KENTUCKY CHOCOLATE WALNUT PIE
With a flaky, buttery crust and rich filling, this Kentucky Chocolate Walnut Pie is a state favorite, especially on Derby Day! It's amazing with a scoop of vanilla ice cream on the side!

Steps:
- Preheat oven to 325 degrees F. Prepare and roll out a pie crust, then transfer it to a 9-inch pie plate. Trim and crimp the edges of the crust.
- Add the chopped walnuts and chocolate chips to the pie shell.
- In a large bowl, whisk the granulated sugar, brown sugar, flour, melted butter, eggs, vanilla, and salt, then pour into the pie crust over the chocolate chips and nuts.
- Bake for 50 to 60 minutes until the pie is looking set and doesn't jiggle on top. You may need to cover the edges of the crust with a pie guard or foil if it is browning too much before the middle looks done.
- Cool for 2 hours before slicing and serving.

- Place cookie sheet on oven rack. Heat oven to 375°F. In large bowl, beat sugar, corn syrup, butter, bourbon, salt and eggs with whisk or electric mixer until well blended. Stir in walnuts and chocolate chips. Pour into frozen pie crust.
- Bake on cookie sheet 35 to 40 minutes or until center is set. Cool completely, about 3 hours.
- Just before serving, top with whipped cream.

CHOCOLATE WALNUT KENTUCKY PIE

- 1. Pulse the flour, sugar, salt and baking powder in the bowl of a food processor until combined. Add half of the butter and pulse until the mixture resembles fine cornmeal. Add the remaining butter and continue pulsing until it is the size of small peas. Add the bourbon and pulse until moistened. Pour in 1 to 2 tablespoons ice water, a bit at a time, until the dough just comes together and holds its shape when squeezed. Turn the dough out onto a large sheet of plastic wrap, gather into a disc and wrap well. Chill until firm, at least 1 hour or overnight.
- 2. Preheat the oven to 350 degrees F. Roll out the dough on a lightly-floured surface to an 11-inch circle and fit into a 9-inch pie plate, crimping the edges. Chill to set the crust, 20 minutes.
- 3. Prick the bottom and sides of the crust with a fork. Fit the crust with aluminum foil and weigh it down with pie weights or dry beans. Bake until the edge of the crust is just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is lightly golden and no longer shiny, 10 to 15 minutes longer. Cool completely.
- 1. Pour the walnuts and chocolate into the bottom of the cooled crust. Combine the sugar, flour, butter and salt in a small bowl until smooth and set aside. Lightly whisk together the corn syrup, bourbon, vanilla and eggs in a large bowl. Stir together the hot water and baking soda before whisking into the egg mixture. Stir in the flour mixture and then pour over the nuts and chocolate. Bake until the crust is golden and the filling is just set, about 45 minutes. Cool completely on a rack. Serve with whipped cream if desired.
KENTUCKY PIE
Steps:
- 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. Serve warm or room temperature.
BOURBON CHOCOLATE-WALNUT PIE

Add the vinegar and 1 tablespoon ice water; pulse until the dough starts coming together but is still crumbly, adding 1 more tablespoon ice water if necessary. Turn the dough out onto a piece of plastic wrap; shape into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
- Put a baking sheet on the middle oven rack and preheat to 425 degrees F. Meanwhile, roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp with your fingers or a fork. Refrigerate until firm, at least 30 minutes.
- Meanwhile, make the filling: Whisk the eggs, brown sugar, corn syrup, melted butter, bourbon, vanilla, salt, walnuts and chocolate chips in a large bowl until smooth. Pour the filling into the crust. Carefully place the pie plate on the hot baking sheet in the oven and reduce the temperature to 350 degrees F. Bake until the crust is golden and the filling is set around the edge but slightly jiggly in the center, 50 to 55 minutes. Transfer to a rack and let cool completely, 3 to 4 hours.

Make the filling: Spread the walnuts on a baking sheet and bake until toasted, about 8 minutes; transfer to a bowl and set aside. Return the empty baking sheet to the lower oven rack. Heat the butter in a small skillet over medium-high heat until foamy and golden brown, about 5 minutes; remove from the heat. Whisk the eggs, corn syrup, brown sugar, granulated sugar, kosher salt, liqueur and vanilla in a medium bowl. Gradually whisk in the browned butter until smooth.
- Scatter half each of the walnuts and chocolate in the prepared crust. Pour in the filling, then top with the remaining walnuts and chocolate. Transfer the pie to the hot baking sheetin the oven. Bake until the crust is golden and the nuts have browned, about 30 minutes. Cover the pie loosely with foil; continue baking until the filling is set and the center is slightly puffed, 25 to 30 more minutes. Transfer to a rack to cool completely.
KENTUCKY DERBY CHOCOLATE WALNUT PIE

BASIC KENTUCKY CHOCOLATE WALNUT PIE
Now, this is the 1st recorded, BASIC Kentucky Derby Day Pie from Southern Indiana. Just across the river from Louisville, KY, where the Kentucky Derby made this pie famous! (We can't call it by it's original name here because of trademark/copyright issues, but this is the original Derby Day pie recipe.) I must be honest with you, that ever since this "famous 1st recipe" was used, there have been several other (MODIFIED) versions of this wonderful dessert...Most of them include some sort of Kentucky Bourbon!!! In my opinion, the ones that include that KY Bourbon are the best, but I wanted to share with you the ORIGINAL pie (from the 1920's)...Just FYI...
