SIMPLE, SUCCULENT BBQ BABY BACK RIBS
I love this quick ribs recipe. The meat is tender, delicious and just falls off the bone. The kicked-up BBQ sauce really enhances the flavors. We did add the chili flakes for that extra bite, but these would be just as good without it. Great for your next cookout!

Steps:
- 1. Cut the sides of ribs into 'racks' of 4-5 ribs each.
- 2. Boil water in a large pot.
- 3. Add racks of ribs and boil for 45 minutes.
- 4. While waiting for the ribs to boil, mix the BBQ sauce, liquid smoke, cider vinegar, chili flakes and about 1 tsp of the steak spice.
- 5. Preheat BBQ.
- 6. Remove ribs from water and sprinkle both sides liberally with the steak spice and garlic powder.
- 7. Add ribs to BBQ and brush top side with sauce immediately.
- 8. Flip ribs over and sauce the other side.
- 9. Cook ribs on BBQ turning 1/4 turn at 2 min mark and flip again at 4 min mark. About 8 mins total for both sides. NOTE - my times are approximate here - You are only doing this to caramelize the sauce and put some BBQ char marks on the ribs - so use your eyes to decide when they look good - and feel free to baste with more sauce before serving so they have that 'wet and shiny' look!
- 10. Remove from BBQ and enjoy!
BARBECUED PULLED PORK SANDWICHES WITH HOMEMADE BBQ SAUCE AND PICKLES

- Place the pork in a baking dish. In a bowl, combine the sugar, Essence, salt, cumin, paprika, pepper, and cayenne. Rub the seasoning evenly over the pork to coat. Cover with plastic and refrigerate at least 4 hours or overnight.
- Preheat an oven or smoker to 225 degrees F.
- Bring the pork to room temperature and place in a roasting pan, fat side up. Slow cook in the oven, basting with the Wet Mop Basting Sauce every 45 minutes, until tender and the internal temperature reaches 160 degrees F. (The cooking should take about 6 to 7 hours.) Remove from the oven and let rest for 20 to 30 minutes.
- With a knife and fork or two forks, pull the meat apart into small slices or chunks. Toss with the Barbecue Sauce, to taste, and divide among the hamburger buns. Top with the coleslaw. Serve with the pickles and additional Barbecue Sauce on the side.
- The night before you cook the pork, combine all the ingredients in a large bowl and whisk well. Refrigerate and let the flavors blend overnight.
- In a bowl, combine all the ingredients and whisk well to dissolve the sugar. Place in a squeeze bottle and dress the pulled pork sandwiches to taste.
KICKED UP BURGER/SLIDER BBQ SAUCE
This recipe was created by my son Kegan O'Killion. It was inspired by a common condiment found in Utah.... Fry Sauce. Fry Sauce is a simple combination of ketchup and mayo. Some call it Thousand Island dressing...maybe! We fooled around with this basic concept and came up with a really tangy BBQ sauce that was presented to his 30 friends at work and they all raved about it.

- Mix the BBQ and mayo together and then mix all the rest of the ingredients together. You may want to play with the amount of garlic and lime juice. Also, I've made this with adobo sauce for extra heat and it came out great.

KICKED UP BBQ SAUCE
This is the best BBQ sauce I have every eaten. No kidding! Slightly sweet with some HEAT. Perfect for pulled pork. I actually came up with this recipe after overcooking a pork roast. I wanted an amazing sauce to cover up the fact the meat was dry and stringy. Did the trick. :)

- In a dutch oven or stock pot cook chopped bacon until translucent, not crispy. Add canned baked beans. Turn to Med-high heat and cook 5 minutes.
- Add brown sugar and stir until dissolved. Add ketchup, pickapeppa sauce, cayenne pepper and minced onion. Simmer on Medium for 5 minutes. Add 3 Tablespoons Honey and continue to simmer for additional 10 minutes. Stirring often.
- Turn heat off and let beans sit. They will thicken.
- Beans can be refrigerated and heated when ready to serve.
