HEALTHY STRAWBERRY MUFFINS

Healthy Strawberry Muffins image

I love the burst of flavor that the fresh lemon adds to this recipe, so it's worth adding that ingredient if you can. These can be served at room temperature or slightly warmed according to your preference.

Time 26m

Number Of Ingredients 12

1 1/4 cups whole-wheat flour
1/2 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1/3 cup maple syrup ((or honey))
1/4 cup canola oil ((or melted and slightly cooled butter))
2 eggs ((lightly beaten))
1 teaspoon pure vanilla extract
1 cup diced strawberries ((stems removed))
1 tablespoon fresh lemon zest ((optional but recommended)

Steps:

  • Preheat the oven to 375 degrees F and grease a standard 12-cup muffin tin with nonstick spray.
  • Add the flour, oats, baking powder, baking soda, and salt to a medium bowl. Stir together.
  • Add the milk, maple syrup, oil, eggs, vanilla extract, strawberries, and lemon zest, if using. Stir together gently to just combine.
  • Evenly divide the batter between the muffin tin using about 1/4 cup per cup.
  • Bake 16-18 minutes or until a cake tester inserted into the center comes out cleanly.
  • Remove from oven, let cool for a minute or two I the pan, and transfer muffins to cool fully on a wire rack. (Use a paring knife around the edges if needed to help you remove them from the pan.) Serve slightly warm or at room temperature.

KIDS CAN BAKE: SWEET POTATO-CHOCOLATE CHIP MINI MUFFINS

Kids Can Bake: Sweet Potato-Chocolate Chip Mini Muffins image

These sweet potato muffins are a lot like chocolate chip cookies but small enough to just pop into your mouth. For little and big kids: Let them help with measuring the ingredients, mixing the batter and filling the muffin tins.

Time 30m

Yield Makes 48 mini muffins

Number Of Ingredients 12

Cooking spray
1 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon pumpkin pie spice
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup mini chocolate chips
1 stick (8 tablespoons) unsalted butter, melted
2/3 cup packed brown sugar
1 cup canned sweet potato puree
1/3 cup sour cream
1 large egg

Steps:

  • Preheat the oven to 350 degrees F. Coat the cups of two 24-cup mini muffin tins with cooking spray.
  • Whisk together the flour, baking powder, pumpkin pie spice, salt, baking soda and chocolate chips in a medium bowl. Whisk together the butter, sugar, sweet potato, sour cream and egg in a large bowl until well mixed. Fold the flour mixture into the sweet potato mixture, and stir until just combined (it's OK if there are some lumps).
  • Fill each muffin cup with a generous tablespoon of batter. Bake until the muffins have pulled away from the sides of the tins and a toothpick inserted in the center of a muffin comes out clean, 12 to 16 minutes. Tip the muffins out onto a cooling rack. Serve warm or at room temperature.
