BANANA OATMEAL SNACK CAKE

Banana Oatmeal Snack Cake image

Original recipe is from Allrecipes. I think this could also be great if you subbed white chocolate or butterscotch chips for the chocolate chips.

BANANA-OATMEAL CAKE (SCREWED-UP MOTHER'S DAY CAKE)

Banana-Oatmeal Cake (Screwed-Up Mother's Day Cake) image

My mom made this cake for Mother's Day. The cake was in the oven baking. When she realized she didn't add the eggs or salt the recipe called for, she thought it would screw up the cake. But the cake came out so moist and yummy I made her write down the recipe, skipping the eggs and salt. She frosts it with vanilla frosting while the cake is still warm to give it a glazed effect. My family loves this cake.

THE REALTOR'S BANANA SNACK CAKE

The Realtor's Banana Snack Cake image

This is one of my daughter's favorite cakes. It's super moist and sweet enough on it's own that it doesn't need frosting. It's delicious as-is. It was originally from a Pillsbury book but I've made a few very small changes to suit our tastes.

Time 45m

Yield 18 serving(s)

Number Of Ingredients 11

1 cup butter
1 cup granulated sugar
2 eggs
2 cups all-purpose flour
1 cup quick-cooking rolled oats (I grind them up in the processor)
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup ripe mashed banana (2 medium)
1 teaspoon vanilla
1 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350'.
  • Grease and flour a 13x9 inch pan and set aside (I always spray pan with Baker's Secret).
  • In a medium bowl add flour, oats, baking soda, and salt, mix to blend and set aside.
  • In a large bowl, cream together the butter and the sugar until fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in buttermilk, bananas, and vanilla. At this point it'll look almost curdled. Just mix it well and ignore that.
  • Add flour mixture to the butter mixture and mix to blend. The batter will be a little thick.
  • Fold in 1 cup of chocolate chips.
  • Pour batter into prepared pan.
  • Bake at 350' for 30-35 minutes or until toothpick comes out clean.

BANANA OATMEAL CAKE

Banana Oatmeal Cake image

This is a rather unusually-flavored, but very good, cake. I think it would work well for bridal or baby showers--a good change from plain yellow or chocolate cake. The batter in this may seem runny, but that's how it's supposed to be before you put it in the oven!
