- In a 6-qt. stockpot, heat oil over medium heat. Add kielbasa; cook and stir 6-8 minutes or until browned. Remove from pot with a slotted spoon., Add carrots and onion to same pot; cook and stir 6-8 minutes or until tender. Add garlic and cumin; cook 1 minute longer. Stir in kielbasa and remaining ingredients; bring to a boil. Reduce heat; simmer, covered, 35-45 minutes or until lentils and barley are tender, stirring occasionally.

QUICK SKILLET KIELBASA PORK AND BEANS
Swap kielbasa into pork and beans, and top it with hot dog bun croutons and pickle relish.

- Preheat the broiler to high with a rack set 2-inches from the heat source.
- Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
- Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
- Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
- Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.

I am not 100% sure where this recipe originated but we LOVE it! I have been eating this meal since childhood (my mother and grandmother both make it frequently) and now my boyfriend loves it too! - In a medium saucepan, heat 1 tablespoon oil, barley and garlic; cook until barley is toasted, about 3 minutes.
- Add 2 1/2 cups water and 1/2 teaspoon salt; bring to a boil.

BARBECUE KIELBASA AND BEANS
This is definitely one for those nights when you don't have much time to prepare dinner. It needs to bake for one hour but it's so fast to put together, that you could get it ready in the morning, and refrigerate until you get home, then just pop it in the oven. Very delicious and amazingly easy, what more could you ask for? From Heirloom Recipes, submitted my M.R. She suggests 2 pounds of kielbasa for 6 servings. I cut it down to one pound for us, but followed the rest of the recipe to have a fair amount of beans for a side dish. She also says you can make this in a slow cooker.

- Cook barley per package directions. This will take between 1 hr to 1 1/2 hours.
- Chop onion and kielbasa. Spray pan with Pam and saute onion over medium heat until softened.
- Add kielbasa and saute for a few minutes longer.
- Drain and rinse beans, then add to pan.
- Dissolve bouillon in water, then add to pan along with parsley.
- Add barley, stir well and cook until all is heated through and excess liquid evaporates. (It should be moist, just not soupy.).
