ROASTED HONEY-CINNAMON SWEET POTATOES



Roasted Honey-Cinnamon Sweet Potatoes image

Sweet potatoes with a honey-cinnamon glaze get a boost from ancho chile powder and toasty pecans.

2 1/2 pounds sweet potatoes (about 6)
4 tablespoons salted butter, melted
2 tablespoons honey
1/2 teaspoon ancho chile powder
1/2 teaspoon ground cinnamon
Kosher salt
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil.
  • Pierce the sweet potatoes all over and heat in the microwave on high, turning them over halfway through, until cooked through, 8 to 12 minutes. (Some potatoes will cook faster than others. After cooking halfway, check the potatoes every 2 minutes; they should feel soft when you squeeze them.) Cut into large chunks and place on the prepared baking sheet.
  • Stir together the butter, honey, chile powder, cinnamon and 1/4 teaspoon salt in a small bowl. Pour the mixture over the potatoes and toss to coat. Roast until the honey butter is bubbly and the potatoes are glazed, 15 minutes. Toss well. Sprinkle with the chopped pecans and bake until the nuts are toasted, about 5 minutes more. Season with salt and serve.

Steps:

  • Heat oven to 325 degrees. Put all the ingredients in a 10-inch cast-iron skillet and stir until combined.
  • Transfer to the oven and roast, stirring once or twice, until potatoes are tender, about an hour and 15 minutes. Then raise the oven temperature to 450 degrees and cook until potatoes are crusty, brown and tender, about 15 minutes longer.

  • Preheat oven to 375 degrees F.

¼ cup vegetable oil
2 pounds sweet potatoes, peeled and sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
¾ teaspoon salt
1 pinch freshly ground pepper
1 tablespoon fresh lime juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
  • Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
  • After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
  • Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

1/4 cup vegetable oil
2 tablespoons brown sugar
1 teaspoon cinnamon
1 teaspoon salt
fresh ground pepper
1 tablespoon freshly sqeezed lime juice

Steps:

  • Preheat oven to 375 degrees.
  • Peel potatoes and slice into 1/2 inch slices.
  • Pour oil into roasting dish and place in oven for 7 minutes.
  • Meanwhile, mix sugar, cinnamon, salt and pepper together.
  • Place potato slices in hot oil and return to oven for 10 minutes, then turn slices over and roast for 10 more minutes.
  • Remove baking dish from oven and sprinkle slices with cinnamon mixture and turn to coat.
  • Return to oven and roast for another 5 minutes each side.
  • Place potato slices on paper towel to drain, then place on serving dish.
  • Drizzle lime juice on top of potatoes and serve.

Looking for something a little different this Thanksgiving? Here's a nice way to liven up your menu or to ensure that you aren't the fifth person to bring candied yams to that family dinner.

3 large sweet potatoes or 3 large yams
2 tablespoons extra virgin olive oil
1 teaspoon ground cinnamon
1/2 teaspoon ground chipotle chile pepper (more or less to taste- but be warned, ground chipotle is hot)

Steps:

  • Preheat your oven to 450 degrees.
  • Wash and scrub the sweet potatoes.
  • Cut each sweet potato into bite-sized chunks (make each piece roughly about an inch).
  • Add the sweet potato pieces, the extra virgin olive oil, cinnamon, and chipotle to a gallon-sized storage bag.
  • Close the storage bag and shake, making sure all of the spices are evenly distributed on the pieces (otherwise you might find out what happens when too much chipotle sticks to an individual piece).
  • Spread out the spiced sweet potato pieces in an even layer onto a baking sheet.
  • Salt to taste.
  • Bake the sweet potatoes in the oven for 15 minutes, then using a spatula to turn them, place them back in the oven for another 15-20 minutes. If you like them crisper, you can add a few minutes, just make sure to check on them so they don't burn. Serve them as they are, or you can dip them in ketchup like french fries.

2 pounds boneless pork loin roast
4 red potatoes, peeled and sliced
salt and pepper to taste
3 sweet potatoes, peeled and sliced
2 tablespoons ground cinnamon
1 tart green apple - peeled, cored, and sliced
½ cup butter, sliced
½ cup milk
½ cup water
2 cubes chicken bouillon
1 cube beef bouillon
1 tablespoon cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the pork roast in a medium baking dish. Season red potatoes with salt and pepper, and arrange around the roast. Place sweet potatoes and cinnamon in a resealable plastic bag, and shake to coat. Arrange sweet potatoes around the roast. Place apple over the roast and potatoes. Top with butter slices. Seal baking dish tightly with foil.
  • Cook 1 1/2 hours in the preheated oven, or until the internal temperature of the pork has reached 145 degrees F (63 degrees C).
  • In a medium saucepan over medium heat, blend the milk, water, chicken bouillon, beef bouillon, and cornstarch until the bouillon cubes are dissolved and the mixture is thickened. Serve with the pork roast and potatoes.
