KIELBASA BITES WITH 'SECRET SAUCE'



Kielbasa Bites with 'Secret Sauce' image

a six ingredient, absolutely delicious appetizer that is Whole30 approved!

14oz No Sugar Pederson Farm's Kielbasa
2 tbsp. olive oil
2 tsp. tomato paste
1 tbsp. yellow mustard
1.5 tbsp. coconut aminos
2 tsp. apple cider vinegar

Steps:

  • Slice kielbasa into thin rounds. Heat a large skillet over medium-high heat. Add the olive oil and when hot, but not smoking, add the sliced kielbasa to the skillet. Try to spread them out into a single layer if you can, and brown them on each side until golden brown, about 3 minutes per side. Reduce heat to medium low. Add tomato paste and stir to toss and coat the sausage. Now add the mustard, coconut aminos, and apple cider vinegar-- toss to coat and saute for about 2 more minutes. Or until the sauce is nice and thick and coated all over the kielbasa. Remove from heat and onto a plate. Stick some toothpicks in it and serve! Enjoy!

2 tablespoons finely chopped parsley
12 ounces light beer
1 1/2 cups water
2 cups chopped yellow onions
2 pounds Kielbasa sausage, links
Salt
Freshly ground black pepper
2 tablespoons butter
2 tablespoons flour
2 tablespoons white vinegar
1 tablespoon sugar

Steps:

  • In a saucepan, over medium heat, combine the beer, water, onions and sausage. Season with salt and pepper. Bring to a boil, reduce to a simmer and cook, covered, for 25 minutes. Remove the sausage from the pan and cool. Slice the sausage into 1 -inch pieces. In a large saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a light brown roux. Stir in the vinegar, sugar and the reserved beer and onion mixture. Season with salt and pepper. Bring the mixture to a boil, reduce to a simmer and continue to cook until the sauce coats the back of a spoon, about 15 minutes. Add the sliced sausage and continue to cook for 5 minutes. Garnish with parsley.

1/2 pound beef chuck, cut into 1-inch cubes
1/2 pound pork fat, cubed
1/2 cup chopped garlic
4 tablespoons paprika
1/2 teaspoon ground allspice
2 teaspoons salt
2 teaspoons freshly ground black pepper
1 teaspoon caraway seeds
1 teaspoon ground dried marjoram
1 teaspoon ground dried summer savory
1 pint container of 1 1/2-inch casings

Steps:

  • In a large mixing bowl, add the pork, beef and pork fat. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the meat with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used. Stuff the ground mixture into the casings to form 12-inch links. Prepare the smoker. Place the sausages in the smoker and cook for 10 to 15 minutes. Remove and cool completely. Prepare the steamer. Place the sausages in the steamer and cook for 10 minutes. Remove and cool completely. Place the sausage back in the smoker and continue to smoke for 10 minutes. Remove and cool completely.

1 small minced onions or 2 tablespoons onion flakes
1/2 cup Worcestershire sauce
1/2 cup balsamic vinegar
1 cup water
1 cup packed brown sugar
2 lbs kielbasa, cut in 1/4-inch rounds
1/4 cup cold water
1 tablespoon cornstarch
1 lb pasta, cooked

Steps:

  • In a large skillet saute onion until translucent.
  • Add Worcestershire sauce, balsamic vinegar, water, and brown sugar. Stir until sugar dissolves.

1 cup beer
1/4 cup brown sugar, firmly packed

1/4 cup Dijon mustard (I use my RJ's Homemade Spicy Mustard RJ's Homemade Spicy Mustard)
1 tablespoon horseradish

  • Place whole sausage in pan with water.

  • Return to skillet.
  • Add the cup of beer.
