KALTER HUND

Kalter Hund image

This is a recipe that was in my Grandmother's personal recipe collection. It translates from German to Cold Dog. It is very delicious layered cake that is kept in the refrigerator. Try it with chocolate wafers instead of butter cookies. Make sure you have a glass of milk ready with this dessert! This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. For more information visit our Hints and Tips pages.

Time 3h30m

Yield 16

Number Of Ingredients 7

1 (16 ounce) package plain butter cookies
¼ cup rum
1 egg
¾ cup white sugar
1 teaspoon vanilla extract
¼ cup unsweetened cocoa powder
½ cup butter, melted

Steps:

  • Spread butter cookies out in a single layer on a baking sheet with sides. Brush or sprinkle with rum. Line a 9x5 inch loaf pan with aluminum foil, leaving enough extra at the sides to fold over the top for storage.
  • In a medium bowl, whip the egg and sugar together until thick and pale. Whisk in vanilla and cocoa powder until well blended, then stir in melted butter.
  • Line the bottom and sides of the prepared pan with butter cookies. Spread a 1/2 inch layer of chocolate cream over the bottom. Place another layer of cookies, followed by another layer of cream. Repeat until cream is gone, ending with cookies on the top. Fold aluminum foil over the top, and place in the refrigerator until firm, about 3 hours. Slice into 1/2 inch slices and serve.

KALTER HUND

Kalter Hund image

A German chocolate cookie cake served with a cup of coffee. Great for dessert. Hey, it's chocolate. It's great anytime. The secret ingredient is the Palmin which is coconut fat. You can get it at a European Deli or buy it online. Google Palmin Coconut Fat in your search engine or try germandeli.com in Texas or scanspecialties.com in Seattle. You can substitute 3 sticks of butter, so I'm told. I haven't tried that yet. I make mine for the Christmas holidays. You don't have to worry about leftovers. This stuff magically disappears. Remember to leave some on a plate for Santa.

Time 2h10m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 7

8 ounces confectioners' sugar (1/2 package)
250 g coconut fat (1 package Palmin)
1/4 cup coarsely chopped walnuts (optional)
1/4 cup Grand Marnier (optional) or 1/4 cup rum (optional)
1 teaspoon vanilla
1/3 cup hershey's cocoa powder
7 ounces leibniz butter biscuits

  • Spread butter cookies out in a single layer on a baking sheet with sides. Brush or sprinkle with Rum. Line a 9x5 inch loaf pan with parchment paper leaving enough extra at the sides to fold over the top for storage.
  • In a medium bowl, combine powdered sugar and cocoa powder with the walnuts, and vanilla. Set aside.
  • Melt the package of Palmin in the microwave for 1 minute until liquid.
  • Blend with above mixture.

KALTER HUND - GERMAN NO BAKE RICH CHOCOLATE AND BISCUIT CAKE

Kalter Hund - German No Bake Rich Chocolate and Biscuit Cake image

This layered, no-bake cake delivers chocolate as it's meant to be: completely and utterly decadent, rich, creamy, and solid but soft.

Provided by admin

Categories     All     Baking     Cakes     Chocolate     Easy     Storied Recipes     Valentines Day     Vegan     Vegetarian     Western European

Time 4h45m

Number Of Ingredients 7

4 eggs
100 g sugar
250 g sweetened cocoa powder (If you can only find sweeted, make a 56/44% mix, or 140g cocoa powder, 110g sugar)
450 g coconut oil
A large packet of Leibniz biscuits (or any other brand)
A rectangular baking tin (we forever used the same type of extendable tin, however any mold works in the end, as long as it's got a smooth surface)
Parchment paper

Steps:

  • Lay out the baking tin with parchment paper, this will facilitate removing the cake.
  • Double boil the coconut oil. In a separate bowl, mix the eggs with the sugar until creamy foamy white and the sugar entirely dissolved (five to ten minutes). Carefully stir in the cocoa powder, if you work too hastily you'll cover everything around with a thin layer of cocoa dust. Fold the molten warm coconut oil under.
  • Pour a layer, say 0.5mm, into the tin, then a layer of biscuits, a layer of chocolate and so on and forth until all is used up (although you may want to leave a generous bit in the bowl to eat up before cleaning) and let the cake cool in the fridge or cellar until the next day.
  • Carefully remove the tin and the parchment paper scraps, place on a nice tray bottom up.

  • Add the chocolate, cream, and coconut oil into a small pot to melt on low heat. Do not stop stirring. If your coconut oil is solid, you could heat it in a hot water bath beforehand to make it easier to measure the correct amount.
  • Once everything has melted and becomes a smooth chocolate mixture, remove it from the stove. If you don't like the taste of coconut oil that much, add a teaspoon of vanilla extract. You can also add a splash of rum if it is an adult-only cake.
