1/3 cup unsweetened cocoa powder

1 cup sugar
1/2 cup vegetable oil
1 cup cold water or 1 cup chilled brewed coffee
2 teaspoons vanilla extract
2 tablespoons cider vinegar
2 ounces unsweetened chocolate
1/4 cup peanut butter
3 -4 tablespoons water
1 teaspoon vanilla
1 cup confectioners' sugar

Steps:

  • Preheat oven to 375.
  • Oil an 8" square or round pan and dust with sifted cocoa.
  • Sift flour, cocoa, soda, salt and sugar.
  • In another bowl mix oil, water and vanilla.
  • Pour liquid into dry and mix till smooth.
  • Add vinegar and stir briefly.
  • Without wasting time, pour batter into pan and bake 25-30 minutes.
  • For frosting: melt chocolate in heavy pan on medium heat.
  • Beat together peanut butter, water& vanilla.
  • Beat in sugar then add melted chocolate.
  • Beat till smooth.
  • Spread on cooled cake.

True Deep Chocolate Vegan Cake image

This is the famous Moosewood deep chocolate vegan cake. I'm not vegan anymore, but I started making this cake when I was. To date, it is the best chocolate cake I've ever eaten, much less made myself! There are a couple other deep chocolate vegan recipes on the zaar, but they use peanut butter topping instead of the raspberry-and-dark-chocolate one I originally used. The coffee brings out the delicious flavor of the chocolate, and topped with raspberry and MORE chocolate.. irresistible! The original recipe seems to have WAY too much raspberry jam listed, and I always end up sort of just slopping the raspberry sauce on, followed by some chocolate. At first it ended up sort of looking like a cowpie, with all that raspberry, but tasted so marvelous. I'm sure most of you will be handier at that part than I!

1 1/2 cups unbleached white flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt

2 cups raspberry jam
2 teaspoons water

Steps:

  • For the cake: Preheat oven to 375 degrees. Oil an 8-inch square or round baking pan and dust with a little sifted cocoa, or line the bottom with parchment paper.
  • In a medium bowl, sift together the flour, cocoa, baking soda, salt and sugar.
  • In another bowl, combine the oil, water or coffee, and vanilla.
  • Pour the liquid ingredients into the dry ingredients and mix until blended and smooth.
  • Add the vinegar and stir briefly. The baking soda will begin to react with the vinegar right away; this is normal and should happen.
  • Quickly pour the batter into the baking pan.
  • Bake for 25 to 30 minutes. Cake is done when a toothpick inserted in the center comes out dry. Transfer to a plate when cool and glaze.
  • For the glaze: In a double boiler or small, heavy saucepan over a medium flame, melt 1/3 cup raspberry jam with 1 1/2 cups chocolate chips and mix thoroughly.
  • In another small saucepan mix 2 cups jam with 2 teaspoons water and warm over a low flame until the spread liquefies.
  • Brush the water-fruit mixture over the top of cooled cake. Spread the chocolate mixture on top of that. Allow the glaze to cool before cutting the cake.

215ml sunflower oil , plus extra for the tin
300ml soy milk , almond or coconut milk
2 tsp apple cider vinegar
335g light muscovado sugar
1 tsp vanilla extract or vanilla bean paste
175g soy yogurt or coconut yogurt
300g self-raising flour
105g cocoa powder
1 tsp baking powder
1 tsp bicarbonate of soda
100g dark dairy-free chocolate
140g vegan spread , at room temperature
1 tsp vanilla bean paste or extract
265g icing sugar , sifted
½-1 tbsp plant milk (whatever you used in the sponge)
colourful sprinkles (make sure they're suitable for vegans), to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil a 23 x 33cm baking tin (at least 4cm deep) and line the bases and sides with baking parchment. Whisk the milk and vinegar together in a jug - the milk should curdle slightly. Set aside.
  • Whisk the sugar, oil and vanilla extract together in a bowl, then whisk in the yogurt, making sure to break down any sugar lumps. Pour in the soured milk and mix well.
  • Sift the flour, cocoa powder, baking powder, bicarbonate of soda and ¼ tsp salt into a separate bowl and stir well to combine. Gradually whisk the wet ingredients into the dry until you have a smooth batter, but be careful not to over-mix.
  • Pour the batter into the tin and bake for 30-35 mins, until well risen and springy, and a skewer inserted into the centre comes out almost clean. A few sticky crumbs are fine, but the mixture should not be wet.
  • Leave the cake to cool in its tin for 20 mins, then carefully turn out onto a wire rack to cool completely. It will be delicate so be gentle. The sponge will keep, covered, at room temperature for up to two days.
  • For the vegan buttercream, melt the chocolate in the microwave or a bowl set over a pan of simmering water. Leave to cool. Beat the spread and vanilla on high speed in a stand mixer for a few minutes until pale and fluffy. Add the icing sugar gradually, beating on slow to start with, then turning up the speed to max until the mixture is light and creamy. Pour in the cooled chocolate and combine thoroughly, add a splash of plant milk if the icing is very stiff. Chill the buttercream for at least 30 mins before using.
  • When the cake is completely cool, spread the icing over the top and decorate with the sprinkles, if you like. Keep the cake in the fridge to stay firm, then remove 1 hr before serving. Will keep, covered, in the fridge, for up to three days.

