1 1/2 cups chopped pecans
1 cup miniature semisweet chocolate chips
1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup packed light brown sugar
4 large eggs, lightly beaten
1/4 cup (2 oz.) unsalted butter, melted
2 tablespoons all-purpose flour
2 tablespoons (1 oz.) bourbon
2 teaspoons vanilla extract
1/2 teaspoon table salt
Whipped cream and chocolate shavings

Steps:

  • Preheat oven to 325°F. Fit piecrust into a 9-inch metal pie plate; crimp edges. Sprinkle pecans and chocolate chips evenly over piecrust.
  • Whisk together corn syrup, granulated sugar, and brown sugar in a saucepan. Bring to a boil over medium-high; boil, whisking occasionally, until sugars are dissolved, about 5 minutes.
  • Whisk together eggs, butter, flour, bourbon, vanilla, and salt in a heatproof bowl. Slowly pour 1/3 cup of the hot corn syrup mixture into egg mixture, whisking constantly until fully incorporated. Whisk in remaining hot corn syrup mixture until smooth. Pour filling over pecan mixture in piecrust.
  • Bake in preheated oven until pie edges are set and begin to puff up, but pie center is still slightly jiggly, 45 to 50 minutes. Transfer to a wire rack; let cool completely to room temperature, about 2 hours. Slice and garnish with whipped cream and chocolate shavings.

Steps:

  • Gather the ingredients. Heat the oven to 350 F.

1/2 cup margarine or 1/2 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 cup butter, melted and cooled
1 egg
1/2 cup sugar
1/4 cup all-purpose flour
1/2 cup semi-sweet chocolate chips
3/4 cup chopped pecans
1 tablespoon kentucky Bourbon (optional)

Steps:

  • For the Cookies: Mix margarine, sugars, and egg. Stir in flour and baking soda. Mix until crumbly.
  • For the Filling: Beat eggs with cooled butter. Add flour and sugar. Beat until mixed well. Stir in pecans, chocolate, and bourbon.
  • Making the Cookies: Preheat oven to 375 degrees. Spray a muffin pan with a non-stick cooking spray. Place a thin layer of the cookie dough in the bottom of each individual muffin cup. Press the dough so it becomes a "Pie Crust". Add in the filling so that it comes up to fill about half of each individual muffin cup. Press the filling down lightly with a spoon so it settles in the pan. Place another thin layer of cookie dough on top of the filling so it becomes a lid. Bake approximately 12 minutes or until tops are golden brown. Let cool for 5 minutes. Loosen edges of cookies by working a knife around the inside of each individual muffin cup. Invert muffin pan onto cookie sheet to remove cookies. While still warm, press cookies down to flatten into a traditional cookie shape. Serve and enjoy.

1 unbaked pastry shell (9 inches)
1 egg white, lightly beaten
