GRILLED KIELBASA WITH SAUERKRAUT AND ONIONS

Steps:
- Preheat grill. Preheat oven to 400 degrees F.
- Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot grill and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. Transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
- In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
- Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with Honey Mustard Dipping Sauce.
- In a small bowl, mix all ingredients until well combined.

- Heat oil in a large skillet over medium-high heat.
- Add potatoes, onions, garlic, and pepper. Fry until potatoes are golden and onions are translucent, about 8 minutes.
- Add kielbasa and cook 1-2 minutes until warm.
- Add broth and cover skillet with lid. Lower heat to medium-low. Cook until broth is mostly evaporated, 5-10 minutes, and potatoes are tender. Be careful not to overcook the potatoes.
- If potatoes are not done and broth has evaporated completely, add more chicken broth and continue to cook until potatoes are tender.

- Place a Skillet with 1-2 Tbs. Olive Oil over burner to warm
- Slice Onion
- Place onion in skillet to start getting tender
- Add Salt to taste
- Open Polska Kielbasa (using the "Easy Open" feature on the packaging) and place in skillet on top of onions
- Add a little water if needed to keep onions from sticking to skillet.
- Let cook until onions are tender and slightly caramelized and Polska Kielbasa is cooked through.
- Shortly before you are ready to pull the Polska Kielbasa and Caramelized Onions from the pan, add some fresh chopped Dill to the skillet, stir in well.
- Slice the Polska Kielbasa
- Mix Polska Kielbasa and Caramelized Onions in a bowl
- Serve as is for a Warm Salad, or Serve on a Steak Roll as a Sandwich Roll

EASY KIELBASA SKILLET DINNER
The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

- In a large pot, boil potatoes.
- While the potatoes are cooking, cut the sausage into 1/4 inch pieces.
- When the potatoes are ALMOST done-not fork tender, drain.