150g dairy-free spread, plus extra for the tins
300ml dairy-free milk, we used oat milk
1 tbsp cider vinegar
300g self-raising flour
200g golden caster sugar
4 tbsp cocoa powder
1 tsp bicarbonate of soda
½ tsp vanilla extract
100g dairy-free dark chocolate
200g dairy-free spread
400g icing sugar
5 tbsp cocoa powder
1 tbsp dairy-free milk, such as oat milk
handful of fresh, seasonal fruits such as cherries, blackberries or figs

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease the base and sides of 2 x 20cm sandwich tins with dairy-free spread, then line the bases with baking parchment.
  • Put the dairy-free milk in a jug and add the vinegar - it will split but don't worry. Put all of the other cake ingredients into a large bowl, pour over the milk mixture and beat well until smooth. Divide the mixture between the prepared tins and bake for 25-30 mins or until a skewer inserted into the middle of the cakes comes out cleanly. Leave to cool in the tins for 10mins then turn out onto wire racks to cool completely.
  • To make the buttercream, put the chocolate into a heatproof bowl and melt in the microwave, stirring every 30 seconds. Leave the melted chocolate to cool for 5 minutes. Beat the dairy-free spread and icing sugar together with a wooden spoon then sift in the cocoa powder with a pinch of salt. Pour in the melted chocolate and dairy-free milk and keep mixing until smooth.
  • Sandwich the two cooled sponges together with half of the buttercream then pile the rest on top and down the sides. Decorate with the fresh fruit.

2 cups flour
3/4 cup dutch process cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon fine-grain sea salt
2 cups plain unsweetened soy milk
1/2 cup canola oil
1 cup granulated sugar
1/2 cup pure maple syrup
2 teaspoons apple cider vinegar
2 teaspoons pure vanilla extract
1 cup 2 sticks vegan butter at room temperature (I highly recommend Melt brand; Earth Balance will also work but in my opinion doesn't taste as good)
3-4 tablespoons unsweetened soy milk
2/3 cup dutch process cocoa powder
1 teaspoon pure vanilla extract
4 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease two 8-inch round cake pans with oil or non-stick spray. Set aside.
  • Make the cake. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
  • Into the bowl of a stand mixer or in another large bowl (to mix with a hand mixer), add the soy milk, oil, sugar, maple syrup, vinegar, and vanilla. Mix on medium speed for two minutes.
  • Add half the dry ingredients and mix to blend. Add the remaining dry ingredients and mix at medium speed for 1 minute. The batter will be quite runny. Divide the batter between the two cake pans.
  • Bake until the top springs back when you poke it and a toothpick inserted into the center comes back clean, 25 - 30 minutes. Remove the cake pans from the oven and place on wire racks to start cooling. After 10 minutes, run a butter knife around the edges of the cakes to loosen them from the side, then invert onto a wire rack, removing the cake pan. Let cake rounds cool completely, 30-45 minutes. To expedite the cooling process, you can place the cakes in the freezer for about 10 minutes for the fridge for 20.
  • Meanwhile, make the frosting. In the clean stand mixer bowl affixed with a beater blade (or in a medium mixing bowl if you are using a hand mixer), add the vegan butter. If you're using the recommended brand (Melt) and it's room temperature, it should be very very soft. Add 3 tablespoons of the soy milk and beat until as incorporated as possible. Add the cocoa powder and mix until well combined and glossy. Mix in the vanilla extract. Add the powdered sugar 1 cup at a time, beating until incorporated after each addition. Once all the powdered sugar has been added, beat frosting at medium speed for about 1 minute until it has lightened up a bit and is a bit fluffier. If the frosting seems too soft to spread on the cake, add more powdered sugar, 1/2 cup at a time. If it's too stiff, add more soy milk, 1 teaspoon at a time, until the frosting is perfectly spreadable.
  • Once the layers are cool, place the first layer on your cake plate. Add about 1/3 of the frosting to the top of the first layer and with a butter knife or offset spatula, smooth to the edges. Top with the second layer. Smooth a thin layer of frosting around the sides of the cake, then add another, thicker layer (the thinner layer first will help hold the crumbs in). Add the remaining frosting to the top of the cake and smooth with the knife or spatula, adding swoops and swirls how you see fit (or smoothing it all out - however you want, it's your cake!)
  • Cut into slices, serve, and enjoy!
