Chef John's Pavlova with Strawberries image

This dessert is fun to make and eat. Fresh fruit, especially berries and kiwis, balances the sweet, gooey crunch.

Categories     Desserts     Specialty Dessert Recipes     Pavlova Recipes

Time 2h15m

Yield 12

Number Of Ingredients 9

¾ cup sugar
2 teaspoons cornstarch
3 egg whites, at room temperature
1 teaspoon vanilla extract
¾ teaspoon white vinegar
2 cups heavy cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract
1 pint whole strawberries, stems removed

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk sugar and cornstarch in a bowl. Set aside.
  • Beat egg whites in a bowl until they are foamy and have a thick, ribbony texture, 2 to 3 minutes.
  • Pour 1/4 of the sugar mixture into the egg whites; whisk until completely incorporated, about 30 seconds. Repeat for the rest of the sugar mixture, whisking after each addition, until all of the sugar mixture is incorporated and the egg whites are glossy and thick.
  • Pour vanilla and vinegar into egg white mixture; whisk until you can lift your beater or whisk straight up and the egg whites form a sharp peak that holds its shape, 2 to 3 minutes.
  • Spoon egg white mixture onto prepared baking sheet; spread out into a 2-inch high by 6-inch wide disc.
  • Bake in the preheated oven for 1 hour.
  • Turn off the oven, crack open the oven door and let the Pavlova cool for one hour.
  • Whip cream, sugar, and vanilla extract in a bowl until soft peaks form, 3 to 4 minutes.
  • Transfer Pavlova to a serving plate. Top with whipped cream and fresh strawberries.

4 egg whites
250g caster sugar
1 tsp white wine vinegar
1 tsp cornflour
1 tsp vanilla extract
500g strawberries, hulled and halved
200g redcurrants, stalks removed
3 tbsp icing sugar

Steps:

  • Heat oven to 150C/130C fan/gas 2.
  • Using a pencil, mark out the circumference of a dinner plate on baking parchment.

KIWI-BERRY PAVLOVA

Kiwi-Berry Pavlova image

Fancy this: An elegant, easy recipe from Cher Lewis in New York City. For a crisp outcome, do your baking on a dry day -- humidity makes for a soft-textured meringue. If you like, trade other soft fruit for kiwi and raspberries.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 5h45m

Number Of Ingredients 9

1 cup sugar
1 tablespoon cornstarch
4 large egg whites, room temperature
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1 cup heavy cream
1/2 teaspoon pure vanilla extract
3 kiwis, peeled, halved lengthwise, and thinly sliced crosswise
2 cups fresh raspberries

Steps:

  • Preheat oven to 200, with rack in center. Line a large rimmed baking sheet with parchment paper; set aside. In a small bowl, whisk sugar and cornstarch until combined.
  • Make meringue: In a large mixing bowl, using an electric mixer on medium speed, beat egg whites, lemon juice, and salt until very frothy. Add 1 tablespoon sugar mixture every 30 seconds, until stiff, glossy peaks form, about 8 minutes total, scraping down sides of bowl halfway through.
  • Mound meringue onto prepared baking sheet; gently spread to a 9-inch circle, with a well in the center and a 1-inch raised border around the edge.
  • Bake until shell is crisp on the outside and marshmallowy on the inside, about 2 1/2 hours (reduce oven temperature to 175 if it starts to brown). Turn oven off; let meringue dry out in closed oven for another 2 1/2 hours, or up to overnight.
  • Just before serving, using an electric mixer, beat cream and vanilla in a medium bowl until soft peaks form. Fill shell with whipped cream, and top with fruit. To serve, use a serrated knife to cut into wedges.

KIWI STRAWBERRY AND BLUEBERRY PAVLOVA

Kiwi Strawberry and Blueberry Pavlova image

Make and share this Kiwi Strawberry and Blueberry Pavlova recipe from Food.com.

Provided by marycate

Categories     Dessert

Time P1DT30m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 egg whites
1 pinch salt
1 cup sugar
1 teaspoon cornstarch
1 teaspoon white wine vinegar (I've used regular vinegar and it works fine)
2 cups whipping cream
2 tablespoons sugar
3 -4 kiwi fruits
1 -2 cup strawberry (I use the frozen ones, much easier)
1/2 cup blueberries (also frozen)

Steps:

  • Best to make the meringue the night before.
  • Preheat oven to 275F (135C). Line a baking sheet with parchment paper. Draw a 9 inch circle on paper. To make meringue, beat egg whites with salt until stiff peaks form. Gradually beat in superfine sugar, then continue to beat 5 minutes. Fold in cornstarch and vinegar. Using a metal spatula, spread meringue mixture evenly over circle on prepared baking sheet.
  • Bake in oven 10 minutes. Lower heat to 225F (105C) and cook 45 minutes more. Turn off heat and leave meringue in oven to cool slowly 1 hour at least. I usually leave it in all night. Remove from oven and carefully transfer to a plate.
  • Make sure your fruit is thawed at this point.
  • To make filling, whip cream with sugar until thick. You can cut up 1 kiwi into the whipped cream if you like. I normally do, but make sure your kiwis are sweet before you do, otherwise you can ruin the whipped cream.
  • Carefully spoon cream mixture over meringue, smoothing with a metal spatula. Decorate top with fruit. I slice the kiwis and line them all around the edge. Then I put the strawberries inside the kiwi line and in the very center I put the blueberries. Serve immediately cut in wedges.

