1 small red onion, halved lengthwise and thinly sliced crosswise
1/2 cup distilled white vinegar
1/4 teaspoon dried oregano
2/3 cup extra-virgin olive oil
2 Turkish bay leaves or 1 California
2 garlic cloves, smashed
1 teaspoon black peppercorns
2 pound large shrimp in shell (21 to 25 per pound), peeled, leaving tail intact, and deveined

Steps:

  • Toss together onion, vinegar, oregano, and 1 teaspoon salt in a shallow glass or ceramic dish.
  • Simmer oil, bay leaves, garlic, and peppercorns in a small saucepan 10 minutes, then let stand until ready to use.
  • Add shrimp to a medium pot of boiling salted water (2 tablespoons salt for 4 quarts water), then remove from heat and let stand, uncovered, until just cooked through, about 5 minutes. Drain well, then stir into onion mixture along with oil mixture.
  • Chill shrimp in escabeche, covered when cool, stirring occasionally, at least 12 hours. Discard bay leaves and serve shrimp cold or at room temperature.

1 can french-fried onion rings
4 ounces grated Gruyere
12 (4-inch) scallop shells
3 tablespoons butter
36 bay scallops
1 can Poke Salet Greens*, drained and heated or substitute canned spinach or collard greens
12 ounces spamrizo, recipe follows
*available in some markets
1 can SPAM(r)
2 to 3 small links cooked chorizo, or more to taste

Steps:

  • Preheat the broiler.
  • Add the onion rings and grated cheese to a food processor, and pulse until it forms a crumbly mixture. Set aside.
  • Clean the scallop shells, and spray them with non-stick cooking spray.
  • Heat a large skillet over medium-high heat. Add the butter, and let melt. Add the scallops, and saute until golden brown on 1 side, about 2 to 3 minutes. Flip the scallops with tongs or a fish spatula, and sear the other side until golden brown and cooked through. Remove pan from the heat and keep scallops warm.
  • Spoon enough heated Poke Salet greens into each shell to make a 1/8-inch high layer on the bottom of each shell.
  • Add approximately 2 tablespoons of heated spamrizo on top of the greens.
  • Place 3 scallops on top of the meat in each shell, and top with about 2 tablespoons of the onion/cheese mixture.
  • Place the shells under the broiler until the cheese mixture turns golden brown, about 2 minutes. Serve the shells hot on a bed of rock salt.
  • In a meat grinder, process SPAM(r) and chorizo until just blended. Do not over-mix the meat.

1 1/2 pounds medium shrimp (21 to 25 per pound), peeled and deveined
1/3 cup olive oil, plus 2 tablespoons
Kosher salt and freshly ground pepper
1 large red onion, peeled, halved, and thinly sliced
4 cloves garlic, thinly sliced
2 serrano chiles, thinly sliced
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 cups white wine vinegar
2 bay leaves
8 sprigs cilantro
1/2 cup thinly sliced radishes
3 tablespoons torn cilantro leaves

Steps:

  • Heat your grill to high. Toss the shrimp in a bowl with 2 tablespoons of olive oil and 1/2 teaspoon each of salt and pepper. Grill the shrimp for 1 to 2 minutes per side or until just cooked through. Transfer shrimp to a clean medium bowl.
  • Heat 1/3 cup olive oil in a medium saucepan over medium heat. When oil is hot, add the onion, garlic, and serrano chiles and cook until soft. Add the cumin and mustard seeds and cook for 1 minute. Add the vinegar, bay leaves, and cilantro and bring to a boil. Remove from the heat and immediately pour over the shrimp and stir to coat. Let cool to room temperature, cover, and then refrigerate for at least 8 hours or overnight, stirring a few times during that time. Transfer the escabeche, with a slotted spoon, to a platter and garnish with sliced radishes and torn cilantro.

