Healthy 5-Ingredient Flourless Banana Bread image

Just 5 ingredients to make this healthy loaf of banana bread that's moist, oaty and naturally sweetened with maple syrup.

3 medium ripe bananas
2 large eggs
1/4 cup pure maple syrup (or honey)
1 teaspoon baking soda
2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350°F. Lightly grease 9×5-inch loaf pan with non-stick cooking spray and set aside.
  • Add all ingredients to a blender, in the order listed, and blend until smooth and well combined. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let loaf cool completely in loaf pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.

This easy banana oat bread is just 4 ingredients and everything can be mixed in the blender! The bread comes out very moist with a slightly chewy texture from the oats.

3 medium (approx 360 grams) overripe bananas (peels removed)
2 large eggs
2 cups rolled oats
1 tsp baking soda
3 tbsp maple syrup (for sweeter bread)
1/2 cup chocolate chips (for sweeter bread and texture)
1/3 cup chopped walnuts (for texture)

Steps:

  • Preheat oven to 350°F. Line an 8 x 4 inch loaf pan with parchment paper.
  • Add bananas, eggs, oats and baking soda into a blender (in that order). If using maple syrup, also add it in at this time. Blend on high speed until you have a smooth batter. It is okay if you can still see the oats, but they should be ground up enough to look like coarse flour. If adding mix-ins like chocolate chips or chopped nuts, stir them into the batter.
  • Pour batter into prepared pan. Bake for about 35-45 minutes or until toothpick inserted comes out mostly clean and when you gently press on the surface of the bread, it bounces back. Let bread cool in pan before slicing. Bread can be eaten as is or toasted. Uneaten bread should be stored in an airtight container in the fridge or freezer.

1/3 cup honey or maple syrup
1/4 cup milk or Greek yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2-3 medium bananas)
1 3/4 cups white whole wheat flour or regular whole wheat flour (or plain all purpose flour )
½ teaspoon ground cinnamon (optional)
1 teaspoon baking soda
½ teaspoon salt
1/2 cup dark chocolate chips (or chopped walnuts, raisins, optional)

Steps:

  • Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
  • In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
  • Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
