ONE-POT CAJUN CHICKEN PASTA
You can have this creamy and comforting pasta with chicken on the table in just 30 minutes and best of all, it all cooks in one pot -- you won't even need to boil water first! It's packed with tender chicken thighs, bell peppers, and onions, and finished off with a creamy tomato sauce.

Steps:
- Heat the oil in large wide pot over medium-high heat. Add the chicken and Cajun seasoning and cook, stirring occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes.
- Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes. Stir in the garlic and cook until softened, 1 minute.
- Add the pasta, chicken broth and tomatoes and bring to a boil over medium-high heat. When it boils, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, about 15 minutes.
- Remove from the heat and add the cream cheese and 1 1/2 teaspoons kosher salt. Stir until the cream cheese is combined and melted. Don't worry if the sauce looks runny, it will thicken as it sits. Top with sliced scallions.

Steps:
- Set a large 1-gallon stock pot of water to a boil and add the kosher salt. Place the linguine in the pot and stir until the water returns to a boil. Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes.
- While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan. Once the butter has melted, season the chicken with 1/2 teaspoon of the salt and add the chicken to the pan. Sear the chicken until well browned on both sides, about 2 minutes. Remove from the pan and set aside. Add the onions and habaneros to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Add the cream, remaining 1 teaspoon of salt, and the chicken to the pan and bring to a boil. Cook the sauce until the cream is reduced by half, about 2 minutes. Add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes. Remove pan from the heat and add the green onions, Parmesan and parsley and toss to blend. Serve immediately.

KICKEN CHICKEN & PASTA
This is one of my family's favorite recipes. It's a spin off of my favorite spicey dish from a restaurant here in Racine. Just with my own touch. Not a recipe for anyone on a diet though. MMMM MMMM GOOD!!

Steps:
- Prepare sauce while chicken mixture is cooking. (or you can do it before hand and just keep warm) To make sauce add garlic powder, chicken base, cajun seasoning, caynne pepper, cream, half and half in a large pot and heat, stiring occasionally. When hot add parmesan, stirring regularly until cheese melts. Dissolved cornstarch in water and add to the sauce, continue to cook and stir until sauce thickens enough to coat back of spoon. Remove from heat and keep warm.
- Cook pasta as directed on box. I usually make the pasta while I'm making the chicken mixture.
- Prepare chicken by cutting it up into bite size pieces. Slice sausage on the bias. Julienne the red pepper. Heat up skillet with oil, add chicken. Cook chicken until half done (I like it spicey so I sprinkle a little cajun seasoning on chicken while it's cooking). Add andouille sausage and continue cooking until chicken is almost cooked through, about 5 minutes. Add red pepper and continue cooking until chicken is fully cooked.
- Add chicken mixture to your sauce and serve over pasta. Serve with bread sticks on the side or your favorite bread to soak up the delicious sauce. **Chicken base is very salty so if you have cajun seasoning with salt in it I would suggest to decrease the amount of chicken base to 1 1/2 tbls or omit the seasoning and add more cayenne pepper. OHH SO HOT!!!

- Place the chicken, zucchini, onion, garlic, chicken broth, tomato sauce, hot sauce, lemon juice, red pepper flakes and basil into your slow cooker and stir to combine. Cook on high for 3-4 hours or low for 6-8 hours until the chicken is cooked through and shreds easily.
- Turn the slow cooker to high if it isn’t already. Remove the chicken breasts to a cutting board and shred using two forks (should shred very easily). Return the shredded chicken to the slow cooker and stir in the cream cheese cubes and shredded Parmesan. Add the linguine (break up if necessary) and make sure it is covered by the liquid. Replace the lid and cook on high for 45 minutes or until the pasta is cooked, stirring every 15-20 minutes or so to break up the pasta.
