HAWAIIAN KOREAN KAL BI MARINADE

Original recipe given to me by Hawaiians. Best for grilling pork or beef ribs and even chicken, just stick to 4-5 pounds. Can be halved for smaller amounts of meat or doubled for feeding a crowd. Better than the old red barbecue sauce!

4 -5 lbs pork ribs
2/3 cup soy sauce (I use Aloha or Kikkoman regular or low salt)
3 tablespoons water
2 tablespoons honey (the secret ingredient!)
3 tablespoons sugar (white or brown)
4 tablespoons sesame seeds, toasted
2 tablespoons sesame oil
2 -3 garlic cloves, finely chopped
1 -2 green onion, finely sliced

Steps:

  • Blend all ingredients in a large bowl until sugar is completely dissolved.
  • Dump over meat placed in a long dish covered tightly with plastic wrap or place into ziplock bag(s).
  • Marinate overnight (or for two days).
  • Turn meat 3-4 times each day.
  • Remove from marinade when ready to cook.
  • Discard marinade.
  • Grill over low to medium coals or bake in the oven at 325F until cooked through.
  • Cooking times will vary based on grill/oven heat and type of meat.

Fantastic Korean-Style Marinade for Beef Pork or Chicken image

There should be enough marinade for about 2-1/2 pounds of beef or chicken you may double the marinade ingredients but keep the fresh garlic and green onion at the same amount --- the meat needs to come down to almost room temperature before grilling so plan well ahead, also there is a marinating time of 8-24 hours, you may omit the cayenne completely if desired or adjust to suit heat level.

3/4 cup soy sauce
3/4 cup water
3 tablespoons white vinegar
1/4 cup brown sugar
2 tablespoons honey (or use white sugar)
2 tablespoons sesame oil
3 -4 tablespoons minced fresh garlic
2 green onions, chopped
1/2 teaspoon coarsley ground black pepper
1 pinch cayenne pepper (or to taste adjust to suit heat level)

Steps:

  • In a bowl whisk together all marinade ingredients together until the sugar granules are completely dissolved.
  • Pour the marinade over the meat and turn to coat.
  • Cover with plastic wrap and refrigerate for 8-24 hours.
  • Remove the meat and shake off excess marinade.
  • Place the meat in a pan and allow to come down to room temperature (this will take a few hours).
  • Grill as desired.

On my half-day off, I decided to relax by making my favorite Korean meat dish, kalbi (marinated short ribs). Serve with white rice and kimchi. If serving small children (and wanting to prevent a mess), it's best to cut the meat off the bone and slice into bite-sized pieces. The dark marinade can stain clothes, so be careful.

3 pounds beef short ribs
½ cup soy sauce
1 Asian pear, cored and diced
½ small onion
2 tablespoons finely chopped garlic
1 tablespoon chopped ginger
2 green onions, thinly sliced
2 tablespoons sesame oil
2 tablespoons brown sugar
2 tablespoons toasted sesame seeds
1 tablespoon honey
¼ teaspoon ground black pepper

Steps:

  • Place ribs in a bowl and cover with water; soak until water turns pink, about 1 hour. Drain and rinse in cold water.
  • Combine soy sauce, Asian pear, onion, garlic, and ginger in a food processor. Pulse until smooth.
  • Combine green onions, sesame oil, brown sugar, sesame seeds, honey, and black pepper in a large bowl; mix well. Add ribs and coat thoroughly with the marinade. Cover with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cook ribs on the grill until slightly charred and tender, about 4 minutes per side.

3/4 cup soy sauce, low-sodium recommended but not a must
¼ cup rice wine (sake)
2 teaspoons sesame oil
4 cloves garlic, minced
4 stalks green onion, finely chopped
2 teaspoon roasted sesame seeds, slightly crushed
2 tablespoons sugar
½ teaspoon pepper
½ Asian pear grated on fine grater or in blender or ½ kiwi, optional
1/2 teaspoon gochugaru (Korean spicy pepper powder), optional

1/4-1/3 cup garlic, minced
1/4-1/3 cup fresh ginger, grated

1 bunch scallion, chopped fine (tops included)

Steps:

  • Mix all ingredients together and marinate meat for at least 2 hours or overnight. You may not need to use all of the marinade at one time. Store unused marinade in a covered container in the refrigerator. I use half for one whole cut-up chicken and the rest for pork steaks or beef steaks.

Wonderful Korean style marinade originally intended for short ribs but I usually use this on flank steak. It's also great on chicken and pork chops.

1/2 cup sesame oil
1/2 cup low sodium soy sauce
2 teaspoons minced garlic
4 green onions, sliced (green tops only preferred)

Steps:

  • Combine all ingredients in a large ziploc plastic bag.
  • Shake to mix.
  • Add desired meat to bag and marinate in the regrigerator perferably overnight, but at least 1 hour.
  • Makes enough for 2-3 pounds.

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

This is the staple of Korean fine dining, but too expensive in the restaurants. It is also simple to make at home, and will leave your guests asking for more. Total time includes marinating time. Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

1 garlic clove, minced
