EASY PEANUT CLUSTERS
This candy is a must for gifts, parties, or special occasions, especially if your time is limited. NOTE: The butterscotch chips will NOT melt. When they are soft, they look shiney. Do not overcook, as the chocolate will burn. You may use more peanuts if desired. I usually throw in more to make sure the last pieces have some nuts in them.

Steps:
- Microwave chocolate and butterscotch chips in a 2 quart glass dish for 5-6 minutes on 60% power, or until melted.
- Watch carefully!
- (They don't actually melt, but look very shiny).
- Add peanuts and mix well.
- Drop by tablespoons on waxed paper.
- Cool in refrigerator.
- Store in covered container in refrigerator.
- I have used different chocolate chips other than Toll House, and they do not work well.
PEANUT BUTTER-CHOCOLATE CLUSTERS

Steps:
- Line a baking sheet with parchment paper. Combine the chocolate chips, peanut butter chips and shortening in a large heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Stir until melted and smooth, 2 to 4 minutes. Remove the bowl from the pan and add the cereal and peanuts. Stir with a rubber spatula until evenly coated.
- Spoon the cereal mixture into clusters (about 2 tablespoons each) onto the prepared baking sheet; sprinkle with nonpareils. Refrigerate until firm, about 30 minutes.
PRALINE OAT CLUSTERS
Make these quick and easy crunchy treats when you need a pick-me-up. Enjoy them with a cuppa, or scatter over yogurt or ice cream

Steps:
- Heat the oven to 180C/160C fan/gas 4 and line a baking tray with baking parchment. Tip the oats, hazelnuts and almonds onto a second large baking tray and roast for 12-15 mins, stirring occasionally until toasted and fragrant. Transfer to a large bowl and set aside.
- Tip the butter, sugar, syrup and ½ tsp sea salt flakes into a small pan. Melt over a low heat. Bring to the boil and bubble for 2-3 mins, stirring occasionally until pale golden. Remove from the heat and immediately pour this over the dry ingredients, adding the bicarb as you do. Mix well with a rubber spatula, making sure everything is evenly coated, and tip the mixture onto the prepared tray. Roughly spread over the tray so you have large chunks of the mixture, and cool completely (it will firm up as it cools).
- Break into smaller clusters and enjoy as is or scatter over yogurt or ice cream.

A glorious, giveable holiday treat with a minimum of effort and a maximum of impact. Requires 30 minutes of standing time, which is not included in the preparation time.

Steps:
- Microwave chocolate in 8-inch glass baking dish uncovered on high power about 1 minute; stir. Microwave, stirring after 30 seconds, until melted, about 1 minute. Add pecans and stir to coat.
- Line baking sheet with waxed paper. Using soup spoons, drop pecans in 24 mounts on waxed paper. Let stand until hardened, refrigerating if necessary. Store in airtight container in refrigerator up to 3 weeks.

Steps:
- Cover a cookie sheet with parchment paper and set aside.
- In a medium saucepan melt butter over medium heat.
- Add brown sugar, whipping cream, corn syrup, and salt.
- Bring to a boil, stirring constantly.
- Remove from heat and add in powdered sugar and vanilla.
- Beat with a hand mixer on low speed until smooth.
- Stir in peanuts. Let stand for a few minutes stirring occasionally.
- Let the mixture cool off for about 5-10 minutes, stirring every few minutes. It will begin to thicken up.
- When thick enough drop by Tablespoons onto the parchment paper.
- Immediately sprinkle with a little sea salt.
- Let stand for 3-4 hours until firm.
- Store in an airtight container.
PECAN CLUSTERS

- In a 15x10x1-in. baking pan, combine pecans and butter. Bake at 250° for 20-30 minutes, stirring every 10 minutes., Remove from the oven; transfer to a bowl. Add candy coating and stir until evenly coated. Drop by rounded teaspoonfuls onto waxed paper. Cool completely. Store in an airtight container.
