1 venison roast (3 to 4 pounds)
10 whole garlic cloves, peeled
2 teaspoons dried rosemary, crushed
1-1/2 teaspoons onion powder, divided
• 1 teaspoon garlic powder
1 teaspoon dried thyme
7 medium carrots, quartered
5 small onions, quartered
1 tablespoon beef bouillon granules
1 teaspoon browning sauce, optional
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • 1. Cut 10 deep slits in roast; place a garlic clove in each slit. Combine the rosemary, 1 teaspoon onion powder, garlic powder and thyme; rub over entire roast. Cover; refrigerate for 2 hours. • Add 1/2 in. of water to a roasting pan. Place the roast, carrots and onions in pan. Cover and bake at 325° for 2-1/2 to 3 hours or meat is tender. Remove meat and vegetables to a serving platter; keep warm. • Strain drippings into a measuring cup. In a large saucepan, combine 3 cups drippings, bouillon, browning sauce and remaining onion powder. Combine cornstarch and cold water until smooth; stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast. Yield: 8 servings.

This is my favorite way to prepare a venison roast, it's quick and easy, and even works with the not-so-tender cuts.

1 pound boneless venison roast, thinly sliced across the grain
1 tablespoon minced garlic
1 tablespoon grill seasoning
1 teaspoon chili powder
2 cups beef broth
¼ cup butter
¼ cup flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season the venison with garlic, grill seasoning, and chili powder. Place into a casserole dish, and pour in the beef broth. Cover the dish with a lid, and bake in preheated oven until the venison is tender, about 1 hour.
  • Meanwhile, melt the butter in a saucepan over medium heat. Once the butter begins to bubble, whisk in the flour. Cook while whisking constantly until the flour turns a golden yellow, and the bubbling slows, about 10 minutes.
  • When the venison has finished cooking, whisk 1 1/2 cups of the broth from the venison roast into the flour roux, and simmer for 15 minutes, whisking frequently. Add the venison to the gravy and serve.

1 large venison roast
2 clove garlic, slivered
1/2 large carrot, shredded
1 large onion, sliced
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1 tsp thyme, dried
1 tsp basil, dried
1/2 tsp marjoram, dried

Steps:

  • 1. Using a thin sharp knife poke holes about 4 to 6 inches around the roast. Insert one stick each of the garlic, carrots and onion into each hole. Combine all spices and rub all over the roast.Put into roasting bag or roast pan covered with foil. Seal. Put holes in bag according to manufacturer's directions. Bake in 325 degree oven for 3 hours.

1 pound venison loin, cut into two 8-ounce portions
2 tablespoons ground coriander
2 tablespoons ground cumin
Salt and pepper
Salt and pepper
1/4 cup olive oil
8 ounces new potatoes, halved
5 cloves garlic, crushed
3 sprigs thyme
2 serrano chiles, slit lengthwise but left whole
1 finger ginger, peeled and roughly chopped
1 lemon, juiced
4 cups beef stock
1 pint cremini mushrooms, quartered
1 tablespoon unsalted butter
1 bunch Swiss chard, finely chopped
4 cups chicken stock

Steps:

  • Sprinkle the venison with the coriander, cumin, and some salt and pepper, then drizzle with the olive oil. Marinate in the refrigerator at least 30 minutes.
  • Combine the new potatoes, garlic, thyme, serranos, ginger, lemon juice and beef stock in a medium saucepan. Bring to a boil and cook until the potatoes are tender, about 15 minutes. With a slotted spoon, remove the potatoes to a large saute pan, reserving the cooking liquid. Add the cremini mushrooms, the butter and some salt and pepper to the pan. Saute over medium-high heat, allowing the potatoes to brown; then add 1 tablespoon of the cooking liquid to create a glaze, about 5 minutes. Set aside.
  • Combine the Swiss chard and chicken stock in a medium saucepan and season with salt and pepper. Cook until the chicken stock is reduced by half, about 15 minutes. Set aside.
  • Prepare a gas or charcoal grill for high heat.
  • Remove the venison from its marinade. Grill for 4 minutes on each side for medium rare.
  • To serve, bring all the components together for your deconstructed pot roast, and enjoy.

KATO'S TENDER ROAST VENISON

One of those dishes that tastes as good as it smells. Cook roast 20 minutes per pound for medium rare, remember to baste often during roasting to ensure a tender roast.

