13 Slices Thick Cut Bacon
1 Cup Chopped Onion
1 Cup Chopped Celery
2 - 3 Cans Fancy Whole Baby Clams (w/juice)
2 Cups Chicken Broth
2 Cups Heavy Whipping Cream
1 tsp Ground Thyme
1 tsp Salt
1 tsp Pepper

Steps:

  • Cook bacon until crispy (reserve bacon grease in the pan)
  • Chop onion and celery
  • Place onion and celery in bacon grease and cook until soft (do not discard the grease it will go in the crockpot with the veggies)
  • After veggies are soft pour all ingredients (including crumbled bacon) into the crockpot
  • Cook on low for 4-6 hours or on High for 2 hours.

4 (6 1/2 ounce) cans minced clams with juice
1/2 lb salt pork or 1/2 lb bacon, diced
1 cup chopped onion
6 -8 medium potatoes, peeled and cubed
3 cups water
1 bay leaf
3 1/2 teaspoons salt
1/4 teaspoon pepper
4 cups half-and-half cream or 4 cups milk
3 -4 tablespoons cornstarch
chopped fresh parsley

Steps:

  • In skillet, saute salt pork or bacon and onion until golden brown; drain. Put into slow cooker with clams. Add all remaining ingredients, except milk, cornstarch, except parsley.
  • Cover and cook on high 4 hours or until vegetables are tender. During the last hour of cooking, combine 1 cup of milk with the cornstarch. Add cornstarch mixture and the remaining milk and stir well; heat through. Remove Bay Leaf before serving.
  • Top each serving with a little chopped parsley and serve with Oyster crackers or crusty French bread.

1/4 lb salt pork or 1/4 lb bacon
1 medium onion, chopped
3 -4 potatoes, pared and cubed
1 1/2 cups water
1 3/4 teaspoons salt
1/8 teaspoon pepper
2 cups half-and-half or 2 cups milk
1 1/2-2 tablespoons cornstarch (optional)

Steps:

  • Saute pork or bacon and onion until golden brown;drain.
  • Put clams in crock pot with bacon.
  • Add all remaining ingredients, except milk or half-and-half.
  • Cover and cook on High 3-4 hours.
  • Add 1 cup milk or half-and-half and cornstarch last hour of cooking.
  • Add remaining milk or half and half before serving.
  • STOVE TOP INSTRUCTIONS: Place all ingredients EXCEPT milk and cornstarch in kettle.
  • Simmer on low heat for 45 minutes.
  • Mix cornstarch into milk and add to kettle.
  • DO NOT BOIL.
  • Heat to warm, then serve.
