1 tablespoon olive oil
1 package (14 ounces) smoked kielbasa or Polish sausage, halved lengthwise and sliced
4 medium carrots, chopped
1 medium onion, chopped
2 garlic cloves, minced
3/4 teaspoon ground cumin
1 can (28 ounces) crushed tomatoes
1 package (16 ounces) dried brown lentils, rinsed
1 can (15 ounces) black beans, rinsed and drained
3/4 cup medium pearl barley
1/2 cup frozen corn
10 cups reduced-sodium chicken broth

Steps:

  • In a 6-qt. stockpot, heat oil over medium heat. Add kielbasa; cook and stir 6-8 minutes or until browned. Remove from pot with a slotted spoon., Add carrots and onion to same pot; cook and stir 6-8 minutes or until tender. Add garlic and cumin; cook 1 minute longer. Stir in kielbasa and remaining ingredients; bring to a boil. Reduce heat; simmer, covered, 35-45 minutes or until lentils and barley are tender, stirring occasionally.

1 tablespoon vegetable oil
1 pound kielbasa, cut into 1/2-inch rounds
1 medium onion, diced (about 1 cup)
1/3 cup tomato paste
2 tablespoons dark brown sugar
2 tablespoons balsamic vinegar
1 tablespoon chopped chipotle in adobo
Two 14-ounce cans navy beans with liquid
Kosher salt and freshly ground black pepper
2 hot dog buns, cut into 1/2-inch cubes
2 tablespoons unsalted butter, melted
1/4 cup pickle relish

Steps:

  • Preheat the broiler to high with a rack set 2-inches from the heat source.
  • Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
  • Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
  • Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
  • Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.

I am not 100% sure where this recipe originated but we LOVE it! I have been eating this meal since childhood (my mother and grandmother both make it frequently) and now my boyfriend loves it too! You can also make this in the crock pot on low for 8 hours or serve with rice to stretch your budget. I hope you enjoy!

1 (8 ounce) bottle seafood cocktail sauce
1 yellow onion (diced)

1/2 pound sliced bacon
1 pound smoked kielbasa, sliced and halved
1 large onion, chopped
1 medium sweet red pepper, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
1/2 cup chicken broth
Pepper to taste

Steps:

  • In a large skillet, cook bacon until crisp; remove to paper towel to drain. Discard all but 1 tablespoon drippings; cook kielbasa in drippings until lightly browned. Drain. Add onion, red pepper, beans, broth and pepper. Cover and simmer for 1 hour, stirring occasionally. Crumble bacon on top.

1/4 cup extra virgin olive oil plus 2 tbsp extra virgin olive oil
1 1/4 cups pearl barley
2 garlic cloves, chopped
salt & freshly ground black pepper
1/2 cup fresh breadcrumb
1 1/2 lbs butternut squash, peeled seeded and cut into cubes (about 3 cups)
3/4 lb kielbasa, chopped
4 cups cauliflower, separated into florets
1/2 cup fresh parsley, chopped

Steps:

  • In a medium saucepan, heat 1 tablespoon oil, barley and garlic; cook until barley is toasted, about 3 minutes.
  • Add 2 1/2 cups water and 1/2 teaspoon salt; bring to a boil.
  • Once boiling, cover pan, lower heat and simme until the water has evaporated, about 35 to 40 minutes.
  • Meanwhile, in a large skillet, toast breadcrumbs over medium high heat for about 7 minutes; set aside.
  • Add 2 tablespoons oil to skillet and heat over medium high heat; add squash and cook until browned, about 6 minutes.
  • Add kielbasa and cook until kielbasa is browned and squash is tender, about 5 minutes; transfer to a large bowl.
  • Add remaining 3 tablespoons oil to skillet, along with cauliflower, 2 tablespoons water, season with salt and pepper; weight cauliflower with another skillet and cook until bottom is browned.
  • Turn and cook until cauliflower is tender, about 5 minutes; add to kielbasa.
  • Stir in barley and parsley, top with bread crumbs, and serve.

It needs to bake for one hour but it's so fast to put together, that you could get it ready in the morning, and refrigerate until you get home, then just pop it in the oven. Very delicious and amazingly easy, what more could you ask for? From Heirloom Recipes, submitted my M.R. She suggests 2 pounds of kielbasa for 6 servings. I cut it down to one pound for us, but followed the rest of the recipe to have a fair amount of beans for a side dish. She also says you can make this in a slow cooker.

Hubby loves Kielbasa and I love Barley, so I thought it was about time I came up with a dish that combines them. Use whatever kind of beans you like, I used small white beans last night.

1/4 cup pearl barley
1/2 teaspoon kosher salt
3 cups water
1/2 large sweet onion
1/2-1 lb turkey kielbasa
1 (15 ounce) can beans
1/2 cup warm water
1/4 teaspoon no-sodium chicken bouillon
1 dash parsley

Steps:

  • Cook barley per package directions. This will take between 1 hr to 1 1/2 hours.
  • Chop onion and kielbasa. Spray pan with Pam and saute onion over medium heat until softened.
  • Add kielbasa and saute for a few minutes longer.
  • Drain and rinse beans, then add to pan.
  • Dissolve bouillon in water, then add to pan along with parsley.
  • Add barley, stir well and cook until all is heated through and excess liquid evaporates. (It should be moist, just not soupy.).
