1 (5 ounce) package of yellow rice mix (prepared, or 2 cups leftover rice)
1 can (10.5 ounces) cream of onion soup
1 can (15.25 ounces) creamed corn
1 can (15.25 ounces) fire roasted corn (drained)
8 ounces cheddar cheese (shredded)

Steps:

  • Cook the rice according to package directions or use leftover yellow rice.
  • Place the rice in a large bowl and add the creamed corn, corn kernels, cream of onion soup, and shredded cheese.
  • Mix to combine.
  • Pour into an 8x8 baking dish.
  • Bake at 350F for 30 minutes or until bubbly and golden brown.
  • Remove from the oven and serve warm.

2 (15.25-ounce) cans Libby's® Whole Kernel Sweet Corn, drained
1 (10-ounce) packet yellow rice mix
1 (8-ounce) container sour cream
1 (10.5-ounce) can cream of celery soup, undiluted
1 (4-ounce) jar diced pimientos, drained
4 green onions, thinly sliced
1 (8-ounce) bag shredded sharp cheddar cheese
Salt & pepper*

Steps:

  • Cook the rice mix according to the package instructions.
  • Preheat the oven to 350°F and lightly spray a 2-quart baking dish with nonstick cooking spray.
  • In a large bowl, mix the cooked rice, drained Libby's® Whole Kernel Sweet Corn, sour cream, cream of celery soup, pimientos, green onion, and about half of the cheese together. Add salt and pepper to taste.*
  • Pour the mixture into the prepared dish. Top with the remaining cheese.
  • Bake for 25 to 30 minutes until the cheese starts to brown and bubble around the edges.

Steps:

  • Heat oven to 375°F.
  • Mix cream cheese spread and egg in large bowl until blended. Stir in rice, corn, 3/4 cup shredded cheese and cilantro.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with remaining shredded cheese.

They're a complete vegetarian meal and only take minutes to prepare, start to finish. The best part? You can use a fork and knife or even eat them with your hands to dip into guacamole, ketchup, sour cream, mustard or salsa, for extra zip.

1 cup cooked brown rice
1/2 cup whole-wheat or seasoned breadcrumbs
1/2 cup shredded Cheddar
3/4 cup corn kernels, canned or frozen and defrosted
2 tablespoons chopped cilantro
1/2 teaspoon kosher salt
2 large eggs
2 tablespoons vegetable, canola or olive oil
Guacamole, ketchup, mustard, salsa or sour cream, for serving (optional)

Steps:

  • Mix together the rice, breadcrumbs, cheese, corn, cilantro and salt in a medium bowl.
  • Whisk the eggs in a small bowl, then add to the rice mixture and mix to combine well.
  • Measure 1/4 cup of the rice mixture at a time and shape each into a patty.
  • Heat a thin layer of the oil in a large skillet over medium heat. Add the patties in a single layer and cook until golden brown, about 2 minutes on each side. Serve with guacamole, ketchup, mustard, salsa or sour cream if desired.

1 (8 ounce) container sour cream

1 (8.5 ounce) package dry corn bread mix
1 small onion, diced
1 cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large bowl combine whole corn, cream-style corn, sour cream, egg, dry corn bread mix, onion and 3/4 cup of Cheddar cheese. Mix well and pour into prepared dish.
  • Bake in preheated oven for 25 minutes.
  • Remove from oven and sprinkle with remaining cheese. Bake for another 20 minutes.

1 medium onion, chopped (1/2-cup)
1 1/2 teaspoons garlic powder
Salt and black pepper, to taste
1 (8-ounce) can tomato sauce (I use Hunt's)
1/2 cup chicken broth (I dissolved 1/2 teaspoon chicken bouillon granules in 1/2 cup boiling water)
1 1/2 cups cooked rice
1 cup cooked whole kernel corn
1 (8-ounce) package shredded cheddar cheese (2-cups), divided

Steps:

  • Lightly spray an 8x8-inch casserole dish with cooking spray. Set aside. Partially brown ground beef seasoned with half the garlic powder, salt, and pepper in a large skillet over medium-high heat. When meat starts to brown, stir in the onions and continue to cook until onions are tender, stirring constantly. Remove from heat and drain off any excess fat. Preheat oven to 350°F. Set the skillet back on the warm burner (no need to turn it on) and stir in the tomato sauce until incorporated, then stir in the broth. Stir in the rice, corn, additional seasonings to taste, and 1 cup of the shredded cheese. Pour mixture into the prepared casserole dish. Bake for 20 minutes. Remove from oven and top with the remaining cup of cheese. Return to oven and bake for another 15 minutes, or until hot and cheese is melted. Serve immediately.

½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon chili powder
¾ cup shredded reduced-fat Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3 1/2 quart casserole dish.
  • In a saucepan, bring water to a boil. Stir in rice, reduce heat, and cover. Simmer for 20 minutes.
  • In a wok or large skillet, heat the broth and saute the garlic, bell pepper and onion until tender, about 5 minutes.