3 (12 ounce) cans beer
2 tablespoons Old Bay Seasoning or 2 tablespoons crab boil seasoning (use powdered crab boil, not liquid)
3/4 cup fat-free mayonnaise
1/4 cup Dijon mustard
1/4 cup key lime juice (fresh or bottled)
1/4 teaspoon fresh ground pepper

Steps:

  • To make Key Lime Mustard: add all ingredients to a small bowl; stir well to combine; refrigerate until ready to serve.
  • To make shrimp: rinse and drain shrimp.
  • Add beer and Old Bay seasoning to a large pot; bring to a boil; add shrimp.
  • Cook 3-5 minutes or until shrimp turn pink.
  • Drain shrimp Serve immediately with Key Lime Mustard.

1 pound fresh shrimp, peeled and deveined
1/3 cup olive oil
2 bay leaves
1 teaspoon cumin
1/4 teaspoon ground nutmeg
4 cloves garlic, smashed
1 tablespoon paprika
1 cup white vinegar
2 small onions, thinly sliced
4 jalapeno chiles, sliced in disks
Sea salt, to taste
Freshly ground black pepper, to taste
1 head Romaine lettuce leaves
8 radishes, sliced
16 green olives, sliced

Steps:

  • Saute the shrimp, a few at a time, in a little of the olive oil until lightly brown, adding more oil as needed. Place in a covered dish or jar.
  • In a saucepan, combine the remaining oil with the bay leaf, cumin, nutmeg, garlic, paprika, vinegar, onions, chiles, salt, and pepper to taste. Bring to a boil slowly and simmer until the onions are tender, about 5 minutes.
  • Pour the vinegar mixture over the shrimp. Chill overnight.
  • Serve on Romaine leaves, garnished with radishes and green olives.

Steps:

  • Heat your grill to high.
  • Toss the shrimp in a bowl with 2 tablespoons of olive oil and 1/2 teaspoon each of salt and pepper.
  • Grill the shrimp for 1 to 2 minutes per side or until just cooked through.
  • Transfer shrimp to a clean medium bowl.

1 lemon, juice of
2 tablespoons Old Bay Seasoning
1 tablespoon chopped garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
12 dashes Tabasco sauce
1 cup mayonnaise, with
1 teaspoon sugar, added
3 tablespoons Dijon mustard or 3 tablespoons spicy brown mustard
1/2 cup lime juice
3 dashes Tabasco sauce
salt and black pepper

Steps:

  • For Shrimp Boil, add all ingredients to a large stock pot. Bring to boil and add shrimp. Stir and cook until JUST pink -- around 2 minutes.
  • Strain in colander. At this point, you can either chill them down or serve warm.
  • For the Key Lime Mustard Sauce, mix all ingredients in a small bowl. Chill for at least 2 hours, or longer.

Traditionally escabeche is made by pickling fried fish. Susser's quick version features sautéed shrimp in a cilantro marinade with tangy grilled pineapple. Liberal use of local citrus and tropical fruits and juices makes it easy for Allen Susser to add bright flavor to both savory and sweet dishes without using lots of fat. His philosophy at Chef Allen's in Miami is simple: don't try to cut out oil and rich foods altogether; just use small amounts and make sure they're top quality. This low calorie (161 a serving) - low fat (4.6 gm) recipe was created by Allen Susser, the famed Caribbean-Latin-Euro fusionist of Miami's Chef Allen's. WINE: WINE Because ginger, lemons and spices can overwhelm dry, subtle wines, look for a simpler aromatic white, such as a West Coast Riesling.   • Heat the oil in a large nonstick skillet. Season the shrimp with salt and pepper and cook over high heat for 1 minute. Stir in the orange juice, 2 tablespoons of the lime juice, the scallion and cilantro, transfer to a bowl and let cool.
  • Meanwhile, in a bowl, combine the remaining 2 tablespoons lime juice with the ginger, sesame oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Brush the pineapple with the mixture and let stand at room temperature for 30 minutes.
  • In a dry skillet, toast the sesame seeds over high heat, shaking the pan, until fragrant, about 2 minutes.
  • Light a grill or preheat the broiler. Grill or broil the pineapple for about 2 minutes per side, turning once, until lightly browned. Cut each quarter crosswise into 6 pieces and arrange the pieces on 6 plates. Set 2 shrimp on each plate, spoon on a little of the orange juice marinade and sprinkle with the sesame seeds.
