1 small shallot, minced
2 garlic cloves, minced
3 tomatoes, peeled seeded and coarsely chopped
2 teaspoons balsamic vinegar

6 -8 fresh basil leaves, cut into narrow strips
6 -8 fresh mint leaves, cut into narrow strips
1/4 cup dry red wine

Steps:

  • Using a sharp knife, trim away as much of the surface fat from the lamb as possible. Brush or rub the chops on both sides with olive oil, and season generously with salt and pepper.
  • Press the parsley and basil firmly into both sides of each chop. Let stand at room temperature for 20 to 30 minutes before roasting.
  • Preheat an oven to 450 degrees F.
  • Meanwhile, start making the sauce: In a small saucepan over medium-low heat, warm the olive oil. Add the shallot and saute until softened, 3 to 4 minutes. Add the garlic and cook for 1 minute.
  • Increase the heat to medium-high, add the tomatoes and cook, stirring frequently, until the tomatoes soften and release their liquid, 3 to 4 minutes.
  • Add the vinegar and season with salt and pepper. Cook until most of the liquid has evaporated, 3 to 4 minutes.
  • Remove from heat, stir in the basil and mint, and set aside until the lamb chops are roasted.
  • Preheat a large, heavy ovenproof fry pan over high heat until very hot. Add the 1 Tb olive oil, and then add the lamb chops and sear for 2 minutes. Turn the chops and sear for 1 minute on the other side.
  • Immediately transfer the pan to the oven and roast the lamb until an instant-read thermometer inserted into the thickest part of the meat, away from the bone, registers 125 to 130 F for medium-rare, 5 to 6 minutes.
  • Remove the pan from the oven, transfer the chops to a warmed platter and cover loosely with aluminum foil. Let rest while you finish the sauce.
  • Pour off any excess fat from the pan. Set the pan over medium-high heat, pour in the wine and cook, stirring to scrape up the browned bits from the pan bottom.
  • Add the tomato sauce and any juices that have accumulated on the platter and bring to a boil. Remove from the heat.
  • Divide the chops among warmed plates. Divide the sauce evenly among them, spooning it over the top. Serve immediately.

2 (7 1/2 ounce) cans sliced water chestnuts, drained
1 lb fresh mushrooms, thinly sliced
1 bunch scallion, chopped
2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 dash black pepper
1 dash hot pepper sauce

Steps:

  • Drain artichokes, reserving the marinade from jars.
  • Place the artichokes in a medium bowl.
  • Add water chestnuts, mushrooms, and scallions.
  • Add olive oil, vinegar, salt, and hot sauce to reserved artichoke marinade.
  • Whisk well to blend.
  • Pour over vegetables and toss.
  • Serve immediately or cover and marinate in refrigerator for up to 3 days.

2 tablespoons lemon juice
3 tablespoons minced fresh mint
3 tablespoons minced fresh parsley

4 loin lamb chops
Salt and freshly ground pepper to taste

Steps:

  • Toss salad ingredients together and set aside.
  • Heat a large, heavy-bottomed nonstick skillet over medium-high heat until very hot. Place lamb chops in the pan and saute until medium rare, about 3 minutes per side. Sprinkle with salt and pepper.
  • Place 1 lamb chop on each of 4 plates. Top with the salad and serve.

4 shoulder lamb chops (1/2 inch thick each)
Coarse salt and freshly ground pepper
1 or 2 tablespoons extra-virgin olive oil
1 medium onion, halved crosswise and cut into 1/4-inch-thick slices
4 artichoke hearts (water-packed, from one 14-ounce can), rinsed, drained, and each cut into 6 wedges
1/4 cup fruity white wine, such as a New Zealand Marlborough Valley Sauvignon Blanc
1 cup homemade or low-sodium store-bought chicken stock
1/2 cup cherry tomatoes, halved
1/2 cup pitted Kalamata olives, halved
1 tablespoon lemon-zest strips

Steps:

  • Rinse chops; pat dry. Season with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat until hot but not smoking. Cook lamb in two batches, turning once, 4 to 5 minutes per side for medium-rare. Transfer to a platter; loosely cover with foil.
  • Add onion and artichoke hearts to same skillet (add 1 tablespoon oil if skillet is dry). Cook over medium heat until softened and golden (do not brown), 3 to 5 minutes. Add wine; cook until almost all liquid is evaporated, about 3 minutes. Add stock and tomatoes; cover, and cook 3 minutes. Uncover; cook until sauce is reduced by half, 3 to 5 minutes. Stir in olives and zest. Season with salt and pepper.
  • Spoon vegetables and sauce over lamb, and serve.
