BEER BRAISED SMOKED SAUSAGE (KIELBASA) AND KRAUT
This is an easy way to make this delicious dish. We love it on a cold winter evening or anytime really! We eat this on hot dog buns with spicy mustard, jalapenos, onions and spicy pickles. YUMMY! I also serve these with buttered garlicy potatoes on the side.

Steps:
- Sauté kielbasa in a large frying pan or dutch oven until slightly browned (you can also grill the kielbasa for about 4 minutes on each side then add them to the pan and proceed with directions for even better flavor).
- Add beer, cover and simmer for about 30 minutes. Remove lid and place kraut over kielbasa. Sprinkle pepper over the kraut and just give the kraut a toss leaving it on top of the kielbasa. Cover and simmer for about 15 minutes. Remove lid and stir the kraut and kielbasa together well. Cover and simmer for another 15 minutes.

KIELBASA IN BEER SAUCE
Original recipe comes from Cooks.com. I modified it slightly. I like to serve this as a side with home-made baked beans but it would go great with many things. Can be used as a main course, side or even a hot appetizer and should be included in your Octoberfest planning!

Steps:
- Place whole sausage in pan with water.
- Cover and simmer for 10 minutes.
- Remove from heat and cut sausage into diagonal slices.
- Return to skillet.
- Add the cup of beer.
- Cover and simmer another 10 minutes.
- Add in brown sugar and liquefied cornstarch.
- Stir in remaining ingredients.
- (vinegar, mustard and horseradish).
- Cook and stir until it is bubbly.
- Serve with sauerkraut and enjoy.
BEER CHEESE SOUP IN A BREAD BOWL WITH KIELBASA "CROUTONS"

- Heat the oil in a large skillet over medium-high heat. Add the kielbasa and cook until browned and crisp, 1 to 2 minutes. Transfer to a paper towel-lined plate and set aside.
- Melt the butter in a large Dutch oven over medium-low heat. Add the carrots, celery, onion, garlic, mustard powder and cayenne. Cook the vegetables until tender and translucent, about 15 minutes.
- Meanwhile, prepare the bread bowls. Using a sharp knife, slice the top off of each boule to use as a topper. Hollow out the middle with a fork or your fingers, leaving a thick bread shell. Save the removed bread for another use.
- Sprinkle the flour over the vegetables and cook, stirring constantly, about 1 minute. Add the Dijon mustard and Worcestershire. Pour in the stock and beer and simmer until the alcohol cooks out, about 5 minutes.
- Puree the soup with an immersion blender until smooth. Add the Cheddar and Gruyere and stir until the cheese is melted. Season with salt and pepper. Ladle into the bread bowls and serve immediately, topped with the kielbasa croutons and chives. Use the bread toppers for dipping, if desired.
KIELBASA IN POLISH SAUCE
Steps:
- In a saucepan, over medium heat, combine the beer, water, onions and sausage. Season with salt and pepper. Bring to a boil, reduce to a simmer and cook, covered, for 25 minutes. Remove the sausage from the pan and cool. Slice the sausage into 1 -inch pieces. In a large saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a light brown roux. Stir in the vinegar, sugar and the reserved beer and onion mixture. Season with salt and pepper. Bring the mixture to a boil, reduce to a simmer and continue to cook until the sauce coats the back of a spoon, about 15 minutes. Add the sliced sausage and continue to cook for 5 minutes. Garnish with parsley.
KIELBASA IN RED WINE
For an entree we serve this with a hot potato salad. As an appetiser we slice it and place it on party rye that has been spread with a zesty mustard.

KIELBASA, HOW TO COOK FRESH HOMEMADE KIELBASA

Servings, of course, depend on the amount you are cooking! As to cooking time, remember, this is RAW pork; it requires sufficient cooking time.

- If the kielbasa is frozen, thaw it a little. Place fresh kielbasa in pot with 1 quartered onion, several peppercorns, garlic cloves, 1 teaspoon marjoram (optional) and half a bay leaf. The addition of spices helps replace the seasoning that boils out during cooking.
- Add enough boiling water to cover.
- Cover and simmer on very LOW heat for about 50-60 minutes. Too rapid boiling may cause the sausage to burst. DO NOT prick sausages; they become dry. Let cool in cooking liquid.
- Sausage comes out moist and delicious, but not brown.
- Can be frozen after cooking. Wrap very well. Vac seal if you can.
CABBAGE AND SAUSAGES BRAISED IN BEER

- In a large pot, heat oil over medium heat.
- Add sausage and saute until lightly browned, 3-4 minutes.
- Remove with a slotted spoon to a plate lined with paper towels; set aside.
- Add butter to the pot and heat until melted.
- Add onions and pepper; saute until onions are slightly caramelized, about 10 minutes.
