Steps:

  • TO PREPARE TOMATOES: Slice off and reserve the top ½ inch from each tomato. Carefully scoop out the insides, leaving a ½ inch shell. Separate the seeds from the pulp with a sharp utensil and discard them. Coarsely chop the pulp and set aside. Sprinkle the insides of the shells with salt and invert on a rack to drain for 20 minutes. STUFFING: In a large pot, sauté scallions, garlic, celery and mushrooms in 4 teaspoons oil until softened, about 5 minutes. In a medium sized bowl, whisk the egg substitute and water. Stir in the kasha, mixing well. Add the kasha mixture to mushroom mixture, stirring to separate the grains. Add the hot broth and tomato pulp. Simmer for 2 to 3 minutes. Cover and simmer until the broth is abosrbed, 8 minutes. Remove from heat and stir in the wheatgerm, pine nuts, parsley and thyme. TO ASSEMBLE: Preheat oven to 350℉ (180℃) and oil a shallow baking dish . Arrange the tomato shells in the dish and fill with stuffing. Bake for 20 minutes. Place reserved tops on the tomatoes, brush with the remaining oil. Bake another 10 minutes and serve immediately.

KASHA

Kasha image

For years I have had uneven results with buckwheat groats, or kasha, as the dry-roasted grains are called. I have tried different methods, both stovetop and oven, and usually mixed the grains with an egg before cooking. Sometimes my grains cooked up to a mush, other times they held their shape but still seemed rather soft and indistinct. I sort of gave up on kasha for a while, opting for more predictable grains and pseudo-grains like quinoa and spelt. But I love the flavor of buckwheat, so this week I took another stab at buckwheat groats with a box of medium-grain kasha I bought at the supermarket - and everything changed. These grains were cracked, like bulgur, something I hadn't seen before. I followed the directions on the box, and they turned out perfect -- dry and fluffy, with the wonderful nutty/earthy buckwheat flavor I find so appealing. To see if it was the cut of the grain only or the combination of the cut of the grain and the cooking method that gave me such good results, I used the exact same cooking method using whole toasted buckwheat groats. The whole groats turned out better than any I had made before, but they took three times as long to cook than the cracked groats, yielded a little less, and because all of the egg is not absorbed by the whole grains the way it is by the cracked grains, which have more cut surfaces to absorb the egg, you get some egg flakes floating on the top of the cooked kasha, which is not very attractive (though it's easy to remove them).

Time 30m

Yield 4 servings

Number Of Ingredients 5

2 cups water
Salt to taste (I used 3/4 teaspoon)
1 tablespoon unsalted butter
1 cup toasted buckwheat groats (kasha), preferably medium-cut (cracked)
1 egg

Steps:

  • Combine water, salt, and butter in a small saucepan and bring to a boil. Once it reaches the boil turn off heat and cover.
  • Meanwhile, beat egg in a medium bowl and add kasha. Mix together until grains are thoroughly and evenly coated.
  • Transfer to a medium-size, wide, heavy saucepan (I use Analon nonstick), place over high heat and stir egg-coated kasha constantly until grains are dry, smell toasty, and no egg is visible, 2 to 3 minutes. Add just-boiled water, turn heat to very low, cover and simmer 10 to 12 minutes for cracked kasha, 30 minutes for whole kasha, or until all of the liquid is absorbed. Remove from heat.
  • Remove lid from pan, place clean dish towel over pan (not touching the grains), and cover tightly. Let sit undisturbed for 10 to 15 minutes. Fluff and serve.

KASHA CALIENTE

Kasha Caliente image

It was a love of kasha and memories of family that inspired Nancy Jane Richer of Knoxville, Tenn., to create this holiday recipe. Ms. Richer's father loved kasha and died on Thanksgiving more than a decade ago. Recently, Ms. Richer spotted wild turkeys in her winter vegetable garden. For her, it felt like a message. "It was a magical omen," Ms. Richer said. The result is this spicy take on kasha, created in memory of Ms. Richer's parents. The dish is robust enough to eat as a vegetarian main course, but also tempting as a side dish for everyone at the table.

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 21

2 cups vegetable broth
1 cup kasha
3 eggs, lightly beaten
4 tablespoons butter
2 large sweet onions, chopped
4 large cloves of garlic, chopped
12 ounce package frozen vegetable crumbles, MorningStar Farms brand, or similar
2 large scallions, chopped
16 oz. can of Mexicorn, drained
16 oz. can fire roasted tomatoes, drained
16 oz. can chili hot kidney beans, drained
Juice and zest of 1 lime
1 cup roasted salted pumpkin seeds
1 tablespoon plus 1 teaspoon chili powder
1 teaspoon cumin seeds
1 teaspoon roasted dry cumin
1 teaspoon dry cilantro leaves
2 teaspoons garlic salt
1 tablespoon dry Italian seasoning
1 cup chile lime garlic tomatillo salsa
2 cups Italian style shredded cheese blend

Steps:

