Cheesy Corn and Rice Casserole combines tender yellow rice, corn, and lots of cheese. With just 5 ingredients, this delicious side dish comes together quickly and is a hit with everyone!

Steps:
- Cook the rice according to package directions or use leftover yellow rice.
- Place the rice in a large bowl and add the creamed corn, corn kernels, cream of onion soup, and shredded cheese.
- Mix to combine.
- Pour into an 8x8 baking dish.
- Bake at 350F for 30 minutes or until bubbly and golden brown.
- Remove from the oven and serve warm.
- Enjoy!

ULTIMATE CHEESY CORN AND RICE CASSEROLE
Steps:
- Cook the rice mix according to the package instructions.
- Preheat the oven to 350°F and lightly spray a 2-quart baking dish with nonstick cooking spray.
- In a large bowl, mix the cooked rice, drained Libby's® Whole Kernel Sweet Corn, sour cream, cream of celery soup, pimientos, green onion, and about half of the cheese together. Add salt and pepper to taste.*
- Pour the mixture into the prepared dish. Top with the remaining cheese.
- Bake for 25 to 30 minutes until the cheese starts to brown and bubble around the edges.

They're a complete vegetarian meal and only take minutes to prepare, start to finish. The best part? You can use a fork and knife or even eat them with your hands to dip into guacamole, ketchup, sour cream, mustard or salsa, for extra zip.

- Mix together the rice, breadcrumbs, cheese, corn, cilantro and salt in a medium bowl.
- Whisk the eggs in a small bowl, then add to the rice mixture and mix to combine well.
- Measure 1/4 cup of the rice mixture at a time and shape each into a patty.
- Heat a thin layer of the oil in a large skillet over medium heat. Add the patties in a single layer and cook until golden brown, about 2 minutes on each side. Serve with guacamole, ketchup, mustard, salsa or sour cream if desired.

- Lightly spray an 8x8-inch casserole dish with cooking spray. Set aside. Partially brown ground beef seasoned with half the garlic powder, salt, and pepper in a large skillet over medium-high heat. When meat starts to brown, stir in the onions and continue to cook until onions are tender, stirring constantly. Remove from heat and drain off any excess fat. Preheat oven to 350°F. Set the skillet back on the warm burner (no need to turn it on) and stir in the tomato sauce until incorporated, then stir in the broth. Stir in the rice, corn, additional seasonings to taste, and 1 cup of the shredded cheese. Pour mixture into the prepared casserole dish. Bake for 20 minutes. Remove from oven and top with the remaining cup of cheese. Return to oven and bake for another 15 minutes, or until hot and cheese is melted. Serve immediately.
