A great desert for our diabetic friends. This recipe came to me from my grandmother, who was a diet-controlled diabetic.

6 cups sliced and pared tart apples
4 (1 g) packets sweet 'n low artificial sweetener
1 tablespoon cornstarch
1/2 teaspoon cinnamon (or to taste)
2 tablespoons lowfat margarine
1 (9 inch) pastry for double-crust pie

Steps:

  • Mix sweetener, cornstarch, and cinammon.
  • Pour over apples and mix well.
  • Pour apple mixture into unbaked pie crust.
  • Cut oleo into small pieces and put on top of apples.
  • Cover with remaining crust and seal edges.
  • Bake at 425 degrees for 15 minutes.
  • Lower temperature to 350 degrees and continue baking for an additional 30-40 minutes.

6 apples, pared and sliced
1 (6 ounce) can frozen apple juice
2 tablespoons cornstarch
1/2 cup water
cinnamon
2 tablespoons butter

Steps:

  • Fill pie shell with sliced apples.
  • Heat apple juice to boiling.
  • Dissolve cornstarch in water and stir into hot juice.
  • Cook until thickened.
  • Sprinkle cinnamon over apples.
  • Dot with butter.
  • Pour juice over all and cover with upper crust.
  • Prick crust.
  • Bake in 450 for 10 minutes.
  • Reduce heat to 350 and bake 35-45 minutes.

1 cup frozen peas
2 tablespoons olive oil
3 ribs celery ((diced))
3 medium carrots ((peeled and thinly sliced))
1 medium onion ((diced))
¼ cup all-purpose flour
4 tablespoons unsalted butter ((1/2 stick ))
4 cups chicken stock ((homemade or low-sodium))
2 chicken breasts ((cooked and shredded))
2 tablespoons grated Parmesan cheese
1 tablespoon fresh thyme leaves
½ teaspoon Kosher salt
¼ teaspoon freshly ground black pepper

Steps:

  • Add the frozen peas to a measuring cup. Set aside to defrost at room temperature.
  • Heat the oil in a large, heavy saucepan or stockpot over medium heat.
  • Once the oil is hot, add the celery, carrots, and onion. Cook, without browning, until the vegetables begin to soften, about 5 minutes.
  • Sprinkle the flour over the vegetables and cook, stirring constantly, until the flour is incorporated into the mixture but not browned.
  • Add the butter and cook, stirring gently, until the butter melts. Slowly add the chicken stock, one cup at a time, stirring constantly, until the sauce thickens.
  • Add the shredded chicken and peas to the pot, then cook for a minute or two.
  • Remove from heat. Stir in the Parmesan cheese, thyme, and salt and pepper.

This delicious pie is a hit at Thanksgiving, or anytime, really! It's a combination/adaptation of the Basic Flaky Pie Crust, Apple Pie by Grandma Ople, and Upside-Down Apple Pecan Pie.

2 ½ cups all-purpose flour
½ teaspoon salt
1 cup cold shortening
6 tablespoons ice water, or as needed
½ cup unsalted butter
3 tablespoons all-purpose flour
½ cup white sugar
½ cup packed brown sugar
¼ cup water
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 pinch ground nutmeg
⅓ cup butter
½ cup firmly packed brown sugar
1 cup chopped pecans
8 Granny Smith apples - peeled, cored and thinly sliced

Steps:

  • Whisk 2 1/2 cups flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened and dough comes together. Do not add more water than you need. Divide the dough in half and shape into 2 balls. Wrap in plastic wrap and refrigerate, at least 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch pie pan with wax paper.
  • Melt 1/2 cup unsalted butter in a saucepan over medium heat. Stir in 3 tablespoons flour to form a paste. Stir in 1/4 cup white sugar, 1/2 cup brown sugar, 1/4 cup water, vanilla extract, cinnamon, and nutmeg; bring to a boil. Reduce heat and simmer until filling mixture is thickened slightly, about 3 minutes.
  • Melt 1/3 cup butter in a separate saucepan over low heat. Add 1/2 cup brown sugar and whisk until smooth, about 2 minutes. Stir in pecans.
  • Spread pecan mixture evenly onto lined pie pan. Roll out one ball of dough; line pie pan over pecan mixture. Toss apples with filling mixture; pour into pie plate. Roll out second ball of dough and place over apple filling. Crimp edges of bottom and top crusts together. Cut several small slits into top crust to vent. Place pie on foil-lined baking sheet.
  • Bake pie in the preheated oven until crust is golden brown, about 1 hour.
  • Remove pie from oven and allow to cool slightly, 5 to 10 minutes. Place a serving plate gently over pie and carefully flip to invert, being careful not to come in contact with molten sugar. Peel off waxed paper; cool for 1 hour.

1/3 cup unsweetened applesauce
3 tablespoons water
2 tablespoons cornstarch
3 eggs
2 teaspoons vanilla
2 tablespoons very strong coffee (prepared, not grounds) or 2 tablespoons brewed espresso (prepared, not grounds)
24 pecan halves
1/2 cup frozen apple juice concentrate (thawed)
1/2 cup granular fructose (or diabetic sugar)

Steps:

  • Make fruit sweetener: mix together 1/2 cup frozen apple juice concentrate (thawed) PLUS 1/2 cup granulated fructose or diabetic sugar.).
  • Prepare pastry and place in 9-inch pie pan. In large bowl, combine fruit sweetener, gelatin and apple sauce. Beat with electric mixer.
  • In small bowl, blend water and cornstarch until smooth. Add cornstarch to fruit sweetener mixture and blend. Beat in eggs, one at a time. Stir in vanilla and coffee. Pour mixture into pie shell. Decorate top with pecan halves. Bake 30-40 minutes (until custard is set) at 375°F Cool slightly before cutting.

