MINI CINNAMON MUFFINS
Made with a base of applesauce and whole grain flour, these easy mini muffins are sweet enough to taste like a treat!

Steps:
- Preheat the oven to 375 degrees F and grease a 24 cup mini muffin tin.
- In a medium bowl, stir together the applesauce, butter, milk, maple syrup, vanilla, and egg.
- Add the flours, baking powder, baking soda, cinnamon, and salt and gently fold together.
- Fill prepared muffin tin to the edge of each cup using about 2 tablespoons of batter.
- Sprinkle each muffin with cinnamon and granulated sugar.
- Bake for 18-20 minutes or until a cake tester comes out cleanly.
- Remove from oven, run a paring knife around the edges, if needed to loosen, and transfer to cool on a wire rack. Serve warm or at room temperature.

- Preheat oven to 400°F, grease muffin cups.
- Peel, core apple and grate.
- Make spiced sugar by stirring cinnamon and nutmeg into 1 tbs sugar, reserve.
- Sift flour, remaining 1/4 cup sugar, baking powder and salt together into mixing bowl.
- Mix egg, oil, water and grated apple together.
- Stir them all together into dry ingredients, until flour is moistened.
- Stir in raisins (if used).
- Spoon into muffin cups, and sprinkle top with spiced sugar.
- Bake for 15 minutes.

LACTOSE-FREE APPLE AND CINNAMON MUFFINS
After having to go on a medically enforced lactose-free diet for 4 weeks I was at a loss as to what sweet treats I would still be able to eat. After amalgamating various recipes and trial and error, I came up with this delicious recipe for apple and cinnamon muffins. They're sweet, soft, and so so so tasty! Even better, they're lactose free! Best served warm when they're fresh out of the oven - though they will also keep for several days.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin with oil or line cups with paper liners.
- Sift all-purpose flour, self-rising flour, baking powder, cinnamon, nutmeg, and salt together in a small bowl. Sift the flour mixture again into a larger bowl. Stir in brown sugar and white sugar. Make a well in the centre of the flour mixture.
- Place chopped apples in a saucepan and cover with water. Cover saucepan with a lid and bring to a simmer over medium heat. Simmer until apples are just tender, but not soft, about 5 minutes. Remove from heat, drain, and set aside.
- Lightly beat eggs with the vanilla extract in a bowl. Whisk in milk until well combined. Whisk in vegetable oil in a slow stream.
- Pour egg mixture into the well of the flour mixture in a slow stream, stirring to combine using a metal spoon. Stir the mixture until just combined. Fold in apples. Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until tops spring back when lightly pressed and a skewer inserted in the centre comes out clean, 15 to 20 minutes.
- Allow muffins to stand in the pan for 3 to 5 minutes before turning them out on to a wire rack to cool.

- Grease 12 muffin cups or line with paper cups. Set aside.
- To make topping, stir together brown sugar, 1 tablespoon all-purpose flour, 1 tablespoon whole wheat flour and 1/2 teaspoon cinnamon. Cut in margarine. Stir in 1/4 cup walnuts. Set aside.
- In a medium bowl combine flours, baking soda, cinnamon, sugar and salt. In a small bowl, combine apples and egg whites. Stir in nuts and applesauce with apple-egg mixture. Add wet ingredients to dry ingredients and mix to combine.
- Fill muffin cups 2/3s full with batter. Sprinkle topping over each cup.
- Bake in a 400 degree oven for 15-18 minutes, or until golden. Cool in pan for 5 minutes. Remove muffins from cups and serve warm.
