NO-BAKE CHOW MEIN NOODLE COOKIES

Our No-Bake Chow Mein Cookies recipe has been a family favorite for years! It's a simple refrigerator drop cookie that only needs 4 ingredients: crunchy chow mein noodles, butterscotch chips, chocolate chips, and peanuts.

11-12 ounces butterscotch chips (about 2 cups)
11-12 ounces chocolate chips (about 2 cups)
12 ounces chow mein noodles (about 6 cups)
1 cup salted peanuts

Steps:

  • Line a baking sheet with wax paper or parchment paper.
  • Place both the butterscotch chips and the chocolate chips in a large microwave-safe bowl. Melt the chips together in the microwave, stirring chips every 30-45 seconds, until smooth.
  • Remove from microwave and begin folding in the chow mein noodles a little at a time until they are completely coated with the melted chip mixture. Fold in peanuts until they are completely coated.
  • Drop chow mein mixture by the spoonful onto prepared baking sheet. Place baking sheet in the refrigerator until Chow Mein Cookies have completely set.
  • Once Chow Mein Cookies have set, store covered at room temperature.

This simple no-bake cookies is great fun to make with the kids. They decide whether we will add raisins or not and then decorate with sprinkles.

12 oz semi-sweet chocolate chips, melted
12 oz butterscotch chips, melted
16 oz chow mein noodles
16 oz peanuts, dry roasted
1 c raisins, optional
colored sprinkles for decorating

Steps:

  • 1. Melt chocolate and butterscotch pieces over hot water. Mix in noodles and nuts. Stir into melted mixture. Drop by tablespoonful onto wax paper. Chill. Makes about 6-8 dozen cookies.

These cookies are great because you don't have to bake them. I use raisins in this recipe, but you could use cranberries or any type of dried fruit, or none at all if you prefer. You could also use melted chocolate to drizzle on top to finish off these cookies.

Drop the batter by heaping tablespoons onto waxed paper and refrigerate until set, about 20 minutes. Decorate cookies with sprinkles.

One 12-ounce bag semisweet chocolate chips, such as Ghirardelli
One 5-ounce can crispy chow mein noodles (about 2 1/2 cups)
3/4 cup salted and roasted almonds, coarsely chopped
1/2 cup finely chopped dried mango
1/8 teaspoon cayenne pepper, optional

Steps:

  • Line a baking sheet with parchment or wax paper.
  • Place the chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth, about 4 minutes.
  • Combine the noodles, almonds, mango, cayenne pepper if using and melted chocolate in a large bowl. Stir until all the ingredients are coated with chocolate. Scoop the mixture onto the prepared baking sheet using a 1/4-cup ice cream scoop and allow the cookies to harden at room temperature, about 2 hours. Store the cookies in an airtight container at room temperature.
  • Cook's Note: Use scissors to cut the dried mango into pieces.

Steps:

  • In a heavy saucepan, combine chocolate and butterscotch chips. Melt, stirring constantly over low heat.
  • Remove when melted and add chow mein noodles. Add cashews or peanuts. Mix quickly to coat Dip out tablespoons onto wax paper. Cool. (Can also melt chips in the microwave.)
