Kimchi Tofu Soup with Beef Recipe image

Here's my adaption of the Kimchi Soondubu Jjigae, Korean Kimchi Tofu Soup. Serve this with rice or add rice cake into the soup to make it into a meal.

2 pkg silken tofu
200g sliced beef (I use the one for shabu shabu)
1 cup kimchi, chopped into smaller pieces
1.5 tsp red chili pepper flakes or gochugaru (more if you want it spicier)
3 tsp minced garlic
2 tsp sesame oil
2.5 cups unsalted chicken broth (can also use anchovy broth, dashi or water)
1 scallion, finely sliced (for garnish, optional)
kosher salt and black pepper, to taste

Steps:

  • In a pot over medium heat, add beef, kimchi, garlic, red chili pepper flakes and sesame oil. Stir-fry until beef is almost cooked and kimchi has softened, about 3-5 minutes.
  • Add the broth and bring it to boil. Let the soup boil for about 5 minutes while skimming off the scum.
  • Add in the silken tofu in big chunks. I just cut the tube-shaped package in half and squeeze the tofu into the pot. Let it cook for another 3-4 minutes or until tofu is warmed through. Add kosher salt and black pepper to taste.
  • Just before serving, sprinkle the chopped scallion on top of the soup (if using).

2 thin slices deli roast beef, cut into bite-size pieces
2 teaspoons soy sauce
1 teaspoon toasted sesame oil
1/4 teaspoon sugar
1/3 cup kimchi plus 1 teaspoon juice
Heaping 1/2 teaspoon beef base (see Cook's Note)
Half a package fresh udon (about 3 1/2 ounces, or 100 grams), loosened to separate into individual noodles
1/4 cup fresh bean sprouts
1 scallion, greens only, thinly sliced
1/4 teaspoon toasted sesame seeds

Steps:

  • Put the beef, soy sauce, sesame oil and sugar in the bottom of a lidded 16-ounce heat-safe container, and mix. Add in layers, in this order from the bottom up, kimchi and juice, beef base, noodles, bean sprouts, scallions and sesame seeds. Secure the lid, and refrigerate until using, up to overnight.
  • When ready to eat, add boiling water to cover (about 1 cup). Stir gently to loosen the layers, cover and let sit until heated through, 3 to 4 minutes. Before eating, stir again to combine the ingredients.

I ordered a similar soup at one of my favorite Japanese restaurants and wanted to recreate this soup since it was very healthy and warming. I must say this is very close if not better than what I had at the restaurant! You can also add some seafood to this soup. 1 tablespoon sesame oil
10 ounces cabbage kimchi
2 cups water or 2 cups vegetable stock
8 ounces tofu, sliced (I used organic sprouted tofu.)
1 cup bean sprouts
6 shiitake mushrooms, stems removed
2 scallions, cut in 2-inch slices
1/2 teaspoon salt

Steps:

  • Heat sesame oil in a pan and sauté kimch for a few minutes.
  • Add 2 cups of water or vegetable stock, tofu, bean sprouts, and mushrooms.
  • Cover and bring to boil. Reduce heat and cook until vegetables are soft.
  • Add scallions and cook a few more minutes.
  • Adjust the taste with some salt (about 1/2 tsp).
  • Transfer the soup to bowls, infuse love and serve!

1 tablespoon vegetable oil
1 tablespoon finely chopped garlic
1 medium onion, sliced
½ teaspoon salt
14 ounces chopped kimchi
1 (8 ounce) can sliced bamboo shoots, drained
8 baby corn, drained and chopped
hot water as needed
1 (.75 ounce) packet dashi granules
2 tablespoons Chinese red vinegar
1 tablespoon nanami togarashi (Japanese ground assorted chile peppers)
salt to taste
7 ounces enoki mushrooms, base removed
1 (14 ounce) package firm tofu, diced
1 tablespoon sesame oil

Steps:

  • Heat oil in a large skillet over high heat. Add garlic and stir-fry until fragrant, 2 to 3 minutes. Stir in onion and salt and cook until soft and translucent, 3 to 4 minutes. Add kimchi and stir-fry until fragrant, 2 to 3 minutes. Add bamboo shoots and baby corn, stir well.
  • Add just enough hot water to the skillet to cover the ingredients 1/2 way up. Cook until heated through, 1 to 2 minutes. Stir in dashi granules, vinegar, chile pepper, and salt. Add enoki mushrooms and tofu. Gently stir and cook until heated through, 1 to 2 minutes. Drizzle with sesame oil just before serving.

  • Add silken tofu carefully and break down tofu a little, not too much. Bring it to hard boil and let them boiling for 2 to 3 minute so all the flavor will be combine together.
