- Caramelize 3/4 cup sugar in a heavy pot.
- Gradually stir in the rest of the ingredients. Bring to a boil, lower heat and simmer for 10 minutes.

INDONESIAN SWEET SOY SAUCE (KECAP MANIS)
This Indonesian version of soy sauce is thicker, sweeter and more complex than what you're used to. Try sautéeing green beans with ginger and a dash of kecap manis. From EatingWell magazine, July/August 1997 and posted for ZWT6.

Steps:
- Half-fill a large bowl with water and ice cubes and set it beside the stove.
- Combine sugar and water in a heavy 3-quart saucepan. Bring to a boil over medium-high heat, stirring occasionally to dissolve sugar. Once it starts boiling, cook without stirring until syrup turns amber, 5 to 10 minutes. Immediately set saucepan in ice water for about 30 seconds.
- Add soy sauce, star anise and garlic to cooled caramel.
- Return pan to medium-high heat and bring to a simmer, stirring occasionally. Reduce heat to low and simmer for 10 minutes.
- Remove from heat and let cool completely. Discard garlic. Transfer to a jar (sterilized if keeping longer than 1 week) and let mellow overnight in the refrigerator before using.
- Make Ahead Tip: Cover and refrigerate for up to 2 weeks or freeze for up to 6 months.
KETJAP MANIS
This is Indonesian soy sauce; slightly thicker and sweeter than regular soy sauce. If you cannot buy commercial Ketjap manis in your local market, you can follow this recipe. I use it in my "Barbecued Roast Beef" recipe, for a marinade base, and in spicy peanut sauce.

Steps:
- Combine sugar and water in 2 quart saucepan.
- Bring to simmer over medium heat, stirring constantly just until sugar dissolves.
- Increase heat to high and continue cooking until syrup reaches 200 degrees on a candy thermometer, about 5 minutes.
- Reduce heat to low.
- Stir in remaining ingredients and simmer 3 minutes.
- This will keep 2-3 months tightly covered in the refrigerator.

KETJAP MANIS PLUS STIR FRY BEEF
I was short of time and wanted a tasty easy quick dish - this worked for me I hope if you try it you will like it too. I served this over a bought kit of "Pad Thai", although not as good as home made Pad Thai it was delicious none the less

CHEF JOEY'S KETJAP MANIS
If you enjoy Asian food then Ketjap Manis is a great sauce to have in your fridge. It's dark and sweet and really adds to Satay or Sunflower Butter Sauces. I don't like using sugar so I came up with this sauce using Agave Syrup in its place. I have tried the commercial Ketjap and it's thicker then mine.

Steps:
- Combine the agave and water in a small sauce pan.
- Bring to a boil.
- Using a candy thermometer bring the mixture up to 200'F.
- Once it reaches that temperature reduce the heat to low.
- Stir in the rest of the ingredients and simmer for 5 minutes.
- Store in the fridge for 2-3 months in a jar with a lid.

Ketjap Manis is a sweet soy sauce - there are several recipes for it here on Zaar or you may purchase it ready made. It adds another dimension to the spinach. Hope you enjoy it as much as we did

Steps:
- Heat a large skillet or wok, spray wiht Pam.
- Over medium heat brown the onions (apprx 8 minutes).
- Add mushrooms and cook until the are lightly browned(4 min).
- Add spinach and flip it getting the mushrooms & onions all through it.
- Do not over cook just cook it long enough to heat through & wilt (3 min).
- Add the ketjap manis and stir through (2 minutes).
- Serve.
