KITTENCAL'S FAMOUS GREEK SALAD
Be prepared for the best Greek salad on the planet! --- plan ahead the dressing needs at least 2 or more hours to blend the flavors, I sometimes add in 1/4 cup Parmesan cheese to the dressing for a more cheesy dressing, all amounts may be adjusted to taste ---- to marinade the salad allow to sit at room temperature before serving, see bottom of instructions --- you will find this and many more of my recipes posted here http://kittencalskitchen.com/2009/04/13/kittens-famous-greek-salad/ ---also see my recipe #359292

Steps:
- For the dressing; in a processor or use a wire whisk process/whisk the olive oil with lemon juice, 2 teaspoons dried oregano, garlic, dried, basil, red wine vinegar, salt and sugar until smooth (add in more oregano and lemon juice if needed).
- Season with black pepper.
- Chill in fridge for a couple of hours before using to blend flavors.
- Place the salad ingredients in a large bowl.
- Pour dressing over; toss to combine.
- If desired allow the salad to sit at room temperature for 20 minutes before serving, or you can refrigerate for 1 hour (tossing a few time during sitting time).
KITTENCAL'S TZATZIKI (GREEK CUCUMBER AND YOGURT SALAD)
This is worth making it is so delicious! Greek yogurt is richer and thicker then regular yogurt and is the best used for this recipe, if you cannot find Greek yogurt just use 4 cups regular full-fat plain yogurt and drain it in the fridge through a triple thickness of cheesecloth for 8 hours or overnight, if you are using Greek yogurt you will not have to strain it, once you try Greek yogurt you will never go back to regular yogurt again! Plan ahead this needs to chill for a minimum of 2 hours, you won't be able to keep your spoon out of the bowl LOL! Make certain to drain the cucumber very well for this. Serve this anyway or with anything you want to, it is great on pita. Prep time is only if you are using the Greek yogurt if you are straining the yogurt prep time will be more.

Steps:
- Put the finely chopped cucumbers in a sieve and press out as much excess liquid as possible.
- In a large bowl mix the minced garlic with the salt into a paste.
- Add in the Greek yogurt (or strained yogurt) with garlic/salt paste, add to the drained cucumbers, mint, olive oil, more salt and pepper to taste.
- Cover and chill for a minimum of 2 hours before serving (you won't be able to keep you spoon out of the bowl lol!).

TZATZIKI SAUCE-- GREEK CUCUMBER/YOGURT SAUCE
This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. - Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
- In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
- This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
- ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
- You can skip this draining process, if you want, but you will have a moderately messier, runnier result.
GREEK TZATZIKI
The well-known yogurt/cucumber/garlic Greek appetizer! Make sure you use some kind of soft, smooth tasting yogurt, like drained "Total" yogurt. You can adjust the quantity of the garlic according to taste. Enjoy!

- Place the yogurt in a bowl.
- Squeeze cucumber with your hands so that it can be drained from its juice and add to the bowl with the yogurt.
- Smash garlic cloves in a press and add to bowl.
- Add olive oil, salt and pepper and stir everything really well.
- Decorate your tzatziki with sliced cucumber or olives on top. Enjoy!