3 lbs venison roast
8 slices bacon
1/2 cup beef consomme
1/2 cup apple cider
1 cup red wine
1/4 cup lemon juice
1 clove garlic, crushed
1/4 cup onion, chopped
1/8 cup cranberries, dried
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme

Steps:

  • Preheat oven to 500 degrees Trim fat from roast,wipe down with damp cloth.
  • Put venison in roasting pan and sear in 500 degree oven for 5- 10 minutes.
  • Reduce heat to 425 degrees.
  • Arrange bacon slices over roast.
  • Roast uncovered in 425 degree oven for 30- 40 minutes.
  • Remove bacon.
  • Combine all remaining incredients and pour over roast.
  • Remember to baste frequently during roasting.
  • Cover loosely with foil and cook 1 hour longer.

ROAST VENISON

This is an adaptation of recipe in a Southern Living cookbook. I have used for over 30 years, so it has evolved over time. This was the recipe I bought my larding needle for, and now use it occasionally with other recipes. This is a very long recipe, but most of the time is the slow cooking.

1 venison roast (leg)
4 ounces salt pork
1 teaspoon salt
1 teaspoon pepper (freshly ground)
1 tablespoon ground ginger
1 teaspoon dried oregano
1 tablespoon olive oil
1/2 cup butter (melted)
1 cup orange juice
1 cup stock
1 cup sherry wine (very dry)
1/3 cup flour
1/2 cup chianti wine
1/2 cup sherry wine (very dry)
1 orange (make 1 tablespoon zest, then slice)
1/2 cup black currant jelly

Steps:

  • Place salt, pepper, ginger and oregano in small plate.
  • Cut fat back into strips about 2"x1/4" (to fit easily into larding needle).
  • Roll fat strips in herb seasoning until well coated. (if you have other things to do, you can freeze these as they are easier to work with cold).
  • Place strips in larding needle and push through meat.
  • Rub roast with oil and put in roasting pan.
  • Pat any remaining seasoning onto roast.
  • Pour butter over roast.
  • Mix orange juice, stock, and sherry together and pour over roast.
  • Bake, covered at 325 degrees for 5 hours.
  • Baste every 15 - 20 minutes.
  • Take out of oven and remove meat from pan.
  • Skim fat from the natural gravy.
  • Make a smooth paste from some of the fat and the flour, then add the Chianti, sherry, and orange zest.
  • Stir back into the natural gravy, and cook over low heat for 10 minutes.
  • Put roast back into pan, spread 1/4 cup of jelly over roast, cover pan, and continue in oven for another hour, basting as needed.
  • Remove pan from oven.
  • Place roast on platter and garnish with remaining jelly over roast, and orange slices around the roast.
  • Put gravy in boat.
  • Serve with baked potatoes and a green vegetable.

VENISON TENDERLOIN WITH ROASTED RED PEPPERS



Venison Tenderloin with Roasted Red Peppers image

I love working with fire-roasted red peppers, and I find they marry really well with venison, whether it be from antelope, deer or elk. I imagine it'd be good with caribou or moose, too. The sauce that underlies this is a pretty classic Port wine sauce. Keys to this recipe are having tenderloin - any deer or antelope will be fine - fire-roasted red peppers, decent Port and dried morel mushrooms. You can substitute dried porcini mushrooms, and you can use backstraps, which are the top loin of the animal.

1 venison tenderloin
Salt and freshly ground black pepper
3 tablespoons butter
1/4 cup Port wine
1/2 cup venison broth or beef stock
1 whole, large fire-roasted red peppers
2 tablespoons dried morel mushrooms
Chives for garnish

Steps:

  • Take the tenderloin from the fridge and salt it well. Set it aside to come to room temperature for about 20 minutes.
  • Lay out the roasted red pepper and cut it into large squares (circles would be fine, too). Remove any stray seeds.
  • Grind the dried mushrooms to a powder in a spice grinder, the add to the venison stock.
  • Heat 2 tablespoons butter in a saute pan over medium-high heat. When it stops frothing, saute the tenderloin about 3-5 minutes per side, depending on how you like your meat. Set aside under foil when done.
  • To make the sauce, deglaze the pan with the Port. Scrape up any brown bits with a wooden spoon. When the Port is reduced to a little more than a glaze, add the venison stock and bring to a boil. Reduce this to the point where when you run a spoon through it, the sauce takes a moment to close the trail you left in the pan with the spoon. Turn off the heat and add the final tablespoon of butter. Swirl to combine.
  • To serve, pour some sauce down on a plate, then top with the red peppers. Slice the tenderloin and arrange it on the red pepper. Garnish with chopped chives.