  • In a medium pot, bring vegetable broth to a boil. Immediately cover and turn off the heat. In a large skillet (preferably nonstick) over medium heat, add kasha and one-third of the beaten eggs. Stir, coating the kasha in the egg, and toasting the grains. Stir constantly, cooking until the egg is no longer visible. Add the just boiled broth and simmer for 10 to 15 minutes, until the liquid has absorbed. Remove to a bowl and set aside.
  • In a large skillet over medium-high heat, add butter. Once the butter has melted add onion. Cook, stirring often, until onion has softened, then add garlic. Cook garlic for a minute, until fragrant. Add the vegetable crumbles and cook just until hot. Add the scallions, Mexicorn, fire roasted tomatoes, kidney beans, lime, chili powder, cumin seeds and dry cumin, dry cilantro, garlic salt, Italian seasoning, tomatillo salsa and remaining eggs. Fold in the cooked kasha and mix until thoroughly combined.
  • Scrape mixture into a lightly oiled 9 x 13 baking dish. Top the mixture with shredded cheese and bake, uncovered, for 40 to 45 minutes, until cheese is golden brown and bubbling. Allow to cool slightly before serving with additional tomatillo salsa.

MUSHROOM AND KASHA STUFFING

Mushroom and Kasha Stuffing image

Provided by Florence Fabricant

Categories     side dish

Time 30m

Yield Five cups, enough for 10 pounds of poultry

Number Of Ingredients 13

1 cup whole buckwheat groats
1 egg, beaten
2 cups chicken stock
2 tablespoons butter
1 tablespoon vegetable oil
1 cup chopped onion
8 ounces mushrooms, sliced
2 tablespoons minced scallions
1 clove garlic, minced
4 tablespoons chopped parsley
1 teaspoon minced thyme
3 cups finely crumbled stale bread
Salt and freshly ground black pepper

Steps:

  • Place the groats in a small, heavy saucepan. Stir in the egg to coat the grains. Cook over medium high heat, stirring, until the groats are dry and separate. Don't worry if some of the egg has coated the pan. Add 1 1/2 cups of stock, bring to a simmer, cover and cook until the groats are just tender and the liquid is absorbed, about 20 minutes. Remove from heat. (This proportion of liquid to grain is smaller than recommended on the package. The results are crunchy and separate, but additional moisture is picked up in the process of cooking the stuffing in the poultry and the grains will soften.)
  • Heat butter and oil in a large skillet. Add the onion, saute until just beginning to soften, then add the mushrooms. Saute over medium high heat until the mushrooms are beginning to brown. Add the scallions, garlic, parsley and thyme.
  • Stir in the cooked kasha and the bread. Moisten with the remaining one-half cup of stock. Season to taste with salt and pepper.

KASHA KABBAGE ROLLS

Kasha Kabbage Rolls image

This recipe originates from The Jewish Vegetarian Year Cookbook. The flavour of these Kabbage Rolls is really unique and I just loved the kasha inside. Another advantage is it is gluten free. If you want you can make the sauce the day before and it will save time putting the recipe together. Note: I didn't include freezing time for the cabbage if this is what you choose. You can also boil the head of cabbage if you want, I find this makes it much easier to roll the leaves out. Remember to remove the rib with a small sharp knife, this helps with the rolling also.

Provided by Chef Joey Z.

Categories     One Dish Meal

Time 2h40m

Yield 10-14 rolls, 8-10 serving(s)

Number Of Ingredients 15

1 large head cabbage
1/4 cup oil
1 medium onion, finely chopped
2 cups dried kasha
salt & freshly ground black pepper
4 cups water
1 (28 ounce) can tomatoes
1 (16 ounce) can tomatoes
9 ounces tomato paste (1-1/2 6-ounce cans)
6 tablespoons brown sugar
6 tablespoons vinegar
1 1/2 oranges (Rind of grated)
1 teaspoon salt (to taste)
1 1/2 teaspoons basil
fresh ground black pepper

Steps:

  • If you have the time, freeze the cabbage head for two days.
  • FOR THE KABBAGE:.
  • Thaw it overnight in a colander in the sink. The leaves will come apart easily and be pliable. Otherwise, cook whole head of cabbage in boiling water about 5 minutes to soften the leaves. Drain and set aside.
  • Sauté onion in oil in a heavy 2- to 3-quart pot. Add the kasha and turn it in the oil to coat all the grains. Add salt, pepper, and water. Bring to a boil, reduce heat, and cover.
  • Simmer 15 to 20 minutes, beginning to check at 15 minutes. When only a small amount of water remains in the bottom of the pot, remove from heat. Let sit a few minutes until the kasha absorbs the water. Stir to fluff and to separate the grains.
  • Preheat oven to 350°F.
  • Separate the cabbage leaves. On each leaf, place 2 or 3 heaping tablespoons of kasha. Fold one edge of the leaf over the filling, tuck in the sides, and roll.
  • Cut up any leftover cabbage and place in an oiled baking dish or casserole. Place rolls seam side down on top. Pour in sauce almost to cover. Cover with foil or lid and bake about 2 hours, or until cabbage is tender.
  • Uncover for the last 45 minutes to allow the sauce to thicken. Baste occasionally and adjust seasoning according to your taste.
  • SAUCE:.
  • Drain some of the liquid from the tomatoes into a heavy 3 quart pot. Stir in the tomato paste and stir until smooth.
  • Add remaining contents of tomato cans. Mash the tomatoes with a potato masher to break them up. Stir in the rest of the ingredients.
  • Simmer about 10 minutes. Stir and add to baking pan as called for in above recipe.
  • Bon Appetit!
