CATFISH STICKS
Steps:
- To make the sauce: Mix all ingredients in a bowl and refrigerate until serving.
- When ready to fry, fill a large heavy pot with enough oil to measure 1 1/2 inches up the side of the pan and heat to 350 degrees F.
- To make the catfish sticks: In a measuring glass, mix together buttermilk, eggs, cayenne, salt and pepper. Pour into a large plastic bag, then add the catfish. Seal, removing as much air as possible, and refrigerate for 10 minutes. Meanwhile place flour in a shallow bowl. Combine the bread crumbs with sugar and place in another shallow bowl. Remove fish from the buttermilk mixture and coat lightly with flour. Place strips back in the buttermilk and then dredge in the bread crumb mixture. Fry strips in batches for about 3 minutes on each side or until golden brown. Drain on a paper towel-lined plate.
- Serve catfish sticks with dipping sauce.
OVEN-BAKED FISH STICKS WITH EASY TARTAR SAUCE (KID-FRIENDLY)
Although cod is stated in the ingredients this recipe will work good using tilapia or white fish fillets. This will serve about 3 people, but can be easily doubled. The already crushed cornflake crumbs that you purchase in a small box will not work as well for this recipe, the texture is too fine and the fish sticks will not be as crispy, try to use regular cornflakes cereal and grind them in your processor. You can double the tartar sauce recipe if you prefer more sauce, try to make the sauce even up to a day ahead to blend flavors. This is a great recipe for kids of all ages LOL!

Steps:
- Set oven to 475°F (set oven rack to second-lowest position, or the middle rack).
- In a bowl mix together the mayo, sweet relish, garlic powder and lemon juice; whisk to blend, and season with salt and pepper, cover and refrigerate until ready to use.
- Process the cornflakes with a pinch of seasoning salt and black pepper on a processor until coarse crumbs form (leave the crumbs coarse, don't grind them to a fine texture) transfer the crumbs to a bowl and mix in lemon peel.
- In a small bowl mix together the melted butter with about 2-3 tablespoon fresh lemon juice until well combined.
- Season the fish with black pepper (and more salt if desired) then brush the fish with the lemon butter to coat on all sides.
- Dip the fish into the cornflake mixture coating completely.
- Arrange the fish on a lightly greased baking sheet.
- Sprinkle with any remaining cornflake mixture.
- Bake fish for about 7-10 minutes (depending on the size of the fish strips).
- Serve with the sauce.

- Heat oil in a deep-fryer or large saucepan.
- Mix flour, cornmeal, paprika, garlic powder, lemon-pepper seasoning, and pepper together in a resealable bag. Pour beaten eggs into a separate resealable bag.
- Remove catfish from the marinade and shake off excess. Discard the remaining marinade. Drop catfish into the bag with eggs and shake to coat. Remove a few catfish at a time from eggs using tongs and transfer to flour mixture; shake to coat.
- Cook catfish, working in batches, in the hot oil until fish float to the top and are cooked through, 5 to 7 minutes. Remove cooked fish with tongs or a slotted spoon and drain on paper towel. Season fish sticks with salt while still warm.

KID'S FISH STICK CASSEROLE
I know, I know--this sounds really weird. This is one of those "I don't feel much like cooking" dishes that is easy to throw together on a busy night. This tastes a lot better than it sounds and is a real family pleaser. It is also a good potluck meal--and believe me, everyone is always shocked when they ask for the recipe and discover I used fish sticks. Another great find from Quick Cooking magazine.

- Break apart hash browns with a fork and set aside.
- Beat eggs and milk together in a large bowl.
- Add onion,dill, seasoned salt and pepper to taste.
- Mix in hash browns and cheese.
- Pour egg mixture into a greased 9x13-inch casserole.
- Set the fish sticks on top of the egg mixture- fitting them in neat rows.
- Bake in a preheated oven at 350 F for about 50-60 minutes or until top is golden and fish flakes when poked with a fork.
- Before serving, let rest a few minutes or it will be too hot& gloppy.
