1 garlic clove, minced
1 star anise

Steps:

  • Caramelize 3/4 cup sugar in a heavy pot.
  • Gradually stir in the rest of the ingredients. Bring to a boil, lower heat and simmer for 10 minutes.
  • Cool and strain through cheesecloth.

BRAISED TOFU IN CARAMEL SAUCE



Braised Tofu in Caramel Sauce image

This is a vegetarian take on a classic of Vietnamese restaurants, ca kho, or fish braised in caramel sauce. Here, tofu, firm and rich, absorbs the velvety sauce and heightens its flavor. Vietnamese caramel sauce - nuoc mau - is easier to make than you might think, though it can be a dramatic process. In essence what you're doing is melting sugar in a pan, then allowing it nearly to burn and finally adding water and soy sauce in order to arrest the process at a dark and golden bittersweet flavor that is at the heart of Vietnamese cooking.

1 1-pound block firm tofu
1 cup white sugar
5 shallots, peeled and minced
4 cloves garlic, peeled and minced
2 tablespoons peeled and minced ginger
3 tablespoons soy sauce
1/2 bunch scallions, white and light-green parts only, thinly sliced
Freshly ground black pepper
Cooked jasmine rice, for serving (optional)

Steps:

  • Slice the tofu in half along its length and then each portion into two thick slices. Place the slices between paper towels to drain, replacing towels as needed.
  • Meanwhile, dissolve the sugar in 1/4 cup water and cook in a small saucepan over medium-low heat until small bubbles begin to appear around the edges of the pan. Carefully swirl the solution, but do not stir. Continue to heat, as bubbles move inward toward the center of the pan and the solution turns darker, 20 to 35 minutes, until the syrup has become a deep, golden caramel color. Carefully add 1/2 cup water to this mixture. (It will sputter violently. If some sugar crystallizes at this point, carefully stir the mixture with a metal spoon. The sugar will remelt.) Turn off the heat and allow to cool slightly.
  • Transfer the caramel sauce to a wide saucepan, turn the heat to medium and add the shallots, cooking for about 2 minutes. Add the garlic and ginger and stir again, cooking for about 1 minute. Now stir in the soy sauce. Simmer and stir until the mixture is viscous and the vegetables are well coated, about 10 minutes.
  • Place the tofu in the sauce in a single layer and simmer uncovered for 7 minutes. Using a spatula, turn the pieces over. Simmer for 3 or 4 minutes more and then transfer to a warmed platter. Pour the sauce over the tofu and sprinkle with scallions and black pepper. Serve with white rice.

This is Indonesian soy sauce; slightly thicker and sweeter than regular soy sauce. If you cannot buy commercial Ketjap manis in your local market, you can follow this recipe. I use it in my "Barbecued Roast Beef" recipe, for a marinade base, and in spicy peanut sauce.

Yield 3 cups of ketjap manis

Number Of Ingredients 7

1 cup dark brown sugar, packed
1 cup water
1 cup soy sauce
7 tablespoons dark molasses (treacle for my Aussie friends!)
1 teaspoon grated fresh ginger
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine sugar and water in 2 quart saucepan.
  • Bring to simmer over medium heat, stirring constantly just until sugar dissolves.
  • Increase heat to high and continue cooking until syrup reaches 200 degrees on a candy thermometer, about 5 minutes.
  • Reduce heat to low.
  • Stir in remaining ingredients and simmer 3 minutes.
  • This will keep 2-3 months tightly covered in the refrigerator.

This came from "The Indonesian Kitchen". It is easy and tastes better than the store bought as my daughter says. This can be used in recipes or as a dipping sauce all on it's own.

2 1/2 cups brown sugar
2 3/4 cups dark soy sauce
3 cloves garlic, mashed
1/2 teaspoon star anise pods
2 slices fresh ginger
1/2 cup water

Steps:

  • Carmelize the sugar in saucepan over low heat, stirring frequently.
  • When the sugar has melted, add the remaining ingredients.
  • Bring to a boil, stirring constantly until the sugar has completely dissolved.
  • Lower heat and cook for 10 minutes more.
  • Removed from heat and allow to cool.
  • Pour into a bottle and store in the fridge.
  • This can be stored for several months.
  • I do not strain it as the flavor improves with time.

If you enjoy Asian food then Ketjap Manis is a great sauce to have in your fridge. It's dark and sweet and really adds to Satay or Sunflower Butter Sauces. I don't like using sugar so I came up with this sauce using Agave Syrup in its place. I have tried the commercial Ketjap and it's thicker then mine.

2/3 cup dark agave syrup
3/4 cup filtered water
2/3 cup tamari soy sauce
5 tablespoons molasses
1 teaspoon grated ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground black pepper

Steps:

  • Combine the agave and water in a small sauce pan.
  • Bring to a boil.
  • Using a candy thermometer bring the mixture up to 200'F.
  • Once it reaches that temperature reduce the heat to low.
  • Stir in the rest of the ingredients and simmer for 5 minutes.
  • Store in the fridge for 2-3 months in a jar with a lid.
  • Bon Appetit!

5 cups cold, cooked rice (preferably cooked a day in advance)
1/4 pound long Chinese green beans, available in Oriental markets, cut into 3-inch lengths, or use regular green beans, stringed as necessary and cut into 3-inch lengths
Salt to taste, if desired
3 tablespoons corn, peanut or vegetable oil
1 cup celery cut on the diagonal into thin slices
1 1/2 cups carrot cut into thin, julienne strips, each about 2 inches long
1 cup broccoli cut or broken into small, bite-size pieces
2 cups finely shredded bok choy or Chinese cabbage
1 cup snow peas cut lengthwise into thin, julienne strips
1/3 cup shredded scallions or green onions cut into 2-inch lengths
3 tablespoons hot green or red pepper, cored and seeded and cut into very thin, julienne strips
3 eggs
3 tablespoons ketjap manis, a sweet Indonesian soy sauce, or use an equal amount of soy sauce blended with 3 tablespoons sugar
1/4 pound bean sprouts
1/2 cup finely chopped scallions or green onions

Steps:

  • Prepare the rice as indicated and have it ready.
  • In a kettle, bring enough water to the boil to cover the green beans when they are added. Add salt to taste. Add the beans and cook about two minutes. Drain and set aside.
  • Heat the oil in a wok or skillet until it is almost smoking. Add the celery and carrot and cook, stirring, about 45 seconds.
  • Add the broccoli and the drained long beans and cook about 15 seconds, stirring. Add the bok choy and snow peas and cook about 30 seconds, stirring. Add the scallions or green onions and the pepper. Cook 10 seconds.
  • Add the rice, stirring rapidly, and cook until thoroughly heated without browning.
  • Do the following as quickly as possible: Make a well in the center of the rice and add the eggs, stirring rapidly and constantly. When they are barely scrambled, start stirring the rice into the eggs, stirring in a circular fashion, incorporating all of the rice.
  • Sprinkle with ketjap manis and salt, add the bean sprouts and cook, stirring and tossing, about 30 seconds. Sprinkle with the chopped scallions and serve immediately.
