KALAMATA OLIVE TAPENADE (SPREAD OR DIP)



Kalamata Olive Tapenade (Spread or Dip) image

This is a simple, versatile tapenade. It is best on warm focaccia or toasted slices of baguette, spread in a very thin layer. It is also terrific on sandwiches. Spread it on the inside of the bread before you make a grilled cheese (best w/cheddar) or a fresh mozzarella and tomato sandwich. It's also a good dip for baby carrots or just about anything else. I've used leftover tapenade as a sauce on pasta, as well. It's very rich and flavorful. This recipe keeps well and is a favorite at parties.

1 cup pitted kalamata olive
1 cup pine nuts
3 garlic cloves
1 -2 cup fresh parsley
1 teaspoon fresh rosemary
1/4 cup olive oil
fresh ground black pepper
1 cup of pitted canned black olives (decreases saltiness)

Steps:

  • Add garlic to food processor, blend until minced. Add remaining ingredients except olive oil. Blend until smooth, adding olive oil slowly while the blade is running.
  • Adjust ingredients to your liking - Additional pine nuts, parsley or pitted canned black olives will make it less salty and intense in flavor, while additional oil will increase the creaminess. You can also use other fresh herbs such as sage or basil.
  • Serve at room temperature.

This comes from Coastal Living, and the recipe is credited to Louis Pappas Market Cafe in Tampa. I haven't been to this cafe, but the Pappas family is well-known in Florida for their wonderful Greek food. If you have to pit the olives, the prep time will be longer.

1 (6 ounce) jar kalamata olives, pitted and drained
8 ounces sour cream
1 tablespoon dried dill
2 (8 ounce) packages cream cheese, softened
4 ounces feta cheese, crumbled

Steps:

  • Combine olives, sour cream, and dill in a food processor and pulse until well blended.
  • Add cheeses and pulse until the mixture is creamy.
  • Serve with pita bread, crostini, crackers, etc.

1/2 cup kalamata olive (between 20-24)
2 tablespoons snipped fresh parsley
1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
1 small garlic clove, pressed
toasted baguette, slices or assorted cracker
finely diced red bell pepper
additional snipped fresh parsley

Steps:

  • Pit olives. Snip Parsley. Beat cream cheese, mayonnaise, parsley and pressed garlic until smooth. Gently stir in olives.
  • Spread on toasted baguette slices. If desired garnish with finely diced red bell pepper and snipped parsley.

1/4 cup pitted chopped kalamata olive

Steps:

  • In a medium-size bowl, whip 1/2 cup unsalted butter (room temperature) until fluffy.
  • Combine the softened butter and other ingredients together until they are completely blended.
  • For the flavor to better penetrate the butter, allow it to stand at cool room temperature for a few hours before refrigerating.
  • Compound butters may be stored in freezer, tightly wrapped. Use a sharp knife dipped in hot water for cutting the frozen butter.

1 cup warm water (95-105F)
2 teaspoons instant yeast
1 cup all-purpose flour
2/3 cup warm water (95-105F)
3 tablespoons honey
4 teaspoons instant yeast
2 ounces vegetable shortening (1/4 cup plus 1 teaspoon)
4 3/4 cups all-purpose flour
1 tablespoon salt

1 3/4 cups kalamata olives, pitted

Steps:

  • To create the starter, combine the water and yeast in a medium mixing bowl. Stir to dissolve the yeast fully. Add the flour to the bowl and stir until the ingredients are fully incorporated. Cover with a cloth and ferment the starter at room temperature for 30 minutes.
  • For the dough, combine the water, honey and yeast in the bowl of a stand mixer. Stir to dissolve the yeast fully. Add the shortening, flour, salt, starter and olives. Mix on low speed until the dough is fully developed. Remove the dough from the mixing bowl. Divide the dough into 2 pieces weighing about 22 ounces each. Set aside any remaining dough and freeze for future use. Roll each piece of dough into a smooth ball. Place the dough on the counter or in a proofing basket and cover with a warm, damp cloth to rest at room temperature for 30 minutes. Preheat the oven to 400° F.
  • Form the dough into loaves and place them on the counter or in a proofing basket. Cover the loaves with a warm, damp cloth and proof at room temperature for 30 minutes.
  • Score the loaves with a sharp knife, spray with water, and bake for 30 to 40 minutes, until the crusts are a deep golden brown and the middle of the loaves is 190-200 degrees.
  • Remove the bread from the oven and place it on the cooling rack for 30 minutes. If the bread was baked in loaf pans, remove the bread from the pans before cooling.
