Htipiti is a perfect dip for summer. This Greek recipe comprises chopped roasted red peppers and feta cheese. Serve with flatbread and vegetable crudités.

Number Of Ingredients 5

6 red peppers, washed
250g (8oz) feta cheese, crumbled
125ml (½ cup) olive oil
2.5ml (½ tsp) ground black pepper
1 red chilli, finely chopped

Steps:

  • Preheat the oven to 200°C / fan 180°C/ 400°F / gas mark 6.
  • Place the red peppers in a roast tin and brush lightly with oil.
  • Place the tin in the oven and roast for 40 minutes, turning halfway through. If the peppers aren't tender and wrinkly give them a little more time in the oven until they are.
  • Remove the heat and let it cool.
  • When the peppers are cool enough to handle, peel and deseed them, then chop them finely.
  • Place the peppers, cheese, oil, black pepper and chilli in a large mixing bowl and stir until well combined.
  • Serve with flatbread and vegetable crudités. Enjoy!

This comes from a Rhodes Greece website I found with a lot of information by a lovely looking woman named Susie Atsaides. This recipe was posted for the Zaar World Tour 2006.

1 cup feta cheese, crumbled
1/4 cup giardinera bell pepper, finely chopped
1/2 tablespoon oregano
water (or some juice from the giardinera)

Steps:

  • Just mix all of this together. Use the water sparingly, just enough to get the right consistency for spreading. Mind you, this is spicy.

This is an awesome dip that I can yearly. It is great on Ritz crackers spread with cream cheese. It has a little kick, but not much. Also works GREAT in chili.

7 green peppers
7 hungarian wax chiles (hot)
24 ounces ketchup
8 ounces tomato paste
1 tablespoon salt
2 cups vinegar
2 cups oil
1 1/2 cups sugar
2 garlic cloves
2 large onions

Steps:

  • Chop the peppers, onion and garlic; set aside.
  • Mix all ingredients except peppers and bring to a boil.
  • Boil for 10 minute stirring occasionally.
  • Add peppers, bring to a boil again.
  • Put into hot jars and seal.
  • Enjoy!

For the feta cheese lovers among us!!!! You can use the pickled peppers of your choice, pepperoncici or sweet red cherry. Cook time is actually chill time. Since this is a dip, serving size is an estimate.

8 ounces feta cheese, crumbled
8 ounces cream cheese
1/2 cup mayonnaise
1/2 cup pickled pepper, sliced
1/2 cup scallion, sliced
1/2 teaspoon lemon zest, minced
fresh black pepper

Steps:

  • Blend feta, cream cheese and mayonnaise in a food processor until smooth, scraping the sides of processor a couple of times to make sure it all gets blended.
  • Put blend in bowl and fold in peppers, scallions, lemon zest and black pepper.
  • Transfer to the serving bowl and chill for at least 1 hour.
  • Just before serving, you can drizzle with olive oil, if desired.
  • This is good served with BBQ potato chips, toasted bread triangles -- whatever you like best!

  • In the bowl of your food processor, combine the feta, bell pepper, olive oil, lemon juice, cayenne pepper, and about 10 twists of freshly ground black pepper.
  • Process until the mixture is orange, fairly smooth, and you no longer see any big chunks of feta. Don’t overdo it; small bits of feta are good and over-processing this dip will make it gritty. Taste, and add additional cayenne pepper (up to 1/4 teaspoon more) if you want it to be extra spicy. Blend briefly to combine.
  • Transfer the mixture to a serving bowl. Smooth the top and create a few swooshes with a spoon. Lightly drizzle some olive oil on top, and sprinkle with red pepper flakes if desired. Serve immediately, or cover and refrigerate for later. This dip will keep well in the refrigerator for 7 to 10 days.
