KALE AND BRUSSELS SPROUT SALAD RECIPE WITH BACON, CRANBERRIES AND PECANS
Steps:
- Place the brussels sprouts into a food processor fitted with a slicing blade (NOT a shredding or knife blade!). Push the sprouts into the food processor while running, using the pusher (not your hands). Turn it off.
- Turn the food processor back on and push the kale leaves into the running food processor. Pulse until shredded. (Alternatively, you can chop the brussels sprouts and kale by hand with a knife.)
- In a large bowl, whisk together the olive oil, mustard, lemon juice, garlic powder, salt and pepper, until emulsified. (Tilt the bowl if necessary).
- Add the shredded brussels sprouts and kale to the bowl. Add the cranberries, cooked bacon, walnuts (if using), and blue cheese (if using). Toss to coat the kale brussels sprout salad in dressing.

- Preheat the oven to 400 degrees F.
- Slice the Brussels sprouts very thin. Toss with 2 tablespoons of the oil and some salt and pepper on a baking sheet. Roast, shaking the baking sheet a couple of times while cooking, until the sprouts are browned in spots and tender, about 30 minutes. Transfer to a bowl, stir in the grated Parmesan and set aside.
- Toss the kale with the remaining 2 tablespoons olive oil and place on a baking sheet. Roast until the leaves are tender, crisp on the edges and lightly browned, about 10 minutes, then stir with the Brussels sprouts. Garnish with the lemon zest, big shavings of Parmesan and toasted pecans before serving.

- In a large pot, heat the olive oil over high heat. Add the Brussels sprouts and cook, letting them sit for a bit in between stirs, so the outsides brown up nicely in spots, about 4 minutes. Reduce the heat to medium, add the garlic and saute until it colors slightly, about 1 minute. Stir in the red pepper flakes, and season with salt and pepper. Add the kale, you may have to do this in batches, letting it cook down a bit before you can add more. Stir in half of the bacon.
- Add the broth and cover the pot, removing the lid and giving it a stir every minute or so co it cooks evenly. Cook until the kale is nicely wilted but not fully deflated, about 5 minutes. Taste and adjust seasonings.

- Heat a large skillet over medium. When hot, add the bacon pieces to the pan and cook the bacon until crisp, about 4 minutes per side. Set the cooked pieces of bacon aside, on a paper towel-lined plate to cool. When they've cooled enough to handle, chop them into bite-sized pieces. Do not discard the bacon grease in the pan- you will need it later.
- While the bacon is cooking, prep the fennel. Preheat the oven to 425°F. Cut the stalk of the fennel (reserve the fronds) and cut the base off the bulb of fennel. Slice it vertically, then slice those pieces in half (vertically) to get thin strips. Place them on a baking sheet, rub 2 tbsp olive oil over them, sprinkle with salt and pepper and roast for 15-20 minutes, or until the edges brown slightly.
- While the fennel roasts, prepare the rest of the salad. Shred the Brussels sprouts and cut the kale (see recipe notes for how-tos). Toss the kale and shredded sprouts into a large mixing bowl and drizzle the remaining 1 tablespoon olive oil over the greens. Massage the kale/Brussels mixture for 1-2 minutes to soften the leaves. Place them in a serving bowl or on a platter.
- Add the roasted fennel to the bed of greens. Top it with the walnuts, pomegranate, bacon pieces and fennel fronds.

- Combine kale and brussels sprouts in a large bowl. Add in the bacon, pecans, and Pecorino cheese.
