Kielbasa and Honey Mustard Pinwheels image

This is a unique spin (or spiral!) on pigs in a blanket, the classic appetizer that's perfect for any occasion. We've swapped in diced kielbasa for the usual hot dogs, and baked honey mustard into the swirls of puff pastry. The best part: You can assemble the three-ingredient apps ahead of time and then cook them off just before your guests arrive.

1 sheet frozen puff pastry (half of a 17.3-ounce package), thawed
All-purpose flour, for dusting
1/3 cup honey mustard
8 ounces diced kielbasa (about 1 1/2 cups)

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment.
  • Unfold the puff pastry onto a lightly floured work surface. Using a rolling pin, gently roll the dough out to a 10-by-15-inch rectangle. With a small offset spatula, spread the honey mustard evenly over the dough, making sure to go all the way to the edges, then sprinkle the kielbasa pieces over the mustard.
  • Starting at a long side, roll the dough into a log as you would a jelly roll, then pinch the seam shut and place onto the prepared baking sheet, seam-side down. Refrigerate the log until slightly firm, at least 30 minutes; this will make it easier to cut it into rounds. (See Cook's Note)
  • Cut the chilled puff pastry log into 1/2-inch-wide slices (you should get 20 to 22 slices) and place the slices cut-side down onto the baking sheet. If needed, adjust the slice shape to form a circle. Bake until puffed and golden brown, about 18 minutes. Let cool 5 minutes before serving.

SPICY KIELBASA DOG WITH STOUT ONIONS

1 tablespoon butter
1/2 cup stout beer
1 Spanish onion, very thinly sliced
Kosher salt and freshly cracked black pepper
1 tablespoon canola oil
1 pound Polish kielbasa sausage link, cut into thirds
3 baguette portions (the length of the links), split through the center but not through the bottom
1/4 cup spicy whole-grain mustard
1/4 cup pickled sweet picante peppers, such as Peppadews
1 cup watercress

Steps:

  • In a medium saucepan, heat the butter over medium heat until melted. Add the beer and onions and cook, stirring often and reducing the heat to low as the onions start to brown, until the onions are caramelized and all of the liquid has reduced to allow the sugars to brown, 5 to 7 minutes. Season with salt and pepper and set aside.
  • In a large saute pan, heat the canola oil over medium heat. Split the links through the center just to open them up so they lay flat. Sear the links on the cut side until brown, about 5 minutes, then remove them from the pan. In the same pan, toast the buns again on the cut side until brown, a few minutes.
  • Spread the mustard onto the buns, then add the links. Top with the pickled peppers and caramelized onions. Finish with a small handful of watercress and serve.

QUICK SKILLET KIELBASA PORK AND BEANS



Quick Skillet Kielbasa Pork and Beans image

1 tablespoon vegetable oil
1 pound kielbasa, cut into 1/2-inch rounds
1 medium onion, diced (about 1 cup)
1/3 cup tomato paste
2 tablespoons dark brown sugar
2 tablespoons balsamic vinegar
1 tablespoon chopped chipotle in adobo
Two 14-ounce cans navy beans with liquid
Kosher salt and freshly ground black pepper
2 hot dog buns, cut into 1/2-inch cubes
2 tablespoons unsalted butter, melted
1/4 cup pickle relish

Steps:

  • Preheat the broiler to high with a rack set 2-inches from the heat source.
  • Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
  • Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
  • Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
  • Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.

3/4 pound (about 3 cups) fingerling potatoes, halved lengthwise
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound smoked kielbasa, cut on the bias into eight 2-inch long pieces
1 cup prepared sauerkraut
1/4 teaspoon caraway seeds

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed baking sheet with parchment paper. Turn up four edges of a large piece of foil to make a rectangular tray (about 12 by 5 inches) for the sauerkraut; set aside
  • On one side of the baking sheet, toss the potatoes with 1 tablespoon of the olive oil, and sprinkle with some salt and pepper; spread the potatoes into an even layer. Place the kielbasa on the other side of the baking sheet, leaving an empty place in the center for the foil tray. Brush the kielbasa with the remaining olive oil. Roast until the kielbasa begins to brown in spots and the potatoes are almost completely tender, about 15 minutes.
  • Toss the sauerkraut with the caraway seeds and spread into an even layer in the prepared foil baking tray. Place the foil tray in the center of the baking sheet. Roast until the potatoes are completely tender and browned, the sauerkraut is warmed through and the kielbasa is browned in spots, 15 minutes more. Divide sausage and vegetables between two plates and enjoy.

1 1/2 pounds pork butt, cut into 1-inch cubes
1/2 pound beef chuck, cut into 1-inch cubes
1/2 pound pork fat, cubed
1/2 cup chopped garlic
4 tablespoons paprika
1/2 teaspoon ground allspice
2 teaspoons salt
2 teaspoons freshly ground black pepper
1 teaspoon caraway seeds
1 teaspoon ground dried marjoram
1 teaspoon ground dried summer savory
1 pint container of 1 1/2-inch casings

Steps:

  • In a large mixing bowl, add the pork, beef and pork fat. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the meat with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used. Stuff the ground mixture into the casings to form 12-inch links. Prepare the smoker. Place the sausages in the smoker and cook for 10 to 15 minutes. Remove and cool completely. Prepare the steamer. Place the sausages in the steamer and cook for 10 minutes. Remove and cool completely. Place the sausage back in the smoker and continue to smoke for 10 minutes. Remove and cool completely.

KIELBASA WITH MASHED POTATOES

1 1/2 pounds small Yukon gold potatoes, halved
1 pound kielbasa
1 1/2 tablespoons unsalted butter
1 small head broccoli, florets roughly chopped
1 cup sauerkraut, drained
2/3 cup whole milk
1 tablespoon whole-grain mustard
Kosher salt and freshly ground pepper

Steps:

  • Put the potatoes in a large microwave-safe bowl and add 3 tablespoons water; cover with plastic wrap and microwave until tender, about 12 minutes.
  • Meanwhile, cut the kielbasa into 4 equal pieces; halve lengthwise. Melt 1/2 tablespoon butter in a large skillet over medium heat. Add the kielbasa and cook, turning occasionally, until browned and heated through, about 10 minutes. Transfer to a plate and cover loosely with foil to keep warm.
  • Increase the heat under the skillet to medium high; add the remaining 1 tablespoon butter. Add the broccoli and 1/4 cup water and cook, stirring, until crisp-tender, about 5 minutes. Add the sauerkraut and toss to warm through.
  • Drain the potatoes. Warm the milk in the microwave, about1 minute; add to the potatoes along with the mustard, 1/2 teaspoon salt, and pepper to taste. Coarsely mash with a potato masher or fork. Serve the kielbasa with the potatoes and the broccoli.

1 1/2 pounds smoked Polska kielbasa
2 tablespoons butter
3 tablespoons sugar
1 onion, sliced
3 cups sauerkraut, drained
3 tablespoons freshly chopped parsley leaves
Honey Mustard Dipping Sauce, recipe follows
1/4 cup yellow mustard
1/4 cup honey
1/4 cup Dijon mustard
1/2 teaspoon cayenne
1 tablespoon prepared horseradish
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat grill. Preheat oven to 400 degrees F.
  • Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot grill and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. Transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
  • In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
  • Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with Honey Mustard Dipping Sauce.
  • In a small bowl, mix all ingredients until well combined.
