KIWI LIME PIE

Steps:
- Preheat the oven to 350 degrees F.
- For the crust: Put the graham crackers and most of the macadamia nuts in the bowl of a food processor and process until smooth. Add the butter and sugar and process again to combine. Press into a pie pan and bake until golden and set, about 5 minutes. Set aside to cool slightly while you make the filling.
- For the filling: In the bowl of a stand mixer, add the lime zest and juice and egg yolks and mix until combined. Add the condensed milk and mix on high until smooth and thick. Pour the mixture into the crust and bake until no longer jiggly, about 15 minutes. Allow to cool, then refrigerate for at least 1 hour, more if possible.
- For the topping: Pour the cold heavy cream into a clean mixer bowl. Add the sugar and beat on high speed until the whipped cream is very stiff.
- Slice the kiwis and cover the surface of the cooled pie with the slices. Spread the whipped cream on top. Slice the remaining kiwi slices in half and decorate the top of the pie with them. Chop the remaining macadamia nuts, sprinkle on top and serve.
KIWI LIME GELATIN
Our Test Kitchen broke the mold when they came up with this bright green gem of a salad featuring kiwifruit, oranges and lime. As the recipe specifies, be sure to cook the kiwi before it's added to the gelatin-otherwise, it won't set.

- In a saucepan, bring kiwi and wine or soda to a boil. Cook over medium heat for 5 minutes, stirring occasionally. Add gelatin; stir until dissolved. Stir in chilled soda and orange juice. Refrigerate until partially set. , Fold in oranges. Pour into a 6-cup mold coated with cooking spray. Refrigerate 8 hours or overnight until firm.

- Juice, in this order, the kiwis, watermelon and limes, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. Serve the juice immediately over ice, if desired.
EASY JELLO SALAD
Can't get much easier than this and it is always the first to go. I was making this for years, before I realized I was supposed to put sour cream in it -- so leave it out if you want sweeter! Lime jello and kiwi or well drained pineapple or strawberry jello with fresh strawberries are good too!

Steps:
- In a bowl, add boiling water and jello powder, stir until completely dissolved.
- Add ice cubes, stir until jello thickens (3 to 5 minutes).
- Remove any icecubes that have not dissolved.
- Remove 1/2 cup jello and set aside, to chill for 30 minutes.
- Chill remaining jello separately until slightly thickened, about 30 minutes.
- Fold kiwifruit slices into remaining jello.
- In a small bowl, add the 1/2 cup reserved jello and 1/4 cup yogurt.
- Beat reserved jello and yogurt, at high speed, until doubled in volume.
- Pour jello/yogurt mixture over kiwifruit/jello mixture.
- Chill until set.
- Top each serving with a blurb of yogurt, with a slice of kiwifruit arranged on it.
- This dessert looks special set in stemed clear glasses.
- Can also be made with orange jello and orange slices.

NO BAKE KIWI-LIME GLAZED CHEESECAKE
I created this delicious tasting dessert from another recipe I had been making for at least 20 years. Instead of using a extra serving size Graham Pie Crust, I decided to make my own & use a springform pan instead. Steps:
- 1. To make the crust add the 9 graham crackers to a food processor and pulverize until they become crumbs. Remove from processor and add to a medium size bowl, then add in the sugar, nutmeg & melted butter.
- 2. Then pour into a 9 inch spring form pan. Spread evenly over the bottom of the pan, then press down with the bottom of a measuring cup until even in bottom.
- 3. Place in preheated 350 F degree oven, and bake for 8 minutes then remove from oven and allow to cool.
- 4. These are the main ingredients to make the cheesecake.
- 5. Now add the cream cheese & one box of jello to a large bowl.
- 6. Beat till blended together.
- 7. Next add in the lime or lemon juice, condensed milk, and extract, & beat to blend then add in optional green food color if desired.
- 8. Pour into prepared spring form pan. Garnish top with fresh kiwi slices if desired and a maraschino cherry half.
- 9. In a medium sauce pan add the other box of jello, flour and sugar, and stir to blend.
- 10. Then pour in water and lemon juice. Place over medium high heat, and bring to boil. until mixture begins to coat the spoon. Remove from heat and set aside to cool.
- 11. Now pour cooled glaze carefully over top of cheesecake, and place in fridge to cool completely at least 3 -4 hours till set and cheesecake is firm.
- 12. To serve run a knife around the outer edge of the cheesecake then loosen and remove the sides of pan.
- 13. Cut serve and enjoy. The kiwi enhances the flavors of the cheesecake. Tasty and delicious.