1 pkg double crust pie dough
4-6 large apples,pealed,cored,and sliced thin
1 large bowl of cold water that 2t lemon juice,1/2 t salt,1 t double streangth vanilla,1t cinnamon
1 c flour
1 tsp cinnomon
1/8 c splenda
1 pinch salt
1 bottle no sugar added carmel flavored ice crean topping
2/3 c pecans, in pieces

Steps:

  • 1. start with the apples as you peal,core,slice them right into bowl of spiced water
  • 2. next mix flour,splenda,salt,cinnomon in lg zip bag... drain apples add to flour mix tose to coat apples well set aside
  • 3. next unroll one pie crust place it evenly in pie plate nuke carmel sauce so it pours easily put about 1/2 on bottle pir crust... next layers pecans
  • 4. next add apples... next take rest of carmell topping and drizzle over top of pie
  • 5. next put top crust on.. pinch all the way round pie to seal take sharp knifw and poke several holes in top crust
  • 6. bake in 350 oven for 45-65 min check at 45 and shield with foil if getting to brown
  • 7. refridgerate overnight... to sevve slice and add cool whip or ice cream to this..... yummo!!!!

1 cup sugar free cookie crumbs
1/4 cup finely chopped pecans
2 tablespoons margarine
2 medium bananas (reserved)
1 3/4 cups skim milk
1/4 cup unsweetened apple juice concentrate
1/4 cup cornstarch
2 tablespoons margarine
4 teaspoons sugar substitute
1 teaspoon vanilla extract
1 pinch salt
1/4 cup sugar free cookie crumbs
1/4 cup chopped pecans

Steps:

  • To make Crust:.
  • Soften the margarine.
  • Blend cookie crumbs, pecans, and margarine in a bowl to make the crust.
  • Press the pie crust into a 9 inch pie plate.
  • Chill for 30 minutes.
  • To make Filling:.
  • In a saucepan, heat all filling ingredients, except margarine, to a boil over medium heat, whisking until smooth (about 10 minutes). Reduce heat and simmer for 1 minute. Scrape into a bowl.
  • Whisk in remaining 2 tablespoons of margarine until smooth. Cover with plastic wrap and cool to room temperature. Slice the bananas.
  • In prepared pie plate, arrange sliced bananas in 1 layer. Whisk cooled filling and pour evenly over bananas.
  • To Make Topping:.
  • Mix remaining cookie crumbs and pecans together and sprinkle over the filling. Chill the Banana Pecan Cream Pie for 1 hour before serving.

1 pillsbury ready made fresh pie crust packet (you will need only 1 crust freeze the 2nd one for another day)
1 (15) oz can pure pumpkin
3 large egg
1 tsp vanilla or vanilla exract
1 c half and half
1 tsp ground ginger
3/4 c packed brown sugar (feel free to use splenda brown sugar for diabetics)
1 tsp ground cinamon
1/4 tsp freshly grated nutmeg or ground nutmeg
1/4 tsp ground cloves
whipped cream for serving

Steps:

  • 1. Line the crust in the 9 1/2 -inch deep dish glass round pie form pierce the bottom all over with a form and chil until firm about 30 minutes Line the crust with foil then fill the pie with dried beans Bake in preheated 350F oven for about 20 minutes or until edges are golden. Remove the foil and beans let cool completely on a rack for 10-15 minutes
  • 2. Make the filling. Whisk with an electric mixer in low spead until everything is well blended, the pumpkin, brown sugar, eggs, vanila, half and half, ginger, cinamon, nutmeg and cloves in a bowl. Pour into the crust bake until the edges are set but the center quivers 1 hour to an 1 hour and 15 minutes. (Cover the edges of the crust with foil if they brown too quickly)
  • 3. Cool completely on a rack serve with whipped cream!

1 tsp 1 tsp ground cinnamon
1 pastry for 9-inch pie (from mix or homemade).
1 1/2 c 1 1/2 c. blackberries, fresh or frozen
1 1/2 c raspberries, fresh or frozen
1 1/2 c blueberries, fresh or frozen
1 Tbsp cornstarch
3 tsp freshly squeezed orange juice

Steps:

  • 1. BERRY PIE Makes 9 servings *Preheat oven to 450 degrees F (230 degrees C) *Baking Sheet lined with foil. 1. In a small bowl, combine 1 tsp. sugar and cinnamon; set aside.
  • 2. 2. On a lightly floured surface, roll out pastry to 1/8 inch thick and cut into 9 pastry shapes of choice using a 3 1/2" shaped cookie cutter of your choice. Sprinkle with cinnamon mixture. Place on prepared baking sheet and bake in preheated oven for 6 to 8 minutes, or until lightly browned. Transfer to rack and let cool.
  • 3. 3. In medium saucepan, combine blackberries, raspberries and blueberries. Add remaining sugar and cornstarch and toss to coat fruit. Add orange juice.
