Categories     appetizer

Time 4h35m

Yield approximately 4 pounds in shell and 2 pounds out of shell

Number Of Ingredients 3

2 pounds in-shell raw Virginia or Valencia peanuts
3 ounces kosher salt
3 gallons water

Steps:

  • Wash the peanuts in cool water until the water runs clear. Soak in cool water for 30 minutes to loosen any remaining dirt.
  • Drain and rinse the peanuts. Add the peanuts to a 12-quart pot along with the salt and 3 gallons of water. Stir well. Cover and cook on high for 4 hours. Check the texture of the peanut at this point for doneness. When done, boiled peanuts should have a similar texture to a cooked dry bean. It should hold its shape, but not crunch when bitten. Add more water throughout the cooking process, if needed. If necessary, continue cooking for 3 to 4 hours longer.
  • Drain the peanuts and store in a covered container in the refrigerator for up to 1 week.
  • *Cook's note: The cooking time can vary greatly depending on how fresh the peanuts are. The fresher the peanut, the less time it will take to cook.

Boiled Peanuts with Chile Salt image

Fresh shell-on peanuts are available only at harvest time and are hard to find, but unroasted shell-on peanuts work just as well and can be found in many supermarkets and online.

Provided by Tailor, Nashville, TN

Categories     Bon Appétit     snack     Appetizer     Vegan     Vegetarian     Peanut     Cocktail Party     Hors D'Oeuvre

Yield Makes about 4 cups

Number Of Ingredients 5

4 cups fresh (green) or raw (unroasted) shell-on peanuts (about 11.5 oz.)
4 tsp. kosher salt
2 Tbsp. coriander seeds, divided
1 Tbsp. flaky sea salt
1½ tsp. red chile powder, preferably Kashmiri

Steps:

  • Combine peanuts, kosher salt, and 1 Tbsp. coriander seeds in a medium saucepan. Pour in water to cover and stir to combine. Let peanuts sit in brine, stirring here and there, 3 hours.
  • Bring peanut mixture to a boil over medium-high heat. Reduce heat, partially cover pan, and simmer, adding more water as needed to keep peanuts covered, until peanuts are tender with no crunch left at all, 2 hours if fresh, 4-4½ hours if raw. Drain; let cool.
  • Meanwhile, lightly crush remaining 1 Tbsp. coriander seeds with a mortar and pestle (or gather on a cutting board and crush with a skillet). Mix in a small bowl with sea salt and chile powder.
  • Transfer peanuts to a bowl and toss with about three-fourths of spice mixture. Serve peanuts with remaining spice mixture alongside for sprinkling over.

Time 3h10m

Yield 10-12 serving(s)

Number Of Ingredients 3

4 lbs raw peanuts, still inside the shell
10 ounces salt
water

Steps:

  • Rinse all dirt off of peanuts inside of sink and drain.
  • Place peanuts inside a large pot that leaves about 4 to 6 inches of room at the top of the pot.
  • Cover peanuts with water leaving until the peanuts float to within 2 inches from the top of the pot.
  • Add salt. A good hint is that all the salt you add will not be directly absorbed by the peanuts. So you can be generous.
  • Bring to a rigorous boil and continue until soft. The time to boil depends on the peanuts and I think it is best done outside.
  • Allow peanuts to absorb brine untill desired salty taste. About 1 hour +or -.

INSTANT POT® SALT AND VINEGAR BOILED PEANUTS

Instant Pot® Salt and Vinegar Boiled Peanuts image

I've made Cajun boiled peanuts many times over the years but was wanting to do something different this time. While trying to come up with something, I looked over and saw a bag of salt and vinegar potato chips and thought... why not? Making boiled peanuts in the Instant Pot® is as easy as 1-2-3. Pour them in and walk away. No more babysitting the pot of boiling water on the stove.

BOILED PEANUTS RECIPE - 3 WAYS!

Boiled Peanuts RecipE - 3 Ways! image

A southern classic, here are three different ways to make boiled peanuts.

Provided by Rachelle Lucas

Categories     Appetizers

Time 50m

Number Of Ingredients 4

2 lbs raw peanuts
8 cups water
1/4 cup salt
1 Tbsp Seasoning (Optional)

Steps:

  • Traditional Boiled Peanuts: For boiling peanuts on the stovetop, you'll need a big sturdy pot. I like to use my dutch oven, but any big pot will do. You'll need 8 cups of water per 2 pounds of peanuts. Add ¼ cup of salt to the water and bring to a boil. Once it's got a rolling boil, reduce heat to low to simmer, cover, and wait. The peanuts will need to boil for 6 to 8 hours to soften the shell and cook the legume inside. I recommend checking on them every hour or so and giving them a good stir. The peanuts are done when you can easily break open the shell and the peanut inside has a soft bean-like texture.
  • Slow Cooker: Boiling peanuts in a slow cooker is the same exact measurements and recipe as above, only, you'll use a slow cooker instead of a pot on your stovetop. Once you set it to cover and simmer, check on them and give them a stir every one to two hours.
  • Pressure Cooker: This method is a time saver! For two pounds of peanuts, add ¼ cup of salt and enough water to cover them in your pressure cooking pot. This can be 6-8 cups of water. Add the lid and pressure cook on HI for 45 minutes. Let them naturally steam release, and then remove the lid.

  • Soak the peanuts in water for 30 minutes to loosen any dirt still clinging to the shells. Wash them thoroughly and drain. Repeat as necessary until the soaking water is clear.
  • Using your thumb and index finger, crack open one end of each peanut (the pointier side is easier to crack open) by lightly pressing it. This is so the brine can get inside the peanut shell.
  • Put the peanuts in a medium pot along with 6 cups water so the peanuts are totally submerged. Add 1 tablespoon sea salt (or to taste), 1 tablespoon Sichuan peppercorns, 1 small cinnamon stick, 3 bay leaves, and 1-2 star anise pods (use 1 for a lighter flavor or 2 for stronger flavor).
  • Bring the peanuts to a boil, cover, lower the heat, and simmer for 45 minutes to 1 hour. This will produce a slightly al dente peanut, which is the way we like it. Increase the time if you like your peanuts softer and periodically taste test test to check the consistency.

  • Dissolve 1/2 cup salt in 2 gallons water in a 3-gallon stockpot; add peanuts. (Weigh down peanuts, if desired, with a large plate or lid to ensure they're fully submerged.) Soak 8 hours or overnight.*
  • Drain water; refill pot with 2 gallons water and remaining 1 cup salt. Bring to a boil, reduce heat to medium-low, and simmer, covered, 5 to 8 hours or until peanuts are tender, adding water as needed to keep peanuts covered; stir occasionally. (South Carolina-style peanuts are very soft, but some cooks prefer them al dente.) When the peanuts have boiled 3 hours, check for texture and saltiness. If the peanuts are not salty enough, add salt in 1/4-cup increments, turn off heat, and let soak 1 hour. Check peanuts for seasoning every hour.
  • Drain and eat immediately or store (in the shell) in a sealed container in the refrigerator or freezer. Boiled peanuts will keep 7 days in the refrigerator, several months in the freezer.
