2 Beef top sirloin steak cubed
2 boxes beef broth (32 oz each)
2 sweet onions chopped
1 cup sauerkraut drained
3-4 cups bok choy chopped
2 cups whipping cream
1 cup cheddar cheese shredded
1/4 cup parmesan cheese shredded
2 tsp kosher salt
1 tbsp italian spices
1 tbsp granulated garlic

Steps:

  • Place sirloin on wire rack in instant pot and add 2 boxes beef broth. (A half gallon of homemade broth is preferable.). Cook for 10 minutes. Cube sirloin and add onion and spices. Cook 20 minutes more and add remaining ingredients (sauerkraut, boy Choy, whipping cream, and cheeses) and cook for 10 more minutes. Serve. Can be served with garlic toast for those not Keto-ing.

2 tablespoons coconut oil
3 cloves garlic, minced, or more to taste
1 medium head bok choy, stems and greens chopped and separated
2 (8 ounce) packages sliced fresh mushrooms
1 cup chopped fresh parsley
1 teaspoon ground cumin, or more to taste
1 teaspoon pink Himalayan salt, or to taste

Steps:

  • Heat lard and coconut oil in a large skillet over medium heat. Add garlic and cook until browned and fragrant, 1 to 3 minutes. Add bok choy stems and cook until they are slightly soft on the edges, about 5 minutes. Add bok choy greens and mushrooms. Cook and stir until greens are wilted and mushrooms are soft, about 5 minutes.
  • Stir in parsley and season with cumin and salt. Lower heat and simmer for 2 more minutes.

1 lb beef flank steak or 1 lb boneless sirloin steak
1 tablespoon vegetable oil
1 teaspoon cornstarch
1 teaspoon salt
1 teaspoon sugar
1 teaspoon soy sauce (light or dark)
1/8 teaspoon white pepper
1 lb bok choy (about 7 large stalks)
2 green onions (with tops)
2 tablespoons cornstarch
2 tablespoons cold water
3 tablespoons vegetable oil
1 teaspoon gingerroot, finely chopped
1 teaspoon garlic, finely chopped
3 tablespoons vegetable oil
1/2 teaspoon salt
1/2 cup chicken broth
2 tablespoons oyster sauce or 1 tablespoon dark soy sauce

Steps:

  • Trim fat from beef; cut beef with grain into 2-inch strips.
  • Cut strips across grain into 1/8-inch slices.
  • Toss beef, 1 tablespoon vegetable oil, 1 teaspoon cornstarch, 1 teaspoon salt, the sugar, soy sauce and white pepper in glass or plastic bowl.
  • Cover and refrigerate 30 minutes.
  • Separate bok choy leaves from stems.
  • Cut leaves into 2-inch pieces; cut stems diagonally into 1/4-inch slices (do not combine leaves and stems).
  • Cut green onions into 2-inch pieces.
  • Mix 2 tablespoons cornstarch and the water.
  • Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled in wok.
  • Add 3 tablespoons vegetable oil; rotate wok to coat side.
  • Add beef, gingerroot and garlic; stir-fry until beef is brown, about 3 minutes.
  • Remove beef from wok.
  • Add 3 tablespoons vegetable oil to wok; rotate to coat side.
  • Add bok choy stems; stir-fry 1 minute.
  • Stir in bok choy leaves and 1/8 teaspoon salt.
  • Stir in chicken broth; heat to boiling.
  • Stir in cornstarch mixture; cook and stir until thickened, about 15 seconds.
  • Stir in beef and oyster sauce; heat to boiling.
  • Garnish with green onions.

2 garlic cloves, crushed
8 ounces rump steak, thinly sliced
2 tablespoons soy sauce
1 tablespoon sweet sherry
2 tablespoons fresh basil, shopped
2 teaspoons sesame oil

Steps:

  • Wash the bok choy and drain it. Cut the leaves into thin strips.
  • Heat 1 tablespoon oil in a frying pan or wok; add the garlic and stir-fry for 30 seconds.
  • Heat the remaining oil; add the meat in small batches and stir-fry for 3 minutes over high heat until the meat has browned but is not cooked through. Remove the meat from the pan.
  • Stir-fry the bok choy for 30 seconds or until it is just wilted.
  • Add the meat, soy sauce and sherry.
  • Sir-fry for 2 to 3 minutes or until the meat is tender.
  • Add the basil and sesame oil and toss well.
  • Serve immediately.
  • Garnish with strips of red pepper, if desired.