PAVLOVA

Categories     dessert

Yield 8 to 10 servings

Number Of Ingredients 11

1/2 cup egg whites, at room temperature (from about 4 eggs)
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1 cup granulated sugar
1 1/2 teaspoons cornstarch
1 tablespoon raspberry vinegar or red wine vinegar
1/2 teaspoon pure vanilla extract
1 1/4 cups heavy cream
2 tablespoons light brown sugar, packed
2 kiwi fruits, peeled and thinly sliced or 1 cup of another ripe fruit, such as peaches or nectarines
10 strawberries, green parts trimmed off, thinly sliced or other berries, such as raspberries or blackberries

Steps:

  • Preheat oven to 350 degrees.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites, cream of tartar and salt in a clean, dry bowl until foamy. Add the granulated sugar, cornstarch, vinegar, and vanilla and continue whipping until stiff, smooth and glossy, about 8 minutes more. On a sheet of parchment paper cut to fit a sheet pan, use a pencil to draw or trace a circle 9-inches in diameter. Line the sheet pan with the parchment, pencil side down (you should still be able to see the circle). Spoon the egg whites into the circle, using the back of the spoon to smooth the top and sides of the disk. Bake in the center of the oven for 10 minutes, then reduce the heat to 300 degrees and bake until the meringue has puffed up and cracked on the top and the surface is lightly browned to the color of cafe au lait, about 45 minutes more. Turn off the oven, prop the oven door open, and let the pavlova cool in the oven at least 30 minutes, to room temperature. This ensures a gradual cooling, which protects the delicate meringue.
  • Whip the cream and brown sugar together until stiff. Spoon it in the center of the cooled pavlova and spread out to within 1/2-inch of the edge. Arrange the slices of kiwi around the edge. Arrange the slices of strawberry in the middle. To serve, slice into wedges with a serrated knife.

  • Put egg whites and salt in a large, very clean bowl. Beat with a handheld or stand mixer on high speed (preferably with whisk attachment) until foamy. Gradually add 1 cup sugar, a few tablespoons at a time, beating well after each addition, until stiff, shiny peaks form (4 to 5 minutes). Beat in vinegar and vanilla just until blended.
  • Mound meringue onto traced circle on baking sheet, spreading to fill and mounding edges slightly higher than center.
  • Bake until meringue is firm and pale golden brown, about 1 1/2 hours. Crack oven door and let pavlova cool completely, about 2 hours more. Carefully remove from baking sheet and transfer to a platter (it's normal for crust to crack a little).

  • Preheat the oven to 250 F (121 C). Cover a baking sheet with parchment, and trace twelve 2 1/2" circles on the parchment, using a cookie cutter or the bottom of a glass as a pattern. (The pavlovas will spread a bit as they bake, so leave a few inches between them. If you don't have a cookie sheet large enough, use two sheets rather than crowd the pavlovas.)
  • Place the room temperature egg whites in the very clean and dry bowl of a stand mixer fitted with a whisk attachment. Any trace of fat might cause the whites to not whip properly, so make sure the bowl and whisk are clean, and that there are no traces of yolks in the whites. Whip the whites until they are foamy, then add the cream of tartar. Continue to whip on medium-high speed until they hold stiff peaks. Don’t over-whip and let the white get crumbly and dry.
  • Once at stiff peaks, turn the mixer to medium speed and add the sugar, a tablespoon at a time, over the course of 2-3 minutes. You want to incorporate the sugar gradually so it all dissolves easily. After all the sugar is added, scrape the bottom and sides of the bowl with a rubber spatula, then beat the egg whites on high speed for 5-6 minutes, until the whites are very glossy and stiff, and the sugar is completely dissolved. If you rub the meringue between your fingers or taste it, you shouldn’t feel any of the sugar crystals.
  • When the whites are done, add the salt and vanilla paste or vanilla extract, and gently fold them in, stopping as soon as everything is mixed. Scrape the meringue into a piping bag fitted with a large open star tip. Using your traced circles as a guide, first pipe a flat circle, then pipe around the edges several times to create a nest shape. If you don't have a piping bag, you can just pile the meringue onto the circles with a spoon, and swirl the bowl of the spoon around the center of the meringue to create an indentation.
