6 chicken thighs (, skin-on and bone-in)
1 teaspoon Kosher salt
1/2 teaspoon coarse ground black pepper
2 tablespoons vegetable oil
4 tablespoons unsalted butter (, sliced thinly)
40 cloves garlic (, peeled (about 3 heads of garlic))
1 cup white wine
1 teaspoon rubbed thyme
2 teaspoons cornstarch
1 tablespoon water

Steps:

  • Season chicken with salt and pepper.
  • Add vegetable oil to a large skillet on medium high heat.
  • Sear the chicken on both sides, about 4-5 minutes on each side until browned.
  • Add chicken to your slow cooker along with garlic and slices of butter.
  • Mix white wine and rubbed thyme and pour around the chicken.
  • Cook on low for 8 hours or on high for 4 hours.
  • Remove chicken and garlic from pan.
  • Add liquid to a saucepan.
  • Mix cornstarch and water and pour into saucepan.
  • Bring liquids to a boil and thicken, about 3-4 minutes on high heat.
  • Pour over chicken and garlic to serve.
  • Optional: to make creamy add 1/4 cup heavy cream to liquids in saucepan before thickening.

This weeknight-friendly version of the French classic - chicken with 40 cloves of garlic - has half the amount of garlic, because a slow cooker doesn't get quite hot enough to mellow out 40 whole cloves. This dish cooks on high for three hours, but you can lengthen the cook time to six hours using the low heat setting. In that case, cut the garlic further to 15 cloves, because it may taste a bit stronger when cooked at that lower temperature. The beans end up pleasantly soupy, in a sauce rich with chicken juices and wine. The herbs stirred in at the end impart a welcome freshness. This is best served in shallow bowls, with good bread on the side.

1 (28-ounce) can or 2 (14-ounce) cans cannellini beans, drained
20 garlic cloves (about 2 heads of garlic), smashed
1/3 cup white wine
2 tablespoons olive oil
1 tablespoon white wine vinegar
2 fresh thyme sprigs or 1/2 teaspoon dried thyme
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
2 pounds bone-in, skin-on chicken thighs (4 to 6 large thighs)
1/2 lemon, juiced (about 1 tablespoon)
2 scallions, trimmed, white and light green parts thinly sliced
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the beans, garlic, wine, oil, vinegar, thyme and red-pepper flakes in a 6- to 8-quart slow cooker. Season lightly with salt and generously with pepper. Season the chicken thighs all over with salt and pepper, then nestle them in an even layer on top of the beans, skin-side up. Cover and cook on high for 3 hours or low for 6 hours.
  • Line a sheet pan with foil and heat a broiler. Using tongs, remove the chicken thighs from the slow cooker, place them on the foil, skin-side up, and broil for 2 to 4 minutes, rotating once, until the chicken skin is golden and caramelized in spots.
  • Stir the lemon juice, scallions and parsley into the beans. Serve the beans in bowls, and top with the chicken.

1/2 teaspoon salt
1/4 teaspoon pepper

2 cups sliced baby portobello mushrooms (about 6 ounces)

Simple, delicious and very classically French, this creamy casserole makes an impressive dinner party dish

2 tbsp seasoned flour
1 free-range chicken , about 1.5kg/3lb 5oz, jointed into 8 pieces
4-5 tbsp olive oil
2 shallots , finely chopped
200ml sweet wine , such as Sauternes
300ml chicken stock (see how to make your own below)
sprig each of parsley , thyme and bay tied with string
1 head garlic
50g butter
200g chestnut mushrooms
3rounded tbsp crème fraîche
a little lemon juice if needed

Steps:

  • Tip the flour into a large food bag. Add the chicken pieces, two at a time, and shake well to coat evenly. Heat 2 tbsp oil in a large pan, add a few pieces of chicken and fry on all sides until well browned. You'll need to do this in batches and you may need a touch more oil or fat. Remove the pieces to a large saucepan or flameproof casserole.
  • Add 1 tbsp oil to the pan, add the shallots and fry gently until softened, but not browned. Add the wine and allow to bubble until it is reduced a little. Add the stock, herb bundle and seasoning and bring to the boil. Pour over the chicken.
  • Cover the pan tightly and simmer for 45 mins until the chicken is tender and the sauce thickened and reduced.
  • Meanwhile, separate the garlic head into individual cloves and put in a small pan with water to cover. Bring to the boil, then cover and simmer for 20-25 mins until the garlic is tender. Drain and cool under running cold water. Peel the garlic.
  • Heat half the butter and a splash of oil in a frying pan. Add the mushrooms and cook quickly over a moderate heat until just softened. Tip into a bowl. Wipe out the pan and add the remaining butter and a splash of oil. Add the garlic and fry gently, shaking the pan until lightly browned. Season lightly.
  • Stir the mushrooms and crème fraîche into the chicken and bring to the boil. Simmer for 5 mins, then taste and add more seasoning and a little lemon juice if it needs it. Spoon the chicken and sauce onto a warm platter and scatter with garlic.

1 chicken about 1.5kg/3lb 5oz
8 bay leaves
50g soft butter
1 lemon , halved
4 whole heads wet garlic
½ baguette cut into 8 thin slices on the angle
1 tbsp olive oil
150ml white wine

Steps:

  • Heat oven to 200C/180C fan/gas 6. Season the chicken inside and out. Loosen skin over the breast and place a bay leaf and a little butter between the skin on each breast. Add the rest of the bay leaves and the lemon to the cavity, then smear the rest of the butter all over the bird. Place in a roasting tin and cook for 45 mins. Add the garlic to the pan, baste the chicken with the buttery juices and bake in the oven for 45 mins more.
  • Meanwhile, lay baguette slices on a tray and drizzle with a little oil. Bake for 20 mins until golden, then remove from the oven. When the chicken is cooked, remove from the oven and leave to rest with the soft garlic.
  • For the gravy, pour the fat out of the tin, place the tin on the heat and splash in the wine and any juices from the chicken. Bubble and scrape up any of the sticky bits, then drain into a jug. Serve the chicken with the croutons, the jug of gravy and the garlic for squeezing over.
