I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

Steps:

  • Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
  • Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
  • Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
  • Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
  • Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
  • NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

1/3 cup butter
1 cup sugar
2 teaspoons cinnamon
milk (enough to cover the bananas)
ice cream

Steps:

  • Preheat oven to 375.
  • Cut the bananas in halves. Butter a baking dish thoroughly, and place the bananas flat in them. Sprinkle the sugar mixed with the cinnamon over the bananas, and don't move them.
  • Pour the milk over the banans until they are all covered , cut butter into little cubes and scattered all over the bananas, cover with foil.
  • Place baking dish on a edged baking sheet in case millk cooks over, bake with foil on for the first five minutes, then uncover and let the cook until brown on top.

4 Tbsps cane sugar

3 sheets Filo dough ((About 12)
4 ripe Banana

Nutmeg
2 Tbsps honey
1 oz Chocolate (70% cocoa)
4 Tbsps Yogurt (low-fat)

Steps:

  • Separate the eggs, holding yolks aside for another use. Melt 1-ounce butter and allow to cool. In a small bowl, beat the egg whites. In a separate bowl, mix sugar and cinnamon together.
  • Cut the pastry sheets in half, so that you make 6 rectangles about 6 x16". Lay the 2 rectangles next to each other and brush lightly with the egg white mixture.
  • Sprinkle with a bit of cinnamon sugar. Layer another pastry sheet on top and again coat with egg white and sprinkle with cinnamon sugar.
  • Repeat once more, the top layer ending with egg white and remaining cinnamon sugar.
  • Cut each piece of dough into 4 rectangles of about approximately 6 x 8 inches. Line a baking sheet with parchment paper and place the dough pieces on the sheet.
  • Bake in preheated oven on the middle rack at about 400 °F until golden brown. Leave to cool on an oven rack.
  • Grease a baking dish with the remaining butter. Peel the banana and place in dish. Squeeze the lime and measure 2 tablespoons juice.
  • Stir a pinch of nutmeg and honey into the lime juice. Coat the bananas in the mixture and bake in a preheated oven at 400° F about 12 minutes, turn once during cooking.
  • With a vegetable peeler, slice chocolate into fine shavings.
  • Place 1 baked pastry sheet on 4 plates and then top each with 1 banana. Top with 1 tablespoon yogurt and sprinkle with chocolate shavings. Place the remaining pastry on top as a cover and serve immediately.

2 large eggs
2 cups buttermilk
6 tablespoons (3/4 stick) unsalted butter, melted
1 1/2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon sea salt
1 cup diced bananas (2 large)
1/2 cup finely chopped pecans
Nonstick cooking spray or 2 tablespoons unsalted butter

Steps:

  • In a medium bowl, whisk together the eggs and buttermilk. Stir in the melted butter.
  • In a small bowl, mix the flour, sugar, baking soda, and salt together.
  • Add the dry ingredients to the wet ingredients, stirring until just combined - don't worry if there are a few lumps. Stir in the bananas and pecans.
  • Lightly grease a large sauté pan or griddle with the nonstick spray or butter. Heat the pan until hot and then spoon out 3 tablespoons of batter per pancake.
