Loaded with sweet, tropical flavors, this delicious Luau Salad is BETTER than it's Cheesecake Factory double!

3-4 leaves boston lettuce (or bib lettuce)
1/2 cup white meat chicken (already cooked, or rotisserie chicken works well)
1 cup pineapple (fresh and sliced)
1/2 cup mandarin oranges
1 green onion (sliced)
1 stalk celery (sliced)
1 red pepper (sliced)
1/2 cup wonton strips
1/4 cup macadamia nuts (chopped)
1/2 tsp sesame seeds
1/4 cup pineapple juice
2 tbsp balsamic vinegar
2 tbsp sesame oil
1 tbsp honey
salt and pepper to taste (a few grinds of each)

Steps:

  • On a dinner plate, layer a large, uncut lettuce leaf, and sprinkle with a bit of chicken, pineapple, oranges, onion, celery and wonton strips. Repeat this process 3-4 times until you've used all of your ingredients. Top the salad with the macadamia nuts and sprinkle with sesame seeds.
  • For dressing: In a large glass measuring cup, measure out the juice, vinegar, oil, honey, salt and pepper. Whisk to combine all ingredients. Pour over salad. Enjoy right away.

1 Red Bell Pepper (sliced into thin strips)

1 1/2 cups fresh Green Beans (blanched, cut into 3-inch pieces)
1 Cucumber (sliced)
1 Red Onion (cut into small pieces)
1 fresh Mango (cut into small pieces)
1 teaspoon Salt
1/4 teaspoon ground Black Pepper
1 cup Balsamic Vinaigrette
1/4 cup seasoned Rice Vinegar
1/4 cup granulated Sugar
1 teaspoon Sesame Oil
8 6-inch Egg Roll Wraps, fried crisp
4 ounces Sweet and Sour Sauce
4 ounces Macadamia Nuts (toasted and chopped)
1 tablespoon Sesame Seeds (toasted)
4 ounces Carrots (peeled, sliced into 1-inch thin strips)
1 ounce Green Onion (sliced into 1-inch thin strips)

Steps:

  • Place the lettuce mix, chicken, bell peppers, green beans, cucumber slices, red onion, and mango, into a large mixing bowl.
  • Season the ingredients with salt and pepper.
  • Whisk together the balsamic vinaigrette (your favorite choice), seasoned rice vinegar, granulated sugar, and sesame oil.
  • Drizzle the dressing into the bowl with the salad ingredients and gently toss together.
  • Brush a little sweet and sour sauce onto each crispy egg roll wrapper. Build the salad in each serving bowl with alternating layers of salad mixture, a crispy glazed egg roll wrapper, more salad mixture, another crispy glazed egg roll wrapper and then the remaining salad mixture.

I feel sad for anyone who has never been to a Cheesecake Factory restaurant. This cheesecake is out of this world! I think you will find the nut crust quite unusual. Sometimes I double the crust portion of the recipe just so I can have a thicker crust.

1/4 cup finely chopped pecans
1/4 cup finely chopped almonds
1/4 cup finely chopped walnuts
3/4 cup finely chopped vanilla wafer
2 tablespoons melted butter
1 1/2 lbs cream cheese
1 1/3 cups sugar
5 large eggs
16 ounces sour cream
1/4 cup flour
2 teaspoons vanilla extract
2 teaspoons lemon juice

Steps:

  • Crust: Mix all nuts and vanilla wafer crumbs with melted butter and press into a 9 inch buttered springform pan, trying to line the sides as much as possible about 1 1/2" up the sides of the pan, set aside.
  • Cheesecake: All above ingredients should be at room temperature before your begin.
  • Start by beating the cream cheese until light and fluffy.
  • Keep the mixer on a low setting throughout the beating and mixing process.
  • Add the sugar a little at a time and continue beating until creamy.
  • Add one egg at a time and beat after each egg.
  • When eggs have been mixed into the cream cheese add flour, vanilla and lemon juice, mix well.
  • Add the sour cream last and beat well.
  • Pour cream cheese into the spring pan.
  • Place on the top rack in the middle of a 325 degrees preheated oven for one hour and 15 minutes.
  • When time is up, turn oven off, prop open oven door and leave in oven for one hour.
  • After one hour, remove from oven.
  • Let cool enough before the cheesecake is put into the refrigerator for 24 hours.
  • A cheesecake should season.
  • The wait is worth it.
  • The flavor ripens and becomes enriched.
