CREAMY 'RANCH' DRESSING
Lisa Feldman, the director of culinary services at the schools division of the food services company Sodexo, understands that where there is ranch dressing, there are kids who will eat vegetables. Lisa is working to devise menus for schools that meet or exceed the Department of Agriculture's Healthier US Schools Challenge requirements. With a deep understanding of the ingredients that school lunch programs have to work with, she developed a white bean and yogurt salad dressing base. The mixture will make a dressing that has much more nutritional value, considerably less sodium, and none of the additives in the long ingredient list on a bottle of commercial ranch dressing. Lisa credits the chef and cookbook author Joyce Goldstein for the idea. This is an adaptation of the ranch that Lisa developed for schools. It can be used as a dip, but also as a salad dressing for crisp salads. Adding the ice cube to the food processor helps to break down the fiber in the bean skins so that the dressing is less grainy.

Steps:
- Process garlic in a food processor fitted with a steel blade until the minced garlic is adhering to sides. Stop processor and scrape down. Add beans, yogurt and ice cube and process until smooth. With the machine running, add lemon juice, salt, and olive oil and process until smooth. Taste and adjust seasoning.
- Scrape into a bowl and stir in chives, tarragon and dill. Serve as a dip or use with crisp salads (it's a bit too thick for delicate lettuces like spring mixes).

KITTENCAL'S FOIL-WRAPPED GRILLED CORN
You may adjust all amounts to suit taste, I like to use seasoned salt for this but white salt will do fine -- to kick this up a notch, in a small saucepan or microwave melt 1/2 cup butter, mix in 1 tablespoon mustard, 1 teaspoon Worcestershire sauce, 1/4 teaspoon lemon pepper and 2-3 teaspoons horseradish, brush on the corn then wrap in foil and grill as stated :)

Steps:
- Place each corn on top of one piece the heavy-duty foil.
- Brush each ear generously with soft butter.
- Season lightly with seasoned salt or white salt and black pepper.
- Wrap the corn then seal the foil loosely but leave room for expansion, then cut a very small hole in the foil to allow steam to escape.
- Grill over medium coals for about 15-20 minutes (the larger ears may take a little longer).
- Unwrap very carefully and serve.
- Delicious!

KITTENCAL'S CREAMY RANCH DRESSING/DIP
A creamy dressing with the perfect blend of spices, adjust the amount of dill to suit taste I advise not to use more than 2 teaspoon fresh garlic or it will overpower the dressing, all other amounts may be adjusted to suit taste --- don't even think about serving this dressing until after it's chilled for at least 4 or more hours and the longer the better --- for a lower fat option use low-fat mayonnaise, sour cream and buttermilk --- for Ranch Peppercorn dressing add in 1 tablespoon cracked black pepper or to taste, and for Parmesan ranch dressing add in 1/4 cup grated Parmesan cheese or to taste --- this makes a fantastic veggie dip!

- In a medium bowl whisk together mayonnaise, sour cream, buttermilk, Worcestershire sauce, dill weed, parsley, garlic, Dijon mustard, black pepper, salt and minced green onion; whisk until well blended.
- Adjust the amount of salt and pepper if needed and add in some Tabasco sauce if desired.
- Cover and refrigerate for a minimum of 4 hours before using or overnight, the longer the better.
KITTENCAL'S CREAMY ITALIAN SALAD DRESSING
This dressing must chill for 6 or more hours before serving don't even think about serving it right away as the flavors intensify with chilling time, even better if made a day ahead, I have left the Parmesan as optional you may add in or omit, you may adjust all amounts to taste.

- Mash the egg yolks to a fine powder (or as close to a fine powder as you can, save the whites to add in the pasta salad).
- In a bowl, whisk together the dry dressing mix with mayo, salad dressing and milk until very smooth.
- Mix in the sweet relish, mustard, garlic powder and seasoned salt.
- Adjust the relish and mustard adding in more to to taste if desired.
- Add in the mashed egg yolk and whisk vigorously to combine (there might still be small pieces of yolk, not too worry!).
- Season with black pepper to taste.
- Pour over cooked pasta or cubed potatoes and chill for a couple of hours.

KITTENCAL'S CREAMY MACARONI AND CHEESE
This is very similar to Stouffer's macaroni and cheese, 4 cups will give you a creamy texture you may increase the pasta to 5 cups for a thicker texture --- you could omit the oven baking and just serve this right away and you may also sprinkle about 3/4 cup dry breadcrumbs on top before baking, this is a very creamy mac and cheese if you prefer a less creamier texture then increase the macaroni... you will love this!

Steps:
- Preheat oven to 350 degrees F.
- Grease a medium casserole dish.
- Cook the pasta in a pot of boiling salted water until al dente (do not overcook the pasta) drain but do not rinse.
- Place in a bowl and mix with 2 tablespoons butter to prevent sticking; set aside.
- Melt 4 tablespoons (1/4 cup) butter in a large saucepan over medium heat.
- Add in minced garlic, onion powder, mustard powder and cayenne pepper; stir with a wooden spoon for about 3-4 minutes.
- Add in flour and stir for 1 minute.
- Slowly add cream and cook stirring constantly over medium until bubbly and thickened.
- Reduce heat and add in both cheeses; mix until melted and smooth.
- Season with salt and black pepper to taste.
- Add in the cooked pasta and toss to combine.
- Transfer to baking dish.
- Sprinkle with Parmesan cheese.
- Bake 350 degrees F for about 20-25 minutes.
