TURKEY MEATBALLS

These all purpose turkey meatballs are perfect for a light weeknight dinner, an amazing snack, or even us for your weekly meal prep recipe. These are Paleo, Keto, Whole30, and Gluten Free.

2 lbs ground turkey
3 tbsp tomato sauce
1/3 cup chopped yellow onion
1/2 tsp onion powder
1/2 tsp dried parsley
1 tsp oregano
1 tsp salt
1/4 tsp pepper (or more to taste)
1 1/2 tbsp olive oil
1 large egg
3/4 cup almond flour
1-2 cloves finely chopped garlic
1 tsp coconut aminos

Steps:

  • Preheat oven to 375 F. Coat a rimmed baking sheet with nonstick cooking spray.
  • In a large mixing bowl, add the ground turkey, almond flour, salt, garlic, onion powder, oregano, pepper, and parsley. Stir well to combine.
  • In a small bowl, beat the egg, then add it along with the coconut aminos, onions and tomato sauce to the meat mixture. Mix together with hands until evenly combined.
  • Using a spoon, scoop the meat and shape into 1 1/2-inch meatballs (size of a golf balls).
  • Transfer and arrange on the prepared baking sheet. You should have about 18-20 meatballs total.
  • Brush the tops of the meatballs with the olive oil.
  • Bake for 15-20 minutes, or until the internal temperature of the meatballs read 165 F on a meat thermometer.
  • Serve as an appetizer or add a veggie and turn this into a complete meal. I love adding this on top of salads for a great meal-prep lunch option.

1 pound ground turkey
1 cup crushed pork rinds
½ cup shredded Parmesan cheese
1 egg
1 tablespoon chopped fresh parsley
1 teaspoon minced garlic
1 teaspoon onion powder
1 teaspoon Italian seasoning
⅛ teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Combine ground turkey, pork rinds, Parmesan cheese, egg, parsley, garlic, onion powder, Italian seasoning, and red pepper flakes in a large bowl. Mix with your hands until well combined.
  • Scoop out meat mixture to form twelve 1 1/2-inch meatballs. Place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink at the center and juices run clear, about 20 minutes.

Steps:

  • Combine ground beef, egg, Parmesan cheese, flaxseed, oregano, salt, and pepper in a bowl; mix until well combined. Roll mixture into golf ball-size meatballs.

Turkey meat (thighs or breasts) 820 g/29 oz
1 small onion 55 g/1.94 oz
Almond flour 1/4 cup/25 g/0.88 oz
Parmesan cheese 1/4 cup/25 g/0.88 oz
1 egg
Salt 1/2 tsp
Pepper 1/4 tsp
Powdered garlic 1/4 tsp
Ground paprika 1/2 tsp
Fresh parsley
Fresh or dried basil

Steps:

  • Preheat the oven to 175 C/350 F.
  • Combine all ingredients in food processor and grind for 2 minutes or until mixture suitable for meatballs is prepared. If you don't have food processor, use ground meat and combine everything in the bowl.
  • Form meatballs with the spoon, ice/cream scooper or with your hands. It's easier if you have wet hands.
  • Place meatballs on a sheet pan layered with a parchment paper and bake in a preheated oven on 175 C/350 F for 40 - 50 minutes.
  • Serve with salad or your favorite sauce.
  • Enjoy!

1/2 cup chopped onion

1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon ground ginger
1 tablespoon grated gingerroot
1/3 cup dry breadcrumbs
1 egg
1 lb ground turkey
2 tablespoons olive oil
1 tablespoon butter
1/2 cup chicken broth
1 (12 ounce) jar mango chutney

Steps:

  • In a large saucepan, heat 1 tablespoon olive oil over medium heat.
  • Add onion and garlic; cook and stir for 5 minutes.
  • Remove from heat and place onion mixture in large bowl.
  • Add salt, pepper, ginger, ginger root, bread crumbs and eggs and mix well.
  • Add turkey and mix gently until combined.
  • Roll into 1 ½ inch balls, cover and chill for 2-3 hours.
  • When ready to eat, combine 2 tablespoons olive oil and butter in large saucepan.
  • Cook meatballs , turning occasionally, until tender and golden brown, about 10-12 minutes.
  • Add broth and chutney to skillet and bring to a simmer.
  • Place meatballs and sauce in chafing dish or slow cooker on warm.
